This easy twist on the classic fruit sponge makes plenty of squares - all decorated with marzipan eggs

Number Of Ingredients 20

250g mixed dried fruit
100g dried apricot , chopped
85g glacé cherry , chopped
zest 2 oranges , juice 1 orange (use the second in the topping)
200g butter , softened, plus extra for the tin
200g light muscovado sugar
4 large eggs
200g self-raising flour
50g ground almond
2 tsp mixed spice
1 tsp ground cinnamon
½ tsp freshly grated nutmeg
500g marzipan , 200g/7oz cut into 2cm chunks, the rest for the topping
50g butter
50g light muscovado sugar
100g plain flour
100g flaked almond
3 tbsp golden syrup
85g icing sugar , sieved
2-3 tsp orange juice

Steps:

  • Soak all the dried fruit in the orange juice for 2 hrs, or overnight.
  • Butter and line a 20 x 30cm tin with baking parchment. Heat oven to 160C/ 140C fan/gas 3. In a large bowl, beat the butter and sugar with an electric whisk until pale and fluffy. Add the eggs one at a time; mix well between each addition.
  • Sift the flour into the bowl and mix in the ground almonds and spices. Add the marzipan chunks, zest and dried fruit with any remaining juice, and give everything a good stir to combine.
  • Tip the cake mix into the prepared tin, level the surface, and bake for 45 mins - the cake may still be a little gooey in the centre at this point. Remove from the oven and increase the heat to 200C/ 180C fan/gas 6.
  • Make the topping. Rub the butter, sugar and flour together with your fingers to a crumbly breadcrumb texture. Grate in 200g reserved marzipan, add the flaked almonds and golden syrup. Mix everything with a fork, making sure it stays crumbly and doesn't clump. Sprinkle over the cake and return to the oven for 12-15 mins. Meanwhile, divide the rest of the marzipan into 11 and roll into balls.
  • Remove the cake from the oven once cooked through, arrange the marzipan balls on top and allow to cool in the tin. Mix the icing sugar with enough orange juice to give a runny icing, drizzle it all over the cake, then let it set a little before slicing it.

Celebrate Easter with a springtime seasonal bake. This classic simnel cake is packed with dried fruit and spices and topped with marzipan

225g sultanas
100g currants
50g mixed peel
2 lemons, 1 juiced and 2 zested
50ml orange juice
50ml brandy (optional)
225g butter, softened
225g light muscovado sugar
4 medium eggs
225g self-raising flour
100g glacé cherries, quartered
2 tsp mixed spice
500g yellow marzipan
1 tbsp apricot jam

Steps:

  • Put the sultanas, currants and mixed peel in a bowl with the lemon juice, orange juice, and brandy, if using. Mix well, cover and leave to soak overnight.
  • Heat the oven to 150C/130C fan/gas 2. Line the base and sides of a 20cm round cake tin with baking parchment.
  • Add the rest of the cake ingredients to the soaked fruit and stir until well combined. Spoon half of this mixture into the bottom of the cake tin and level it off so it's as flat as possible. Roll a third of the marzipan into a circle 20cm diameter and put it on the top. Gently add the rest of the mixture, levelling the surface again.
  • Bake for approximately 2½ hours until brown, well-risen and firm to the touch. A metal skewer should come out clean when inserted. Allow to cool for 20 mins in the tin and then turn out to cool on a wire rack.
  • Warm the apricot jam in a small saucepan and brush on the top of the cake. Roll out half of the remaining marzipan to the size of the top of the cake. Press it down firmly and push the edges down with your thumb to crimp it round the sides.
  • Roll the rest of the marzipan into 11 balls (these represent the Apostles). Place the balls evenly on top of the cake in a circle, sticking them down with a little dab of the jam. Gently blow torch the top of the cake until the balls are a light golden brown, alternatively put the whole cake under a hot grill until the marzipan turns a light golden colour.

1/3 cup sugar
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
4 cups chopped peeled apples
1 package (17.3 ounces) frozen puff pastry, thawed
TOPPING:
3 tablespoons butter, melted
2 tablespoons sugar
1/4 teaspoon ground cinnamon
Vanilla ice cream, optional

Steps:

  • In a large bowl, combine the sugar, flour and cinnamon; add apples and toss to coat. On a lightly floured surface, roll out each pastry sheet into a 12-in. square. Cut each into four squares. , Spoon 1/2 cup apple mixture into the center of each square; fold diagonally in half and press edges to seal. Place on a parchment-lined baking sheet., In a small bowl, combine the butter, sugar and cinnamon; brush over pastry. Bake at 400° for 12-16 minutes or until golden brown. Serve warm with ice cream if desired.

  • Preheat the oven to 150C/300F/Gas 2. Grease a 20cm/8in deep round cake tin and then line the base and sides with baking parchment.
  • Cut the cherries into quarters, put in a sieve and rinse under running water. Drain well and then dry thoroughly on kitchen paper.
  • Beat the butter and sugar together in a large bowl until light and creamy. Beat in the eggs, one at a time, to prevent them from curdling. Sift in the flour and mix it in a little at a time.
  • Take one-third of the marzipan and roll it out to a circle the size of the tin and then place the circle on top of the cake mixture. Spoon the remaining cake mixture on top and level the surface.
  • Bake in the preheated oven for about 2½ hours until well-risen, evenly brown and firm to the touch. Cover with foil after one hour if the top is browning too quickly.
  • When the cake is cool, warm the apricot jam in a small saucepan. Brush the top of the cake with a little of the jam and roll out half of the remaining marzipan to fit the top of the cake.
  • Brush the marzipan with beaten egg and arrange the marzipan balls around the edge of the cake. Brush the tops of the balls with beaten egg, too, and then place the cake under a hot grill to turn the marzipan golden-brown.
  • To crystallise the primroses, whisk the egg white in a bowl until frothy. Snip the long stalks off the primroses, then, using a paint brush, carefully paint the petals of each primrose with a little frothy egg white, then turn the flower over and paint the underside of the petals and the little stalk.
  • Cover the flowers in caster sugar until all the egg white is evenly coated, and leave to dry completely. You can either just lie them carefully on non-stick parchment, or, to help keep the flowers’ shape, you can stretch non-stick paper over a plastic box or bowl, securing it in place with string or a rubber band, and then pierce several holes in the paper using a skewer.
  • Decorate the cake by arranging the crystallised primroses on top and tying a ribbon around the middle.
