3 tablespoons olive oil
2 large onions, finely chopped
Coarse salt
2 1/2 pounds Yukon gold potatoes, peeled and quartered
4 garlic cloves, crushed

Steps:

  • In a large skillet, heat 1 tablespoon olive oil over medium-low heat. Add onions, season with coarse salt. Cook, stirring frequently, until onions are caramelized, 35 to 40 minutes.
  • In a medium saucepan, combine potatoes, garlic, and enough water to cover by 1 inch. Bring to a boil; add salt. Cover; reduce heat, and simmer until tender, 15 to 20 minutes. Drain, reserving 1 cup liquid.
  • Return potatoes and garlic to pan. Add remaining 2 tablespoons olive oil; season with salt. Mash until smooth, adding reserved liquid as needed. Stir in onions, and serve immediately.

Steps:

  • Place potatoes in a saucepan and cover with water; bring to a boil. Cook until very tender, about 20-25 minutes. , Meanwhile, in a skillet over low heat, cook onion and sugar in butter until golden, stirring frequently. Drain and mash the potatoes. Add milk, salt and pepper. Stir in onion mixture. Garnish with parsley if desired.

1 cup Caramelized Onions, recipe follows
1 cup shredded Gruyere cheese
1/2 cup store-bought or homemade Croutons, coarsely crushed, recipe follows
2 pounds russet potatoes (about 4 medium), peeled and cut into 1-inch pieces
1 teaspoon kosher salt, plus more as needed
3/4 cup whole milk
4 tablespoons (1/2 stick) unsalted butter
Freshly ground black pepper
Freshly grated nutmeg, optional
3 tablespoons butter
2 large onions, thinly sliced
Pinch sugar
Kosher salt
Freshly ground black pepper
2 tablespoons unsalted butter, melted
2 tablespoons olive oil
1/2 teaspoon dried oregano
1/2 teaspoon garlic salt
2 cups 1/2-inch bread cubes (from crusty Italian bread)

Steps:

  • To the Mashed Potatoes, add the Caramelized Onions and Gruyere, reserving 2 tablespoons of each for garnish. Transfer to a serving bowl and garnish with the crushed Croutons and the reserved cheese and onions.
  • In a large saucepan, combine the potatoes, 1 teaspoon salt and enough cold water to cover. Bring to a boil over high heat. Lower the heat to maintain a simmer, and cook until fork tender, about 10 minutes.
  • Drain the potatoes and return to the pan. Shake the pan over medium heat for about a minute to dry the potatoes. Transfer the potatoes to a food mill, ricer or bowl.
  • Put the milk and butter in the saucepan and heat over medium-high heat until the butter melts and the milk is hot. Remove the pan from the heat. Mash the potatoes through the food mill, ricer or by hand into the pan. Stir to combine with the milk and butter. Season with salt and pepper, and add nutmeg if desired. Serve immediately.
  • Melt the butter in a large skillet over medium heat. Add the onions and toss to coat with butter. Cover and slowly cook onions, stirring occasionally, until golden, 10 minutes. Turn the heat up to medium high and begin to brown the onions, stirring constantly, about 10 minutes more. Season with salt and pepper.
  • Preheat the oven to 350 degrees F. Whisk together the butter, olive oil, oregano and garlic salt, and toss with the bread cubes. Spread in a single layer on a baking sheet. Bake until golden brown and toasted, 15 to 20 minutes.

4 pounds russet potatoes
One 15-ounce container sour cream
1/2 cup whole milk

1/2 cup chopped fresh chives, plus more for garnish
One 15-ounce bag wavy potato chips, crushed

Steps:

  • In a stockpot or pasta pot, bring about 2 gallons of water to a boil with a palmful of salt and a splash of oil.
  • Meanwhile, set a large frying pan over high heat, then coat the bottom of the pan with oil. Add the onions with a pinch of salt and cook, working in batches if necessary, until browned, about 2 minutes. Return all the onions to the pan, then turn the heat to medium-low and cover. Continue to cook, stirring frequently, until the onions have turned a deep golden color, about 20 minutes.
  • Peel the potatoes and cut into 1-inch chunks. When the water has come to a full boil, add the potatoes. Cook, uncovered, until easily pierced with a fork, about 15 minutes. Drain and return to the pot.
  • Using a potato masher or large whisk, begin to break down the potatoes. Add the sour cream, milk and butter and continue to mash until the desired consistency is reached. 2 pounds Idaho or Yukon gold potatoes, unpeeled

Steps:

  • Preheat the oven to 350 degrees F.
  • Slice the heads of garlic in half crosswise and drizzle with the oil. Wrap the garlic in foil and roast until creamy, about 1 hour. When cool enough to handle, squeeze the cloves into a small bowl and mash lightly with a fork.
  • Heat the oil in a large skillet set over medium heat. Add the onions and cook, stirring occasionally and lowering the heat if the onions begin to burn, until golden, about 30 minutes.

