  • Preheat the oven to 375 degrees F. Melt 1 stick butter in a large skillet over medium heat. Add 2 cups each diced onions and celery, 2 chopped apples and 1 tablespoon each minced sage and thyme; season with salt and pepper and cook 5 minutes. Add 3 cups chicken broth and bring to a simmer. Whisk 2 eggs with 1/4 cup chopped parsley in a large bowl; add 16 cups cubed stale country white bread, then pour in the vegetable-broth mixture and toss. Transfer to a buttered 3-quart baking dish and dot with more butter. Cover and bake 30 minutes, then uncover and bake until golden, 20 more minutes.

1 cup chopped onion
1 ½ cups chopped celery
9 cups soft bread cubes
½ teaspoon poultry seasoning
1 (4.5 ounce) can sliced mushrooms
1 egg, beaten
1 cup chicken stock

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Butter one 2 quart casserole dish.
  • In a saute pan, cook onion and celery in butter until soft.
  • In a mixing bowl, combine onion and celery, bread cubes, poultry seasonings, mushrooms, egg and stock. Mix well and add to casserole dish. Bake for 1 hour.

6 ounces dry bread stuffing mix
10 slices day-old bread, torn into small pieces
3 eggs, beaten
½ cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter or spray one 2 quart casserole dish.
  • Prepare stuffing according to directions on box; place stuffing in a large bowl.
  • Add the dried bread, eggs and water; mix well and place in casserole dish.
  • Cover and bake 45 to 60 minutes.

Don't you hate it when you have a little leftover but not quite enough - and you really don't want to throw it away - so don't - here's an idea for just such an occasion. Mash Potato and stuffing balls - crispy on the outside and nummy and heavenly on the inside.

1 cup mashed potatoes
1/2 cup turkey stuffing
1 egg
1 cup breadcrumbs, divided
salt and pepper
oil (for frying)

Steps:

  • Combine leftover mashed potatoes, leftover stuffing, one egg, and approximately 1/2 of the bread crumbs.
  • This particular recipe yields 10 ping-pong-ball size stuffing balls, but you can change the recipe to whatever suits your family, and depends on the amount of leftovers you have. The consistency of the balls should be sticky, but not UBER sticky.
  • Roll the balls in the remaining bread crumbs to coat evenly.
  • Set aside until all the balls are ready.
  • Heat oil in a pan; the oil should be half way up the ball in the pan, so use approximately 1/2 to 1 cup of oil, depending on the size and depth of your pot or pan.
  • Fry for 2 or 3 minutes until golden all over, rolling around as needed.
  • Let rest on paper towels until you are ready to serve.
  • That's it; super simple and REALLY tasty.

This is similar to my mom's recipe that she has made for years. She never measures and adds everything for our taste preferences. I have never been able to top her stuffing, but this comes very close. I don't measure the herbs. We like the sage flavor, so I tend to add more of that. I taste it until it tastes right to me. Adjust the herbs to whatever your taste preferences are. Your kitchen will smell wonderful as the herbs are cooking with the vegetables! If you like drier stuffing, adjust the amount of chicken broth. We like ours moist, so I use about 2 cans of swanson chicken broth. I always make several days ahead and freeze in ziploc bags with all the air squeezed out so that I'm not so rushed the day of the dinner.

10 cups crusty country bread, 1 inch cubes (1 lb) or 2 packages pepperidge farm seasoned stuffing mix (I use this. Don't use Stovetop stuffing mix!)
3 medium onions, chopped
3 celery ribs, thinly sliced crosswise
1 tablespoon dried thyme
1 tablespoon dried sage or 1 tablespoon fresh sage
1 tablespoon dried rosemary or 1 tablespoon fresh rosemary
1/2 cup unsalted butter
2 cups chicken broth

Steps:

  • If you're using bread, toast bread in a large shallow baking pan in middle of oven until just dry, 25 to 30 minutes.
  • If you're using stuffing mix, you can skip this step.
  • Cook onions, celery, and herbs in butter in a large heavy skillet over moderately low heat, stirring occasionally, until celery is softened, about 10 minutes.
  • Stir together bread or stuffing mix, vegetables, broth, and salt and pepper to taste, then cool completely, uncovered.
  • Freezes extremely well.
  • Stuff in the turkey or bake at 350 for about 30 minutes.

3 celery stalks chopped
1 medium white onion chopped
2 1/2 stick butter
1 chicken
2 1/4 c milk
3/4 c miracle whip
3 eggs beaten
2 can(s) cream of mushroom
1 can(s) cream of celery

Steps:

  • 1. IN LARGE POT COVER CHICKEN WITH WATER AND COOK TILL TENDER TAKE OUT AND PUT ON PLATE TO COOL.MELT 2 STICKS OF BUTTER IN 3 TO 4 CUPS BROTH SAVE REST OF BROTH CUT UP COOLED CHICKEN IN SMALL PIECES.
  • 2. WHILE THE CHICKEN IS COOKING CHOP CELERY AND ONION AND SAUTE IN 1/2 STICK BUTTER TILL TENDER
  • 3. IN 2 1/4 CUPS MILK MIX 3/4 CUP OF MIRACLE WHIP &3 BEATEN EGGS.
  • 4. IN LARGE BOWL POUR 2 BAGS OF BROWNBERRY SAGE AND ONION DRESSING. POUR THE BROTH WITH THE MELTED BUTTER OVER THE DRESSING. MIX IN THE ONION AND CELERY AND THE CUT UP CHICKEN. ADD MILK AND DRESSING MIXTURE(OF EGGS AND MIRACLE WHIP)ADD MORE BROTH IF MIXTURE IS TO DRY OR YOU CAN ADD WATER IF THERE IS NO MORE BROTH TILL STUFFING IS WET. STIR TILL EVERYTHING IS MIXED
  • 5. POUR IN A BIG LASAGNA PAN OR PAN THAT WILL FIT ALL THE STUFFING IN.ON TOP OF THIS SPREAD 2 CANS OF CREAM OF MUSHROOM AND CREAM OF CELERY THAT HAS BEEN MIXED TOGETHER. COVER WITH TIN FOIL AND REFRIGERATE OVER NIGHT.
  • 6. DAY OF DINNER SET OVEN TO 350' AND COOK STUFFING 1 HOUR AND UNCOVER STUFFING AND STIR TO MIX IN SOUP'S AFTER THE FIRST 1/2 HOUR CONTINUE STIRRING OCCASIONALLY TILL DONE SO STUFFING CAN ABSORB THE MIXES AND RECOVER WITH FOIL IN BETWEEN. BAKE TILL STUFFING HAS ABSORBED THE LIQUIDS. IT MAY TAKE LONGER DEPENDING ON YOUR OVEN
