MARY ELLEN'S FAMOUS EASY HOMEMADE APPLE PIE



Mary Ellen's Famous Easy Homemade Apple Pie image

Best served warm with real whipped cream (never use the gross tubs of "Cool Whip"!) or homemade vanilla ice cream, of course!

Number Of Ingredients 14

5 cups flour - I use organic all-purpose flour
2 cups shortening - I use this shortening or you could also use leaf lard!
1 teaspoon vinegar - this is the kind I use
1 egg
Dash of salt (this sea salt is my favorite)
Water
Peel and slice Macintosh or Ida Red apples
2 Tablespoons flour
1/2 cup sugar - I use organic cane sugar or organic palm sugar
2 teaspoons cinnamon - I love this cinnamon
Dash sea salt
1/4 teaspoon nutmeg
5 thick pats of butter
Little bit of milk for moistening

Steps:

  • Mix flour, sugar, salt, cinnamon and nutmeg together, then stir the apples in and toss everything around well. Set aside until your bottom crust is ready.
  • Make your crust... Blend flour and shortening together. Place vinegar, egg and salt into a 1 cup measure, and fill it the rest of the way with water. Mix it with the flour and shortening until it's all stirred in and not too sticky.
  • Separate the dough equally into 4 pieces. Using a rolling pin, roll out two separate crusts at a time onto a floured surface until each one is a little bigger than your pie pan. Roll the crust carefully over the rolling pin, carry over to your ungreased pie pan, and then unroll, being careful not to let it rip. (If it does, just smush it back together.)
  • Pour the filling over the top and place 5 thick pats of butter around the top of the filling. Moisten the edges with a little milk, so your top crust will stick to the bottom.
  • Move your second crust onto the filling, pinch the edges together and tuck the crust under all around the edges. Don't forget to make two slits in the top so it doesn't explode in your oven.
  • It doesn't have to look perfect, but it will taste that way!
  • Do the same for your 2nd pie.
  • Bake at 400* until golden (or a lower temp if your oven runs hot like mine does), start checking it after 40-50 minutes or so. If the edges start to get too brown, cover them with one of these -- I love those things!
  • Once it's out of the oven, you'll want to let it cool so the filling sets up a bit, otherwise it'll be runny. After it sets out a bit then it's just right and so tasty!

I found this recipe years ago on PBS - America's Test Kitchen. It is the only apple pie I will make!! It has just the right amount of seasonings... Best I have ever tasted, and easy to make too!

3 Granny Smith apples
4 mcintosh apples
1 tablespoon lemon juice
3/4 cup white sugar
2 tablespoons flour
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/8 teaspoon allspice
2 -9 inches pie crusts

Steps:

  • Preheat oven to 425 degrees.
  • Peel, Core, & Slice apples into a large mixing bowl. Lightly toss with 1 tablespoon of lemon juice while slicing the apples.
  • In seperate medium sized mixing bowl, mix together 3/4 cup white sugar, flour, salt, nutmeg, cinnamon, & allspice, mix until well blended.
  • Next, pour sugar mixture over the apples. Toss lightly until apples are well covered with the sugar mixture.
  • Pour into bottom 9 inch pie shell, then cover with the top 9 inch pie crust. brush top pie crust with melted butter or margarine, and sprinkle with 1-2 tablespoons of sugar.
  • Bake for 25 minutes at 425 degrees. Then turn the oven down to 350 degrees and continue to bake for another 30-35 minutes.
  • Cool ~ serve with whipped topping or ice cream. Enjoy!

3 to 4 medium apples, peeled, cored and sliced
1 cup sugar
1/4 teaspoon nutmeg
1/2 stick unsalted butter, cut into bits
2 store-bought pie crusts

Steps:

  • Place bottom crust in pan. Add apples, sprinkle with sugar and nutmeg. Top with butter, place top crust over and vent with a few holes poked in pastry top. Bake 375 degrees for one hour.

This fun cake has been in Mary Ellen's family for many years. The recipe makes a nice moist cake dotted with gumdrops. How appropriate for Easter can you get? I've also made it for Christmas, and it's nice to have on hand anytime kids are around!

2 lbs gumdrops, fruit-flavored not licorice
1 cup sugar
1 cup butter
2 eggs, well beaten
4 cups flour, divided
1 teaspoon baking soda
1 teaspoon hot water
1 1/2 cups applesauce (sweetened or unsweetened)
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon salt
1 lb raisins
1 1/2 cups nuts, chopped

Steps:

  • Preheat oven to 275 degrees F. Grease a Bundt or angel food cake pan and line with 2 layers of waxed paper. If gumdrops are large, cut into pieces. Dissolve the baking soda in the hot water.
  • Cream butter and sugar. Add applesauce, then eggs and baking soda.
  • Sift 2 cups of the flour with the seasonings. Add to creamed mixture and mix. Sift the other 2 cups of flour over the raisins, gumdrops and nuts. Mix ell so they do not stick together -- especially important if the gumdrops were cut up. Add to creamed mixture. Mix well.
  • Pour batter into prepared Bundt or angel food cake pan. Set a cake pan of water on lowest rack of a preheated oven. Bake cake on middle rack for 2 hours or until it tests done, using a toothpick.

When I saw Tipical Mary Ellen make this on her HGTV program, I didn't believe it could really taste good. But always being ready to try something different, I gave it a shot and for crying out loud, it IS good! I suppose that any flavor would be good, but I stick to German chocolate cake mix with Pecan/Coconut frosting. It is sweet, but, hey! it's CAKE!! Hope you enjoy it as much as we do!!

1 (12 ounce) can cola (I use diet cola)
1 (16 ounce) can coconut pecan frosting
1/2 cup cola (again, I use diet cola)

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 9 x 13 inch baking pan with pam.
  • Pour can of cola into a bowl and add the cake mix. Stir well.
  • Place in the pan and bake for 30 minutes.
  • Mix the frosting and 1/2 cup cola well. Pour over cake, spreading evenly.

From my aunt who has made these off and on for decades to be served in local Michigan restaurants. The directions she gave me did not include measures for the veggies so I have guessed at those. You could adjust the proportions to your taste. I am also not sure how many this recipe should make but I tried it and had enough crust for 4 large ones. (I know Aunt Mary makes them big.) Unfortunately, I didn't measure the other ingredients and just kept making batches of crust until I ran out of filling. I do think they might benefit from the addition of even a simple seasoning like salt and pepper.

2 cups flour
1 teaspoon salt
2/3 cup shortening
1/2 cup cold water
2 1/2 lbs ground round
2 cups cubed potatoes
1 chopped onion
1 cup cubed rutabaga
oleo or butter

Steps:

  • Make pastry crust and divide into 6-8 portions. Roll each into a rectangular oval. Put 3 pats of oleo on each crust along with its share of the mixture of veggies and meat (uncooked). Fold in half, seal edges, and slit top crust.