1 cup milk
1 cup packed chopped green onion, bottoms and tops
1/2 cup unsalted butter, melted

  • Cook potatoes in a large pot of boiling salted water until tender; drain and return to pot.
  • Cook over low heat until any water from potatoes evaporates.
  • Place a kitchen towel across the top of pot, cover pot with lid and remove from heat; let stand 10 minutes.

2/3 cup nonfat milk, warmed

  • Sauté onion in a little bit of oil or butter (which ever you prefer) over medium heat. Until its a nice golden brown, and soft.
  • Peel and chop potatoes, cover with water (salt the water) and bring to a boil. Then bring it down to a simmer for 15-20 minutes until you can easily poke a fork thru the potatoes. Drain potatoes.
  • Add in milk (it shouldnt be cold), butter, salt and pepper to taste. Mash all ingredients together with potatoes until you get the consistency you like. Some like super creamy, others like somewhat lumpy. (I think lumps give it more of the homemade feel)

12 tablespoons (6 ounces) unsalted butter, cut into small pieces, at room temperature
1/2 cup heavy cream, brought to a boil
Freshly ground white pepper
Fresh parsley leaves, for garnish

  • Fill a large mixing bowl with cold water. With a swivel-bladed vegetable peeler, peel each potato and remove any "eyes," then cut it in quarters with a sharp knife and put in the bowl of water.
  • Put the potatoes in a large pot and add cold water to cover them. Salt the water. Over high heat, bring the water to a boil, skimming off foam that rises to the surface; then reduce the heat to maintain a simmer and cook the potatoes just until tender enough to be pierced easily with a skewer or a sharp knife tip.
  • While the potatoes are boiling, prepare the onions: In a deep-fryer or a deep, heavy saucepan, heat about 3 inches of oil to 375 degrees F. Lightly dust the onion rings with flour and carefully drop them into the hot oil, cooking them in batches if necessary to avoid overcrowding. Fry them until golden, 3 to 5 minutes, removing them with a slotted spoon or wire skimmer to drain on paper towels. Season lightly with salt and keep warm.
  • When the potatoes are done, drain them immediately. Using a ricer or a food mill, puree the potatoes into a mixing bowl. Add the nutmeg, 8 tablespoons of the butter, and the hot cream. With a wooden spoon, stir them into the potatoes. Season, to taste, with salt and pepper.
  • Mound the potatoes in a heated serving bowl. Put the remaining butter in a saucepan or skillet and, over medium-high heat, melt it and continue cooking just until it turns golden brown. Lightly season the butter with salt and immediately drizzle it over the potatoes.

1 small onion, chopped very fine
4 ounces cream cheese
4 ounces sour cream
8 ounces shredded cheddar cheese
1 (2 7/8 ounce) can French's French fried onions

Steps:

  • Boil potatoes until tender and then mash.
  • Mix onion, cream cheese, sour cream and cheddar cheese in with potatoes (you can add a little milk if it gets too thick--you want it to be really creamy).
  • Spread mixture into a rectangle pan and bake in 400° oven for 30 minutes or until hot and bubbly around the edges.
  • Top with the French's onion the last 5 minutes in oven.
  • Serve and enjoy!

Celery and Onion Mashed Potatoes image

A slightly different way to serve this classic dish. I prefer the potatoes mashed with a fork, but for a finer texture you could push them through a potato ricer and then add the onions and celery.

4 tablespoons butter, divided
2 celery ribs, finely chopped
1/2 medium onion, finely chopped
4 medium potatoes, cubed
salt and pepper
1/2 cup milk

Steps:

  • Heat a medium saucepan over medium-high heat.
  • Add 1 tablespoon of the butter, then the celery and onions.
  • Sauté until the vegetables are golden, about 5 minutes.
  • Remove from the pan and reserve.
  • Add the potatoes and just enough water to cover to the pan.
  • Season generously with salt.
  • Bring the water to a boil, cover, reduce heat to medium-low and cook until potatoes are tender.
  • This should take about 15 minutes.
  • Drain the potatoes and return the pan to a medium heat.
  • Stir in the cooked vegetables, 3 tablespoons of butter and milk.
  • Mash lightly with a masher or fork.
  • Add more salt, pepper and taste for seasoning.
  • Serve immediately or keep warm over low heat with the lid slightly opened.

