1-1/2 lb. extra-lean ground beef
14 round buttery crackers, coarsely crushed (about 3/4 cup)
1 onion, finely chopped
1/4 cup chopped fresh parsley
1 egg, beaten
1 cup KRAFT Shredded Cheddar Cheese, divided
1/2 cup KRAFT Original Barbecue Sauce, divided
3 slices OSCAR MAYER Smoked Ham, cut in half

Steps:

  • Heat oven to 375ºF.
  • Place first 5 ingredients in large bowl. Add half each of the cheese and barbecue sauce; mix well. Press half onto bottom of 9x5-inch loaf pan.
  • Cover with half the ham, remaining cheese and remaining ham; top with remaining ground beef mixture. Shape into loaf.
  • Bake 1 hour 5 min. or until done (160ºF), brushing with remaining barbecue sauce after 50 min. Let stand 5 min. before slicing.

One 1-pound loaf frozen bread dough
Nonstick cooking spray
All-purpose flour, for dusting
1/2 pound shaved Virginia ham
1/2 pound Irish Cheddar or other white Cheddar, grated

Steps:

  • Thaw the bread dough overnight, then bring to room temperature before rolling (but don't let it rise).
  • Preheat the oven to 325 degrees F. Spray a loaf pan with nonstick cooking spray.
  • On a lightly floured work surface, roll the bread dough into a 9-by-12-inch rectangle. When rolling, if the dough springs back, cover with a dry towel and let it rest for 5 minutes.
  • Shingle the ham slices onto the dough, leaving a 1/4 inch of exposed dough on all sides. Sprinkle with the cheese and roll the dough into a large log, pinching together the seam and tucking the ends under to seal completely.
  • Place the log, seam-side down, in the prepared loaf pan and bake until golden brown and cooked through and the internal temperature is 200 degrees, for 50 minutes to 1 hour.
  • Let it sit for at least 10 minutes. Remove from the pan. Slice and serve.

10 slices deli ham
1/4 cup sliced green onions

  • Preheat oven to 350°. Unroll dough onto a greased baking sheet; top with the ham, onions and cheeses. I tried this recipe years ago when I first started cooking. It's been a constant hit since then and is virtually foolproof. Unlike regular meatloaf, this one stays juicy and tender with excellent flavor. Serve with garlic mashed potatoes and steamed carrots for an old fashioned comfort food dinner.

1 ½ pounds lean ground beef
½ cup dry bread crumbs
1 (1 ounce) package dry onion soup mix
¼ cup barbecue sauce
1 clove garlic, minced
1 egg
1 tablespoon all-purpose flour
ground black pepper to taste
8 thin slices deli ham, or as needed
1 cup shredded Swiss cheese, or as needed
¼ cup ketchup
1 teaspoon mustard
1 tablespoon brown sugar
1 dash soy sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lay a 24-inch long sheet of parchment paper down on a work surface.
  • Mix together the ground beef, bread crumbs, onion soup mix, barbecue sauce, garlic, egg, flour, and black pepper in a bowl until well combined. Place the meat mixture down on the piece of parchment paper, and pat it into a rectangle shape about 10x16 inches. Lay deli ham slices down on the meat, keeping a 1-inch margin around all sides of the rectangle. Sprinkle Swiss cheese over the ham. Carefully lift up the short edge of the meat square with the parchment paper, and gently nudge and roll up the meat. Seal the edges and ends well. Place the meat roll into a 9x13-inch baking dish.

2 lbs ground meatloaf mixture (veal, beef and pork)
2 eggs
1/2 cup seasoned bread crumbs
1 cup vegetable juice cocktail
1 teaspoon parsley
1/4 teaspoon black pepper
1/2 teaspoon salt
2 small onions, minced
8 slices boiled ham
1/2 lb grated mozzarella cheese

Steps:

  • Combine all ingredients except cheese and ham.
  • Flatten meat mixture on foil-lined jelly roll pan.
  • Place ham slices evenly on top of meat mixture, sprinkle with grated cheese.
  • Holding one end of the foil, roll up meat like a jelly roll.
  • Remove foil, slide meat roll to center of pan, pat seams closed.
  • Bake at 350 for 1 hour.
  • Remove from oven, and allow to sit in a warm spot for five minutes before slicing.

I saw this recipe on a TV show on Amish cooking in the 1980s, and I've adapted it to suit our tastes. The Swiss cheese and bacon make it very satisfying on cold fall and winter evenings.

