Vegetarian Shepherd's Pie image

With lentils and cremini mushrooms as well as the traditional carrots and peas, this vegetarian take on the traditional British potato-topped Shepherd's pie is satisfying and delicious. We use French green lentils because they hold their shape in cooking.

2 tablespoons extra-virgin olive oil
1 large onion, finely diced
2 carrots, peeled and thinly sliced
2 celery stalks, thinly sliced
10 ounces cremini mushrooms, trimmed and sliced
1 tablespoon tomato paste
1 tablespoon vegetarian Worcestershire sauce, such as Annie's Naturals
1 dried bay leaf
1 cup French green lentils, picked over
Kosher salt and freshly ground pepper
1 cup frozen peas
2 pounds Yukon Gold potatoes, scrubbed and cut into 1 1/2-inch pieces
4 cloves garlic
4 tablespoons unsalted butter
1/2 cup whole milk, warmed

Steps:

  • Heat oil in a medium pot over medium. Add onion, carrots, and celery and cook, stirring, until tender, 6 to 8 minutes. Add mushrooms and cook, stirring, until tender, 8 to 10 minutes. Add tomato paste and cook, stirring, 1 minute. Add Worcestershire, bay leaf, 4 cups water, and lentils; season with salt and pepper. Bring to a boil, then reduce to a simmer and cook until lentils are tender, 30 to 35 minutes. Stir in peas; remove from heat and season with salt and pepper.
  • Preheat oven to 400 degrees. Place potatoes and garlic in a medium saucepan; cover with 2 inches of cold water. Season generously with salt; bring to a boil, then reduce to a simmer and cook until a knife pierces potatoes easily, 10 to 12 minutes. Drain; return potatoes and garlic to pot. Add butter and milk; mash with a fork or potato masher until smooth. Season with salt and pepper.
  • Transfer lentil mixture to a 2-quart baking dish. Dollop with mashed potatoes; spread evenly to edges. Transfer to a baking sheet; bake until golden and bubbling around edges, about 15 minutes. Let stand 20 minutes; serve.

4 thin rolling steaks
16 ounces beef gravy
15 ounces peas and carrots, medley
2 cups Simply Potatoes Traditional Mashed Potatoes
8 ounces cheddar cheese

Steps:

  • Drain canned peas and carrots.
  • In a bowl Mix Mashed Potatoes with cheese, peas and carrots.
  • Spoon veggie mixture onto each thin rolling steak.
  • Roll up the steaks and secure with toothpicks.
  • In a non-stick frying pan brown the rolling steaks on each side approximately 1 minute per side.
  • Once the rolling steaks are browned on each side pour the jar of brown gravy on top and let cook until hot and bubbly 15 minutes.

Easy Vegetarian Shepherd's Pie

1 1/2 cups low-sodium mushroom broth
1/3 cup dry red wine
1 tablespoon tomato paste
1 tablespoon all-purpose flour
3/4 ounce dried porcini mushrooms
3 pounds russet potatoes, peeled, and cut into large dice
5 tablespoons unsalted butter
2 pounds cremini mushrooms, stemmed and quartered
Salt and freshly ground black pepper
1/2 medium yellow onion, finely chopped
3 medium celery stalks, finely chopped
5 medium garlic cloves, finely chopped
1 medium celery root, peeled and small dice
3 medium carrots, peeled and small dice
2 medium parsnips, peeled and small dice
1 tablespoon finely chopped fresh sage leaves
1 tablespoon finely chopped fresh thyme leaves
2/3 cup whole milk

Steps:

  • In a medium bowl, whisk together broth, wine, tomato paste, and flour until evenly combined and smooth. Stir in dried mushrooms and set aside to reconstitute, at least 30 minutes. Strain mushrooms before using, reserving liquid.
  • Place potatoes in a large pot and cover with heavily salted water by 2 inches. Bring potatoes to a boil and cook until fork tender, about 20 to 30 minutes.
  • Heat the oven on low broil and place a rack in the upper third. Meanwhile, melt 1 tablespoon of the butter in a 3 to 4-quart Dutch oven (or oven-ready saucepan) over medium-high heat. When it foams, add half the mushrooms and cook, stirring rarely, until mushrooms are browned, about 5 minutes. Remove mushrooms from pan, season well with salt and freshly ground black pepper, and set aside. Repeat to cook off remaining mushrooms.
  • Return pan to stove over medium heat and add 1 tablespoon of the butter, onion, celery, and garlic, and cook until softened and golden, about 2 minutes. Add celery root, carrot, parsnip, and herbs, and season well with salt and freshly ground black pepper. Cook until browned and softened, about 6 minutes.
  • Add wine mixture to pan and deglaze by stirring and scraping up any browned bits. Let cook until simmering and slightly thickened, about 3 minutes. Stir in reserved mushrooms and any juices that have accumulated and simmer until slightly thickened, about 8 minutes. Remove from heat and reserve in pan.
  • When potatoes are ready, drain well. Return to pan and mash until uniformly smooth. Fold in remaining 2 tablespoons butter and milk, and season well with salt and freshly ground black pepper. If necessary, keep warm over low heat.
  • Dot potatoes over vegetable mixture and spread to edges of pan to cover completely. Rough up the surface of the potatoes so there are bits that will get browned and crunchy. Broil until top is golden, about 15 to 20 minutes. Serve.