3 cups water
1-1/2 cups milk
1/3 cup plus 1 tablespoon butter, divided
1 teaspoon salt
4 cups mashed potato flakes
1 package (8 ounces) cream cheese, softened
1 carton (8 ounces) French onion dip
1-1/2 teaspoons garlic salt
1/4 teaspoon paprika

Steps:

  • In a large saucepan, bring the water, milk, 1/3 cup butter and salt to a boil. Remove from the heat; gradually stir in potato flakes. In a bowl, combine cream cheese and onion dip. Stir into potatoes. Add garlic salt., Transfer to an ungreased 13-in. x 9-in. baking dish. Melt remaining butter; drizzle over the top. Sprinkle with paprika. bake, uncovered, at 350° for 30-35 minutes or until heated through. Let stand for 5-10 minutes before serving.

Steps:

  • Melt 1 1/2 tablespoons butter in heavy large skillet over medium-high heat. Add onions and cook until golden, stirring often, about 15 minutes. Mix in rosemary. (Can be made 4 hours ahead. Cover and let stand at room temperature.)
  • Bring large pot of salted water to boil. Add parsnips and potatoes; boil until tender, about 20 minutes. Drain well. Return vegetables to pot; mash. Add warm milk and 4 1/2 tablespoons butter; stir until smooth. Stir in onion mixture. Season with salt and pepper. (Can be made 6 hours ahead. Cover; chill. Rewarm over medium-high heat, stirring frequently and adding more milk if too dry.)

3 tablespoons balsamic vinegar
2 teaspoons chopped fresh thyme
3 1/2 pounds russet potatoes, peeled, cut into 1-inch pieces
6 to 8 tablespoons whole milk
1/4 cup prepared white horseradish

Steps:

  • Melt 1/4 cup butter in large skillet over medium heat. Add onions; sauté until deep golden, about 30 minutes. Add vinegar and thyme. Reduce heat to low; sauté 4 minutes. Season with salt and pepper.
  • Meanwhile, cook potatoes in large pot of boiling salted water until very tender, about 20 minutes. Drain. Return to same pot; mash until smooth. Add 6 tablespoons milk, horseradish and 6 tablespoons butter; stir to blend. Thin with 2 tablespoons milk if necessary. Season with salt and pepper.
  • Transfer potatoes to serving dish. Spoon onion mixture atop potatoes. (Can be prepared 8 hours ahead. Cover with foil and refrigerate. Rewarm in 350°F oven about 30 minutes.) Serve hot.

3 tablespoons olive oil
2 1/4 lbs onions, chopped (about 7 cups)
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
4 lbs russet potatoes, peeled and cubed (1 inch)
3 teaspoons salt, divided
2/3 cup whole milk
2 tablespoons unsalted butter
1/4 teaspoon pepper

Steps:

  • Heat butter and olive oil in a large skillt over medium heat until butter is melted.
  • Add onions; stir to coat with butter/oil.
  • Cover and cook 10 miutes or until onions have wilted; stirring occasionally.
  • Remove cover, increase heat to medium-high.
  • Sprinkle with sugar; stir to combine.
  • Cook 25-30 minutes or until onions are deep golden brown, stirring frequently
  • If necessary, reduce heat to medium to keep onions from sticking.
  • Stir in 1/2 tsp salt and 1/4 tsp pepper.
  • *Onions can be made 3 days ahead and refrigerated or 1 month ahead and frozen*.
  • Place potatoes in large saucepan; add enough water to cover potatoes by 1 inch.
  • Add 2 tsp of the salt.
  • Bring to a boil over medium-high heat.
  • Reduce heat to medium-low to low; simmer 12 minutes or until potatoes are tender when pierced with a fork; drain.
  • Return to saucepan; cover to keep warm.
  • Microwave milk and 2 Tbs butter for 30-60 seconds or until butter is melted and milk is hot.
  • Reheat caramelized onions over medium heat until hot.
  • Press potatoes through potato ricer into medium bowl or mash with potato masher.
  • Stir in milk/butter until potatoes are creamy.
  • Stir in caramelized onions, remaining 1 tsp salt and 1/4 tsp pepper.

6 whole cloves of garlic, peeled
1/2 cup finely sliced white onions
Salt to taste
2 tablespoons butter
1 pinch freshly grated nutmeg
Freshly ground white pepper to taste
1 1/3 cups warm milk
2 tablespoons finely chopped chervil or parsley

Steps:

  • Peel the potatoes, and cut them crosswise into 1-inch cubes. Place the pieces in a saucepan with water to cover. Add the garlic, sliced onions and salt to taste.
  • Bring to a boil and simmer for 15 minutes or until the potatoes are tender. Drain, and put the mixture through a food mill or potato masher. Put back into the saucepan.
