DILL AND HORSERADISH MASHED POTATOES



Dill and Horseradish Mashed Potatoes image

Fresh dill and spicy horseradish make these mashed potatoes memorable.

2 pounds Idaho or Yukon gold potatoes, unpeeled
Kosher salt and freshly ground black pepper
1 cup whole milk
1 stick (8 tablespoons) unsalted butter
1/4 cup chopped fresh dill, plus fresh dill fronds, for serving
2 tablespoons prepared horseradish

Steps:

  • Put the potatoes in a medium pot, cover with cold water and add 2 tablespoons salt. Bring just to a simmer and simmer the potatoes, uncovered, until tender, about 45 minutes. Drain.
  • Peel the potatoes and return them to the pot (if desired, pass them through a ricer or food mill after peeling). Mash the potatoes with the milk and butter using a fork or potato masher. Stir in the dill, horseradish and 2 teaspoons salt; season with pepper. Sprinkle with fresh dill fronds.

1 ½kg Desirée potatoes , cut into roughly 1in chunks
3 tbsp olive oil
1 onion , as thinly sliced as you can
small bunch dill , roughly chopped

Steps:

  • Bring a large pan of salted water to the boil. Add spuds, bring back to the boil, then cook for 3 mins. Drain really well, leave in the colander for 10 mins to steam dry. Toss with the oil, onion and seasoning in a large roasting tin.
  • Heat oven to 220C/200C fan/gas 7 and put in the potatoes. Roast for 30 mins, stirring halfway, until golden and crunchy. Stir in the dill and put back in the oven for 5 mins, then serve.

  • In a large saucepan, combine the potatoes, 1 teaspoon salt, and enough cold water to cover. Bring to a boil over high heat. Steps:

  • To caramelize the onions, heat the olive oil with the butter in a medium skillet until butter just begins to foam. Add onions and cook over medium heat until they start to brown, stirring frequently, about 10 minutes.
  • Reduce heat to low and continue cooking, stirring occasionally, about 20 minutes longer until onions turn a golden brown. Watch carefully toward the end of cooking time. Sprinkle with sugar, if desired, and cook another minute or two, tossing to incorporate. Set aside.
  • In a large pot of salted water, boil potatoes until tender, 10 to 15 minutes. Drain well, return to pot, and set over low heat for a few minutes to evaporate any remaining water. Remove from heat.

1.5 kg/3 lbs floury/starchy potatoes
125g/ 1/2 cup butter
250ml/ 1 cup whole milk or 2%
2.5 tsp salt
125ml/1/2 cup sour cream
2 eggs (beaten)
6 tbsp butter (divided)
1 onion (sliced )
1-2 cloves garlic
600g/5 cups button mushrooms (sliced)
4 sprigs fresh thyme or 1/2 tsp dried thyme
4-5 sage leaves

Steps:

  • Peel and cut potatoes, boil in salted water until fork tender. Drain and air steam your potatoes until they look dry and flaky. Mash with hot milk, butter, sour cream and salt, then fold in beaten eggs. The mixture will look runny but that's exactly what you are looking for.
  • While the potatoes are boiling. Saute the onions in 2 tablespoons of butter over low heat, covered with a lid for 10 minutes until tender, then uncover and add the mushrooms with thyme and garlic, stirl and continue cooking for 10 minutes longer until all liquid evaporates and the onions and mushrooms are caramelised.
  • In a 9X13 inch or 3 Quart/Litre casserole dish layer the mashed potatoes with the mushroom and onion layer in the middle. Top the 2 tbsp of melted butter. Bake uncovered at 180C/350F for 25 minutes until the casserole is bubbling and puffed up. Broil for 1-2 minutes for a crispy top.
  • Before serving fry the sage leaves in the remaining 2 tablespoons of butter. Watch the sage leaves carefully as they burn quickly. Remove from the butter as soon as they start to curl and top the casserole. Reserve the sage flavoured butter for another use.

1 tablespoon olive oil

  • Preheat oven to 400 degrees F (200 degrees C).

  • Sauté onion in a little bit of oil or butter (which ever you prefer) over medium heat. Until its a nice golden brown, and soft.
  • Peel and chop potatoes, cover with water (salt the water) and bring to a boil. Then bring it down to a simmer for 15-20 minutes until you can easily poke a fork thru the potatoes. Drain potatoes.
  • Add in milk (it shouldnt be cold), butter, salt and pepper to taste. Mash all ingredients together with potatoes until you get the consistency you like. Some like super creamy, others like somewhat lumpy. (I think lumps give it more of the homemade feel)
  • Fold in onions and serve.

