Steps:
- Cookies: In a medium bowl, whisk together flour, salt, and baking powder. In the bowl of a mixer fitted with the paddle attachment, beat butter, granulated sugar, and vanilla on medium-high speed until light and fluffy. Beat in eggs and cognac until well combined. Add flour mixture; beat on low until just combined. On a lightly floured surface, divide dough evenly and shape into 2 disks; wrap each in plastic. Refrigerate until firm, at least 45 minutes and up to 5 days.
- Preheat oven to 350 degrees. Line baking sheets with parchment. On a lightly floured surface, roll out dough 1/4 inch thick. Refrigerate until very firm, about 30 minutes, or freeze 10 minutes. Stamp out shapes. Transfer cutouts to prepared sheets, about 1 inch apart. Reroll scraps; stamp out more shapes and transfer to sheets. Refrigerate until firm, about 30 minutes, or freeze 10 minutes. Bake until set and golden around edges, 15 to 20 minutes. Transfer sheets to wire racks; let cool completely.
- Royal Icing: In a bowl, whisk together confectioners' sugar, egg whites, and 2 teaspoons lemon juice until smooth. If necessary, add more lemon juice or confectioners' sugar to reach desired consistency. Divide and tint with gel-paste colors as desired. Pour some into squeeze bottles for detailing.

MARY'S SUGAR COOKIES
Steps:
- Cream butter, sugar and eggs in a very large bowl. Add milk and vanilla. Mix well. Then add dry ingredients. Mix till combined.
- Depending on the temperature of your kitchen this may need to be chilled a little. I usually take some dough out then store the rest in the fridge till I'm ready to roll out more.
- Roll out to desired thickness (the thicker the cookie the softer it will be). Be sure to flour the rolling pin and board well (I use powdered sugar instead of flour) Dip your cutters in flour before cutting the dough. Cut into desired shapes.
- Bake in a 375°F oven for 6-8 minutes, till very lightly browned around the edges. Let cool on cookie racks, then frost and decorate.

MARY'S FILLED SUGAR COOKIES
This is another tried and true recipe from Grandma. She always made her own jams and jellies and depending on what fruit was in season that was the fruit of choice for these cookies. Best - Apricot!!! 2nd Strawberry or Raspberry -- You make the choice, they are all good.

Steps:
- Cream shortening, sugar and beaten egg.
- Mix in dry ingredients, then alternate mixing in with milk.
- Chill dough overnight or as long as it takes to make the dough easy to handle.
- Roll and cut into circles, one for the top and one for the bottom.
- Place the bottom circle on the greased cookie sheet, add one+ teaspoon jam/jelly in the center. With a moistened finger, wet the outside edge of the bottom circle, place the top circle over the bottom and seal the edges by pressing down. (You can do this with a fork if you prefer, like the edge of a pie crust).
- You can also put the jam on one side and flip the top over to make a half moon.
- Bake @ 350 degrees for 12-15 minutes or until the bottom edge is starting to brown.
