1 ½ cups blanched almond flour
1 ½ cups confectioners' sugar
2 teaspoons almond extract
1 teaspoon rose water
1 egg white

Steps:

  • Combine almond flour and confectioners' sugar in a food processor; pulse until evenly mixed. Add almond extract and rose water; process until combined. Add egg white; process until a thick dough forms.
  • Wrap dough in plastic wrap and refrigerate until firm.

EASY VANILLA MARZIPAN



Easy vanilla marzipan image

It's worth having a go at making your own marzipan to cover your Christmas cake - and you can experiment with adding different flavours

Yield Covers a 20cm/8in cake

Number Of Ingredients 7

175g golden caster sugar
280g icing sugar, sifted, plus extra for kneading and rolling out
450g ground almond
seeds scraped from 1 vanilla pod
2 eggs, beaten
½ tsp orange or lemon juice
3 tbsp apricot jam, warmed then sieved

Steps:

  • Mix the sugars and almonds in a large bowl, then rub in the vanilla seeds until even. Make a well in the middle, then tip in the eggs and citrus juice. Cut the wet ingredients into the dry with a cutlery knife. Dust the surface with icing sugar, then knead the marzipan briefly with your hands to a smooth dough. Don't overdo it as the paste can get greasy. Add a bit more icing sugar if it seems too wet. Shape into a ball, then wrap and keep in a cool place until ready to cover the cake. Can be made up to 2 days in advance.
  • Lift the cake onto a cake board or plate, then use a pastry brush to cover evenly with a thin layer of jam. Dust the work surface with more icing sugar, then roll the marzipan into a circle about 40cm across, dusting underneath the marzipan with more icing sugar and turning it a quarter turn after every few pushes of the rolling pin.
  • Flip the top of the circle back over your rolling pin so you can see the underside of the marzipan, then lift the pin up and lift the marzipan over the cake. Stop once you can see that the edge of the marzipan nearest you is about level with the bottom of the cake. Flop the front of the marzipan down. Smooth the paste over the cake using the palms of your hands, then trim with a sharp knife. If any cracks appear, simply pinch the paste back together and smooth. Leave to dry for at least 24 hrs, or up to 3 days, before covering with icing.
  • How long does homemade marzipan keep? Although homemade marzipan contains raw eggs, the amount of sugar, and lack of moisture, prevents bacteria growing when left at room temperature, so your cake should last for 1-2 months iced. The most important thing is that you don't scrimp on drying time - once you've covered your cake in marzipan it should be left to completely dry out, before you then cover it with icing. If you want to make marzipan before you are ready to cover your cake, then wrap it well in cling film and keep in a fridge for up to a week - as wrapped in a ball it will still contain a little moisture. As it contains raw eggs it shouldn't be given to anyone in an at-risk group, including pregnant women, the elderly, the unwell and the very young. You can make a cooked marzipan, which carries no risks. It is a little softer, and harder to work with, but a good substitute if you are at all worried.

Mary Berry shows you the easiest way to make mince pies en masse! A hidden layer of marzipan is a lovely surprise, but to make it even easier add the mincemeat in one layer with the grated marzipan and pastry stars on top. For this recipe you will need a 5cm/2in star cutter and a 36x12cm/14x4½in loose-bottomed tranche tin (alternatively use a 23cm/9in loose-bottomed round tart tin).

175g/6oz plain flour
100g/3½oz unsalted butter, cubed
25g/1oz icing sugar
1 free-range egg, beaten, for brushing
550g/1lb 4oz good-quality mincemeat
150g/5½oz marzipan, coarsely grated
icing sugar, for dusting
brandy cream, to serve

Steps:

  • Preheat the oven to 200C/180C Fan/Gas 6.
  • For the pastry, measure the flour, butter and icing sugar into a food processor and pulse until the mixture resembles breadcrumbs (take care not to over-process the pastry as it will make it tough). Set aside a tablespoon of the beaten egg for the glaze and add the remaining egg to the processor. Pulse again until the pastry just comes together. Put the pastry on a floured work surface and knead until it comes together to form a ball.
  • Reserve a quarter of the dough for the stars and roll out the remaining pastry to the thickness of a pound coin. Line the base and sides of the tin with pastry and prick with a fork. Chill for 15 minutes.
  • Spread half the mincemeat over the base of the pastry and scatter over the grated marzipan. Evenly spread the remaining mincemeat over the top to cover the marzipan. Roll out the reserved pastry and, using star cutters, stamp out enough stars to decorate the top of the tart (about 14). Arrange the stars on the top of the tart and brush with the reserved beaten egg.
  • Bake for 25 minutes, or until the pastry is golden-brown and crisp. Set aside for 10 minutes to cool slightly before removing from the tin.
  • Serve the tart warm, dusted with icing sugar and with the brandy cream alongside.

1 pie pastry, to line a 11 x 7 pan
1/4 cup raspberry jelly, to cover pastry, about
1/2 cup butter
2/3 cup white sugar
1/2 teaspoon vanilla
2 medium eggs
2/3 cup rice flour
1/4 teaspoon salt
2 drops red food coloring
2 drops green food coloring
2 tablespoons butter
2 tablespoons warm milk
1 teaspoon almond flavoring
1 1/2 cups powdered sugar

Steps:

  • Line a 7 x 11 brownie pan with your favourite pie pastry.
  • Spread a seedless raspberry jam lightly over unbaked pastry.
  • Beat butter, sugar, vanilla and eggs until fluffy.
  • Add rice flour, and salt.
  • Divide batter into three different bowls.
  • Green food colour into one and mix until desired colour.
  • Red colour into the other and mix well until a nice pink.
  • Leave the third white.
  • Dot a tablespoon of each batter allover the jam topped pastry.
  • leaving a marbling effect.
  • Distributing evenly.
  • Bake 350 degrees for 30- 35 minutes.
  • Cool thoroughly.
  • Frost by blending the remaining butter, milk, almond flavour and icing powder.
  • Make a creamy frosting and frost top of cake.
  • Cut into little squares.
