One of the ways I can get my kids to eat spinach (most of the time) is when I add it to mashed potatoes. Just one step on from regular mashed potatoes gets a healthier side for all! I served these with my toad-in-the-hole.

Boy, do we loves potatoes and spinach. When I came across this recipe from Gourmet from 2001, I had to make it, and darn, if it isn't GREAT! I have made a few adaptations, but this is pretty close to the original.Cooks Notes: You may wish to substitute the heavy cream with 1 or 2% milk, I have even used non fat sour cream and thrown in a few cloves of roasted garlic. 2 lbs boiling potatoes (preferably Yukon Gold)
1/2 cup heavy cream
3 tablespoons unsalted butter
1 teaspoon salt
1/2 teaspoon black pepper
4 ounces Baby Spinach (6 cups)

Steps:

  • Cover potatoes with salted cold water by 1 inch in a large saucepan and simmer, uncovered, until tender, 20 to 30 minutes.
  • While potatoes are simmering, bring cream, butter, salt, and pepper to a simmer in a small saucepan. Remove from heat and keep warm, covered.
  • Drain potatoes in a colander and cool slightly. Peel potatoes and mash in large saucepan.
  • Stir spinach into warm cream, tossing to coat, and when slightly wilted (after about 1 minute), immediately add to potatoes. Mash potatoes until almost smooth. Serve immediately.

Garlic Mashed Potatoes with Spinach image

4 large Idaho potatoes, peeled and diced
2 boxes chopped spinach, defrosted
4 tablespoons butter
4 cloves garlic, finely chopped
1/2 cup cream
Salt and pepper
1/4 teaspoon freshly grated nutmeg

Steps:

  • Place potatoes in a pot and cover with water. Salt water and boil potatoes until tender 12 to 15 minutes.
  • Squeeze the water from spinach in a clean dish towel.
  • Drain potatoes and melt butter in the hot pot, then add the garlic and cook 2 to 3 minutes. Stir in cream, add the spinach, separating the greens as you do. Season greens with salt, pepper and nutmeg. Add potatoes to the pot and mash to desired consistency.

1 kg potato (just over 2 lbs)
25 g butter
1 garlic clove, crushed
150 g baby spinach leaves
300 ml cream, warmed

Steps:

  • Chop and boil the potatoes until tender. Drain. Mash the potato until smooth.
  • Melt the butter in a frying pan. Add the garlic and baby spinach leaves and stir until the spinach has wilted. Use a gentle heat.
  • Blend or process the spinach mix with half of the cream. Use a stick blender or food processor. Blend until pureed.
  • Mix the mashed potato, spinach mix and the remaining cream.

1 teaspoon salt
1/2 teaspoon pepper
1/2 cup nonfat sour cream or 1/2 cup plain fat-free yogurt
2 tablespoons low-fat milk
2 tablespoons butter (optional)
10 ounces fresh spinach or 10 ounces frozen spinach, cooked and drained
2 tablespoons chives, chopped
1/4 teaspoon dill weed (optional)
1 -1 1/2 cup low-fat cheddar cheese or 1 -1 1/2 cup cheddar cheese, shredded

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Peel and cook potatoes (slice 1/2-3/4 inch thick and boil for about 15 minutes) and put through ricer.
  • Add salt, pepper, yogurt or sour cream, milk and butter (if using) to potatoes. Beat well until fluffy.
  • Fold in spinach, chives and dill (if using).

1 -2 teaspoon salt
2 1/2-3 lbs baking potatoes, peeled and cut into large cubes
4 ounces butter, melted
1 medium onion, sliced (optional)
2 garlic cloves, minced
1/4-1/2 cup whipping cream (or half and half)
1 (11 ounce) package stouffer's spinach souffle, defrosted
1 teaspoon salt
1/2 teaspoon white pepper
1/4 teaspoon nutmeg, grated

Steps:

  • Bring a large pot of water (add salt) and potatoes to a boil. Boil uncovered, until tender. Drain potatoes and return to warm pan - cover. Meanwhile, melt butter in a separate pan and saute onion and garlic until tender. Add cream (or half and half), spinach souffle, salt, pepper, and nutmeg to the onion mixture. Stir together. Heat, but do not boil. Mash potatoes with hand mixer. Add onion/spinach mixture to the potatoes while mashing. Taste for seasoning. Place in a serving bowl. Cover loosely with foil and keep warm in the oven until ready to serve.

Steps:

  • Cook potatoes in boiling water in large saucepan 15 to 20 min. or until tender.
  • Meanwhile, cook bacon in large skillet on medium heat until crisp. Remove bacon from skillet, reserving 1 Tbsp. drippings in skillet. Drain bacon on paper towels. Add garlic to drippings in skillet; cook 2 min., stirring frequently. Add spinach; cook and stir 1 to 2 min. or just until spinach is wilted. Remove from heat. I got this recipe from an old copy of Bon Appetit that I had kept and found all the recipes I've marked to try, and have I! This is really good if you like the combination of ingredients. I've also used red potatoes for this and can't wait for yellow fins to come in locally so I can try those with this recipe. While the potatoes are cooking, I cook the spinach at this time, it saves time. *all cooking times are approximate*

4 (6 ounce) bags fresh Baby Spinach
4 lbs white potatoes, peeled and cut into 2 inch pieces
1/2 cup butter (do not use margarine)
1 1/4 cups warm whole milk (I sometimes use 2 % mixed with half and half)
3 cups grated gruyere cheese (about 12 oz)
salt and pepper

Steps:

  • Bring large pot of salted water to a boil, add baby spinach from the bags.don't add the bags ;).
  • Cook for 1 minute.
  • Drain well.
  • Squeeze out as much excess water from spinach as you can.
  • Set Aside.
  • Cook potatoes in a large pot of boiling salted water until very tender or to your desired consistency for mashed taters, about 30 minutes.
  • Return potatoes to pot and mash until almost smooth.
  • Set pot over a low heat on stove.
  • Add butter and stir until melted.
  • Gradually add milk, mashing until smooth.
  • Add cheese and reserved spinach and stir until cheese melts.
  • Thin with more milk, if desired.
  • Season with salt and pepper according to tastes.
