MASCARPONE YOGURT PARFAITS

2 pints Greek yogurt
1 pint mascarpone
1 cup lemon juice
1/2 cup sugar
1/4 cup ground cinnamon
1 pint blueberries
1 pint raspberries
4 strawberries

Steps:

  • Blend the yogurt and mascarpone in a medium bowl. Stir in the lemon juice, sugar and cinnamon. Transfer the mixture to a pastry bag fitted with a large round tip.
  • Pipe some of the yogurt mixture into 4 champagne flutes. Add a layer of blueberries, followed by yogurt, and then raspberries. Continue layering in this manner. Top each parfait with a strawberry to finish. Serve immediately.

Easy Homemade Frozen Yogurt Recipe image

Delicious and creamy frozen yogurt made with the frozen fruit of your choice (I used strawberries and bananas). It takes just 5 minutes of work, but be sure to check out my tips to achieve a creamy texture.

4 cups sliced frozen strawberries, (or other frozen fruit of your choice (see notes) )
2 cups sliced frozen banana
1 cup Whole milk Greek yogurt
2 tsp orange extract, (or vanilla extract, if you like)
4 to 6 tbsp honey, (more to your liking, I used Greek honey)
1/4 cup sugar, (optional but highly recommended)
1 tbsp corn syrup, (optional)

Steps:

  • Combine the frozen strawberries, banana, yogurt, orange extract (or vanilla extract), honey, sugar, and corn syrup in the bowl of a food processor fitted with a blade or a heavy duty blender.
  • Blend until everything is combined into a creamy smoothie-like mixture. Taste, and if you like it sweeter add a bit more honey.
  • Transfer the mixture to a freezer safe container and smooth the surface. Press a piece of parchment against the top of the yogurt to prevent ice crystals from forming. Freeze for at least 6 hours or overnight.
  • To serve, allow the frozen yogurt to sit at room temperature for a few minutes just until soft enough to scoop. Scoop the amount you need (long, shallow pulls or strokes will produce better scoops). Enjoy!

200 g mascarpone
200 g Greek yogurt (I use 2% fat content)
100 ml milk
3 tablespoons brown sugar (adjust to taste)
1 vanilla bean

Steps:

  • Slice vanilla bean in half and scrape out.
  • Add the rest of ingredients and the vanilla scrapings to a bowl and mix with food processor until sugar has dissolved.
  • Add to ice cream maker and churn for 15 to 20 minutes.

200-300g strawberries (depending on how fruity you want it), hulled
300g Greek or Greek-style yogurt
3 tbsp condensed milk

Steps:

  • Use a food processor or blender to blitz the strawberries for a smoother end result, or crush them in a bowl using a fork to get chunkier pieces.
  • Tip the yogurt and condensed milk into the food processor or blender with the strawberries and blitz again to combine.
  • Pour into a freezer-proof container and put in the freezer, stirring every hour to break up the ice crystals, then leave to freeze again overnight. Remove from the freezer 10 mins before serving.

I was searching 'Zaar to find a recipe to make mango frozen yoghurt as a "birthday cake" for my fiance. After weeding out all those that required ice-cream makers and other equipment that his kitchen doesn't have, I got to recipe #67664. From there, I anglicised the ingredients (I've never seen frozen fruit concentrate over here) and re-worked the ratios to create this. 3/4 pint of yoghurt = 500g = one big tub - I couldn't face entering a recipe which called for 285ml of stuff! You could probably use something like vanilla yoghurt with chopped fruit if you can't find the right flavour.

1/2 pint milk
1/2 pint fruit juice
3/4 pint fruit yogurt

Steps:

  • Place yoghurt in mixing bowl and add milk slowly, stirring it in as you go.
  • Now add the fruit juice slowly, again stirring it in as you go.
  • If you don't add it slowly, it will be harder to mix in because it will slosh everywhere!
  • place in a freezer container and give it one last stir.
  • Freeze for about 5 hours.
  • Stirring it about every half hour or so will break up any large ice crystals that form, so you'll have a smoother finished product.