5-Ingredient Fix Contest Entry. this is my personal vegetarian variation of the Shepherd's pie I used to cook at the London Connection when I worked there , a little sweet lady from England taught me to cook british foods. my version of the shepherd's pie can be varied by adding a veggie layer if you wish like sliced carrots =) this version they will ask for more and like it better than the original meaty unhealthy version

1 (24 ounce) bag Simply Potatoes Traditional Mashed Potatoes

Steps:

  • use a sprayed casserole dish , I have a favorite dutch oven type that works great[remove lid near end to brown top] but also sometimes use big flat casserole dish.
  • lowest layer is garlic + onion chopped + sauteed, then I add a bag of veg crumbles[like morningstar farms ].
  • cook until warm then spead out as bottom layer.
  • top layer spread out simply potatoes mashed potatoes.
  • I put in casserole dish by layers=) [after assembling optional to add cheese].
  • bake about hr 325.
  • leftovers are fantastic, if there are any!

2 -3 lbs ground beef (85% lean preferred)
1 tablespoon Worcestershire sauce
16 ounces frozen mixed vegetables
24 ounces Simply Potatoes Traditional Mashed Potatoes
1 tablespoon butter

Steps:

  • Saute ground beef until fully cooked. Cook frozen mixed vegetables as directed. Mix together with butter and Worcestershire sauce. Place in pie plate (glass or foil) and top with Simply Potatoes Traditional Mashed potatoes.
  • Place in oven and cook at 375F for 20 - 25 minutes until heated through and potatoes are lightly browned.
  • Serve with a salad for a complete meal.

6 medium Yukon gold potatoes, peeled and diced
Kosher salt
2 tablespoons extra-virgin olive oil
1 large onion, diced
3 large carrots, cut into 1/2-inch chunks
2 stalks celery, cut into 1/2-inch chunks
1 bunch baby turnips, halved or quartered if large
6 cloves garlic, minced
Freshly ground pepper
1/2 bunch fresh parsley, leaves chopped (stems reserved)
1 1/2 tablespoons Worcestershire sauce
5 tablespoons unsalted butter
3/4 cup chopped veggie burgers or vegetarian protein crumbles
2/3 cup milk or half-and-half
Grated parmesan cheese, for sprinkling (optional)

Steps:

  • Preheat the broiler. Cover the potatoes with water in a pot; season with salt, cover and boil until the potatoes are fork-tender, 15 minutes.
  • Meanwhile, heat the oil in a stovetop casserole dish or shallow enamel pot over medium-high heat. Add the onion, carrots, celery, turnips and garlic. Season with salt and pepper and cook until the vegetables brown, 8 minutes. Add 1 1/2 cups cooking liquid from the potatoes to the casserole dish. Lower the heat and scrape up any browned bits with a wooden spoon. Tie the parsley stems with twine and add to the casserole. Cover and simmer until the vegetables are tender, 8 minutes. Stir in the Worcestershire sauce, 2 tablespoons butter and the chopped veggie burgers and warm through, 5 minutes. Remove the parsley stems and stir in the chopped parsley. Keep warm.
  • Drain the potatoes and mash with the remaining 3 tablespoons butter and the milk; season with salt and pepper and spoon over the casserole. Sprinkle with parmesan, if desired. Broil until golden brown, 5 minutes.

1 teaspoon parsley
4 ounces adzuki beans, soaked
2 ounces brown rice, soaked
to taste water, for boiling
1 tablespoon vegetable oil
1 medium onion, chopped
8 ounces carrots, thinly sliced
1 tablespoon soy sauce
2 tablespoons tomato paste
1 teaspoon garlic powder
1/2 teaspoon oregano
1 teaspoon basil
1/2 teaspoon marjoram
275 ml bean stock
salt & pepper
1 lb potato, Mashed

Steps:

  • Wash the beans and rice in plenty of cold water. Combine about 4 cups of water with beans and rice and cook for 5o minutes or until the beans are soft. Drain, reserving the stock for later.
  • Heat oil in a skillet. Fry the onions for 3 minutes.
  • Add the carrots and cook covered for 5 minutes.
  • Add the cooked beans and rice. Stir well and let saute for a few minutes, ensuring that the mixture does not burn.
  • Combine the soy sauce, tomato paste, herbs and stock.
  • Mix well and pour into the skillet. Bring to a boil, reduce heat to very low, partially cover and simmer gently for 30 minutes, stirring frequently to prevent it burning. Add more stock if necessary.
  • Transfer into a casserole. Top the cooked vegetables with mashed potatoes.
  • Bake in a preheated oven at 350F for 40 minutes, or until the potatoes are browned.
  • Serve with vegetables or a green salad.

After my son came home telling me about his friends mom's Shepherd's Pie I set out to create a simple yet tasty alternative and this is what I came up with. We are a "meat & potatoes" kind of family and my kids love it!

1 (24 ounce) bag Simply Potatoes Traditional Mashed Potatoes
1 lb lean ground beef
2 cups mild cheddar cheese, grated
2 (8 ounce) cans beef consomme or 2 (8 ounce) cans beef broth
2 tablespoons self rising flour

Steps:

  • Brown ground beef over medium heat and season as desired. Drain, return to pan at medium high heat and add 2 tablespoons flour. Stir until you no longer see the flour. Add 2 cans beef consume and bring to a boil. Reduce heat to medium and simmer 5 minutes to thicken, stirring often.

4 small carrots, julienne style
1 1/8 cups beef gravy
1 (4 ounce) package Simply Potatoes Traditional Mashed Potatoes

  • Sautee oniion and carrot in a skillet with EVO until translucent, stir in ground beef to brown, salt, pepper to taste, once meat has started to brown add beef gravy, (I use the left over gravy from pot roast) but you can use any prepared gravy you like. Bring that to a simmer. While that is simmering prepare the Simply Potatoes, Tradition Mashed Potatoes. according to the package directions.
  • Now preheat oven to 350; cover bottom of baking dish with ground beef mixture, spoon mashed potatoes on top and bake for 30 mins or until mashed potatoes are browned on edges. ENJOY.