UNCLE BILL'S RUSSIAN/DOUKHOBOUR BORSCHT



Uncle Bill's Russian/Doukhobour Borscht image

This RUSSIAN/DOUKHOBOUR BORSCHT originated with my Russian Grandmother who was a vegetarian. Traditionally, the Russian/Doukhobours used about 1 pound of butter and at least 3 cups of whipping cream. I finally was able to make numerous adjustments to the ingredients and then reduce the amount of butter and whipping cream so that the Borscht tastes just as good, but not as rich. The procedure is rather lengthy, but is worth every bit of that time. The Borscht may be canned or frozen in containers. The original Russian Borscht had meat in it and also they used many red beets.

28 fluid ounces canned tomatoes, including liquid, mashed and divided
6 medium potatoes, peeled and quartered
3 medium carrots, chopped small

2 medium red beets, scrubbed and cut in half
4 tablespoons butter
1/2 cup whipping cream
6 tablespoons butter, divided
2 medium onions, chopped small
8 cups thinly shredded green cabbage
3 medium potatoes, peeled and cubes 1/2-inch
2 cups cauliflower florets
3 large celery ribs, chopped small
1 large green pepper, seeded and diced
1 large sweet red pepper, seeded and diced
1 teaspoon fresh ground black pepper
4 tablespoons dried dill weed or 1/2 cup finely chopped fresh dill
2 teaspoons fresh lemon juice
1/4 teaspoon ground cayenne pepper (optional)

Steps:

  • In a large (8 quart) stock pot, add water and bring to boil.
  • Add 1/2 cup of mashed tomatoes, quartered potatoes, chopped carrots, chopped onions, salt and beets and return to boil.
  • Reduce heat to medium and cook uncovered for 15 minutes or until potatoes are just cooked.
  • Meanwhile, begin to prepare all vegetables.
  • When potatoes are cooked, remove with a slotted spoon into a mixing bowl.
  • Add 3 tablespoons butter to potatoes, mash well.
  • Stir in whipping cream, mixing well to incorporate; set aside.
  • In a large frying pan, melt 3 tablespoons butter, add chopped onions and saute' until just softened, about 5 minutes.
  • Add remaining mashed tomatoes and simmer uncovered until reduced to a creamy consistency.
  • The sauce will be thickened.
  • Cover, reduce heat to keep warm.
  • In another large frying pan, melt the remainder 3 tablespoons butter, add 4 cups of shredded cabbage and on medium heat, fry until softened and very lightly browned, about 15 minutes, DO NOT BURN.
  • Remove from heat and set aside.
  • To the cooking pot, add cubed potatoes and 1/2 cup of tomato-onion mixture.
  • Cover and cook for 10 minutes.
  • Add cauliflower and celery and continue to boil gently until potatoes are just tender.
  • Stir in remaining 4 cups of raw shredded cabbage and return soup to boil.
  • Reduce heat; stir in mashed potatoes, fried cabbage and remaining tomato-onion mixture.
  • Add diced green and red peppers, freshly ground black pepper, dill weed, lemon juice.
  • Return to boil and cook for 3 more minutes.
  • Cover and reduce heat to just warm and let borscht sit for 30 minutes for flavors to blend.
  • Remove beets and discard or eat them separately.
  • The beets are for coloring only.
  • Adjust seasonings to taste.
  • If borscht is too sweet to your liking, stir in some additional lemon juice.
  • If desired, serve with a sprinkle of cayenne pepper.
  • Refrigerate any unused portions.
  • Traditionally, medium or sharp cheddar cheese pieces and fresh bread or buns are served with the borscht.

1 small white onion, coarsely chopped
2 tablespoons butter
3/4 cup milk
4 ounces gouda cheese, shredded (can use smoked Gouda for a extra kick)
8 ounces part-skim ricotta cheese
3/4-1 teaspoon dried dill weed, double if using fresh
1/2-1 teaspoon salt
1/4 teaspoon pepper
1/4-1/2 teaspoon garlic powder
2 -3 tablespoons butter, melted
paprika

Steps:

  • Preheat oven to 350°F Lightly grease/spray a 13" x 9" baking dish; set aside.
  • In a large pot, boil potato chunks and chopped onion in salted water until tender. Drain and return to empty pot.
  • Add butter and milk and mash.
  • Add Gouda, ricotta, dill weed, salt, pepper and garlic powder and continue to mash to desired consistency.
  • Pour mashed mixture into the prepared baking dish.
  • Evenly drizzle the melted butter over top.
  • Evenly sprinkle with paprika.
