6 tablespoons chilled unsalted butter, cut into small pieces, plus more for pan and bowl
3 cups sugar
1 tablespoon Valrhona cocoa powder
Large pinch of fine sea salt
3 tablespoons light corn syrup
1 cup milk
4 ounces Callebaut unsweetened chocolate, finely chopped
2 teaspoons pure vanilla extract

Steps:

  • Butter an 8-by-8-inch straight-sided baking pan. Line with parchment paper; set aside. Butter a large, shallow, stainless-steel bowl; set aside.
  • In a 3-quart saucepan, whisk to combine the sugar, cocoa, and salt. Place over medium-low heat, and add corn syrup and milk, stirring until smooth. Add chocolate. Cook, stirring, until chocolate is melted and sugar dissolved before it reaches a boil. Brush down sides of saucepan with a pastry brush dipped in water to prevent crystallization. Increase the heat to high, and cook until it reaches 236 degrees (soft-ball stage).
  • Pour into prepared bowl without scraping the sides of the saucepan. Dot top with butter. Let cool to 110 degrees to 118 degrees on an instant-read thermometer without disturbing, about 1 hour. Add vanilla. Using a plastic dough scraper, transfer to the bowl of an electric mixer. Using the paddle attachment, beat on low speed until the butter and vanilla are completely incorporated. Increase speed to medium, and beat, stopping occasionally, until fudge keeps its shape when dropped from a spoon and sheen is gone, 3 to 8 minutes. Using a clean plastic dough scraper, transfer to prepared baking pan, spreading evenly. Before fudge sets completely, score with a knife into 1-inch squares. Let stand until completely cooled.

1 bag (12 ounces) semisweet chocolate chips
1 cup walnuts, coarsely chopped

Steps:

  • Butter an 8-inch square baking pan; line with 2 crisscrossed pieces of parchment paper, leaving an overhang. Butter paper.
  • In a large saucepan, combine butter, marshmallows, sugar, cream, and salt; cook over medium, stirring occasionally, until marshmallows are melted, 8 to 10 minutes. Off heat, stir in vanilla, chocolate chips, and 1/2 cup walnuts until chocolate is melted.
  • Pour fudge into prepared pan, and smooth top; sprinkle with remaining walnuts. Let cool 30 minutes. Refrigerate until set, about 1 hour.
  • Using overhang, lift fudge onto a cutting board; cut into squares (6 rows by 6 rows).

1 (12 fluid ounce) can evaporated milk
2 cups chopped nuts

Steps:

  • Butter two 9x9 inch baking pans and set aside.

3/4 cup Dutch-process cocoa powder, sifted, plus more for pans

3/4 cup sour cream
4 ounces (61 percent cacao) bittersweet chocolate, melted and cooled
2 cups cake flour (not self-rising), sifted
1 teaspoon baking soda

Steps:

  • Preheat oven to 350 degrees. Butter two 9-by-2-inch round cake pans; line bottoms with parchment paper rounds. Butter parchment; dust with cocoa powder, tapping out excess.
  • In a medium bowl, whisk together cocoa and hot water until smooth. Whisk in sour cream; let cool, then whisk in chocolate. Into a medium bowl, sift together flour, baking soda, and salt.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sugar on medium speed until light and fluffy, 3 to 4 minutes. Add eggs, one at a time, beating to combine after each addition; scrape down sides of bowl as needed. Beat in vanilla. With mixer on low speed, add flour mixture in two parts, alternating with the cocoa mixture and beginning and ending with the flour; beat until combined.
  • Divide batter between prepared pans (or muffin tins lined with paper liners); smooth with an offset spatula. Bake until a cake tester inserted in center comes out clean, 45 to 50 minutes (18 to 20 minutes for cupcakes).
  • Transfer pans to a wire rack to cool 15 minutes. Invert cakes onto rack; peel off parchment. Re-invert cakes; let cool completely, top sides up.
  • Using a serrated knife, trim tops of cake layers to level. Transfer a cake layer to a cake turntable or platter to frost. Using an offset spatula, spread 3/4 cup frosting on top. Set remaining cake layer into place.
  • Spread remaining frosting over entire cake, swirling to coat. Serve immediately, or cover with a cake dome and refrigerate; let sit at room temperature for 20 minutes before serving.

Steps:

  • Butter an 8-by-8-by-2-inch pan. Sift cocoa powder and sugar into a medium bowl.
  • Prepare an ice bath. In a small saucepan, combine milk and cocoa-powder mixture with a wooden spoon until a sandy, pastelike texture forms. Add chocolate, butter, and corn syrup. Cook on low heat, stirring constantly, until sugar has completely dissolved, 7 to 10 minutes.
  • Using a pastry brush, wash down sides of pan with cold water. Increase heat to medium. When a candy thermometer registers 236 degrees remove the pan from heat, and place in ice bath for 5 seconds. Transfer pan to a heat-proof surface, and let sit until thermometer registers 121 degrees, about 45 minutes.
  • Using a wooden spoon, stir fudge briskly until it begins to lose its sheen, 2 to 3 minutes. Stir in walnuts. Spread fudge into prepared pan with wooden spoon. Using your fingers, smooth fudge. Cover with plastic; chill 30 minutes. Cut into 1-inch squares.

  • Pour into prepared pan and let cool. Cut into about 60 squares.