1/3 cup crushed butter-flavored crackers (about 8 crackers)

1/4 teaspoon rubbed sage

Drain on a paper towel; set aside. , In a bowl, combine the egg, crackers, 4 tablespoons cheese, onion, garlic, salt, sage and pepper. Crumble beef over mixture and mix well. Shape into a loaf and place in a greased 5-3/4x3x2-in. loaf pan. Place bacon pieces over top. Bake, uncovered, at 350° for 30 minutes. 1 small white onion, chopped

Steps:

  • Preheat oven to 400'F.
  • Lightly oil a 9x5x3" pan.
  • In a large bowl, combine the meatloaf ingredients, adding more bread crumbs if necessary, a tablespoon at a time, to make a firm loaf.
  • Try not to over handle.
  • Place the meat mixture on a large piece of plastic wrap, and form into a about 12x8" rectangle.
  • Arrange the sauteed mushrooms on top of the meat, then ham leaving a small margin around the edges.
  • Layer on the cheese on top of the ham slices.
  • Starting from the short end, carefully roll the meat mixture jelly-roll style.
  • Seal the edges and ends.
  • Place the loaf seam side down in the prepared pan.
  • Bake 1 hour or until done.
  • Sprinkle the top of the meatloaf with grated cheeses.
  • Bake 10 minutes more.
  • The center of the loaf will be pink because of the ham.
  • Remove from oven and let sit for 15 -20 minutes letting the juices absorb back into the loaf.
  • Slice with a serrated knife.

5 tablespoons all-purpose flour
2 cups whole milk

white pepper
1 pinch ground nutmeg
8 ounces dry elbow macaroni (uncooked)
8 ounces domestic swiss cheese, grated (2 cups grated)
8 ounces ham, cubed
1 cup frozen baby peas, thawed
1/4 cup grated parmesan cheese

Steps:

  • In a 2 to 3 quart sauce pot, melt butter over medium heat.
  • Add the flour and stir for 2 minutes.
  • Slowly add the milk, whisking to combine.
  • Bring to a simmer, add the salt, white pepper and nutmeg.
  • Reduce the heat to low and let sauce simmer slowly for 20 minutes.
  • Meanwhile, preheat oven to 350 degrees and, on the stove top, cook the macaroni according to pkg.

  • Remove the sauce from the heat, add the swiss cheese and stir until it melts.

3 1/2-4 cups all-purpose flour
2 packages fast rising yeast
2 tablespoons sugar
1/4 teaspoon salt
1 cup very warm water (120-130^ F)
1/4 cup prepared mustard
2 tablespoons butter
3 cups chopped cooked ham (about 1 pound)
1 cup grated swiss cheese (4oz)
1 (4 ounce) jar diced pimentos, well drained
3/4 cup diced dill pickle
1 egg, slightly beaten

Steps:

  • In a large bowl, combine 1+1/2 cups flour, undissolved yeast, sugar and salt.
  • Stir warm water, mustard and butter into dry ingredients.
  • Stir in enough remaining flour to make a soft dough.
  • Knead on lightly floured surface until smooth and elastic, about 4-6 minutes.
  • Cover, let rest on floured surface 10 minutes.
  • On lightly floured surface, roll dough to 15 x 10 inch rectangle.
  • Transfer to greased baking sheet.
  • Sprinkle ham, cheese, pimientos, and pickles lengthwise over the center third of dough.

1 (12 fluid ounce) can spinach, drained
¼ pound thinly sliced deli ham
¼ pound thinly sliced salami
¼ pound thinly sliced Swiss cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a shallow roasting pan. Prepare instant rice according to package directions.
  • In a large bowl, mix together ground sirloin, ground round, egg, chopped onion, green pepper, mushrooms and cooked rice. Season with garlic powder, salt and pepper.
  • On clean counter top, arrange sheets of wax paper approximately 1 1/2 feet long by 1 foot wide. Place meat mixture on wax paper, and flatten into a large square, about 1/2 inch thick (the thinner the better). Sprinkle with more garlic powder, then layer with parmesan, spinach, ham, salami and Swiss cheese. Using the wax paper, roll the meat as tightly as possible while removing the wax paper as you go. Tuck the two open ends into the meatloaf itself, and with hands lightly coated in vegetable oil, shape into a loaf. While lifting with the wax paper, transfer to shallow roasting pan, then slide wax paper out from underneath.
  • Bake in preheated oven for 1 hour and 10 minutes, or until meat is no longer pink and juices run clear. Allow to cool 15 minutes before serving.