1/8 teaspoon salt
1 1/2 cups whole milk
1/4 cup butter
1/2 cup pecans, finely chopped (optional)

Steps:

  • Line 8 or 9 inch square pan with foil.
  • Mix sugar, cocoa and salt in a heavy 4-quart saucepan.
  • Stir in whole milk.
  • Cook over medium heat, stirring constantly until mixture comes to a full rolling boil.
  • Boil without stirring until mixture reaches 234 degrees on a candy thermometer or until small amount of mixture dropped into very cold water forms a soft ball.
  • Remove from heat and add butter and vanilla. Do Not Stir. Cool at room temperature to 110 degrees.
  • Stir in pecans.
  • Beat with a wooden spoon until fudge thickens and just begins to loose some of its gloss.
  • Quickly spread into prepared pan.
  • Cool completely.
  • Cut into square.
  • Store in a tightly covered container at room temperature.

1 tablespoon cold unsalted butter, plus more for pan
1 1/2 cups heavy cream
3 cups sugar
3 ounces best-quality unsweetened chocolate, finely chopped
1/4 cup light corn syrup
1/4 teaspoon salt

Steps:

  • Butter an 8-inch square baking pan; line with parchment paper, allowing a 1-inch overhang. Butter parchment paper, and set aside. Check the calibration of the candy thermometer. Put butter into a large bowl, and set over a wire rack; set aside. Put cream, sugar, chocolate, corn syrup, and salt into a medium heavy saucepan.
  • Cook over medium-low heat, stirring constantly, until sugar has dissolved and chocolate has melted, about 10 minutes. Raise heat to medium. Bring mixture to a boil, washing down sides of pan with a wet pastry brush to prevent sugar crystals from forming. Attach warm thermometer to pan; continue to cook, without stirring, until mixture registers 238 degrees (soft-ball stage), 10 to 15 minutes.
  • Immediately pour mixture into bowl with butter (do not scrape out the bottom of the pan). Attach thermometer to bowl. Let mixture cool, undisturbed, until it registers 110 degrees, about 1 1/2 hours.
  • Remove thermometer. Transfer bowl to a work surface. Using a wooden spoon, begin to gently stir mixture.
  • Continue to stir, gradually increasing speed until mixture thickens, lightens in color, and loses its sheen, 4 to 5 minutes.
  • Pour into prepared pan. Using a small offset spatula, quickly spread fudge to sides of pan, and smooth top. Let fudge cool in pan on a wire rack, about 1 hour. Cover with plastic, and refrigerate until completely set, about 8 hours. Run a sharp knife around nonparchment sides to loosen; lift fudge out. Cut into 64 one-inch pieces. Fudge can be refrigerated between layers of parchment in an airtight container up to 1 week; bring to room temperature before serving.

MARTHA'S CHOCOLATE FUDGE

I wanted my fudge to taste like what we get here in New Orleans from a place called "The Fudgery." They make it the old-fashioned way, with big copper kettles and a huge marble slab. You can still make excellent fudge without this equipment though. This is a Martha Stewart recipe for chocolate fudge with my own instructions. Follow the steps exactly and you will have smooth, creamy chocolate fudge, similar to what you'd buy at a candy store. After you've made fudge this way a few times it'll become like second nature to you; it's not really difficult at all. Martha says: "Little pieces of satin ribbon transform these squares of fudge into the tiniest of gifts." NOTE: Do not attempt to double this recipe--the results will not be the same. If you want big, thick pieces, use a loaf pan.

3 tablespoons best-quality cocoa powder (Dutch process will give superior results)
2 cups sugar
2/3 cup whole milk (do not use reduced fat milk.)
3 ounces best-quality semisweet chocolate, finely chopped (baking chocolate)
2 tablespoons light corn syrup
1 teaspoon vanilla extract
1 cup walnut halves, cut into large pieces (optional)

Steps:

  • You will need a candy thermometer. Make your fudge on a dry day. Too much humidity will keep the fudge from setting up properly.
  • Butter an 8-by-8-by-2-inch pan and place it in the fridge. Alternately, use a loaf pan if you want really thick pieces.
  • Sift cocoa powder and sugar into a medium bowl.
  • Prepare an ice bath. I use my sink, filling it with approximately 2" of water, then adding a bunch of ice.
  • In a small saucepan, combine milk and cocoa-powder mixture with a wooden spoon until a sandy, paste like texture forms.
  • Add chocolate, butter, and corn syrup.
  • Cook on med-low heat (don't let it boil yet), stirring constantly, until sugar has dissolved completely (very important), 7 to 10 minutes.
  • Using a pastry brush dipped in cold water, wash down any sugar crystals that form along the sides of pan.
  • Clip a candy thermometer to the side of the pan, making sure the tip of the thermometer does not touch the bottom of the pan.
  • Increase heat a bit until the fudge starts to boil. When the fudge begins to boil, stop stirring and don't stir AT ALL for the rest of the cooking time or the fudge will be grainy.
  • Keep the syrup boiling, being careful that it doesn't boil over.
  • When the candy thermometer registers 236°, remove the pan from heat, and place in ice bath for 5 seconds.
  • Transfer pan to a heat-proof surface, and let sit until thermometer registers 110°, about 45 minutes.
  • Add vanilla, and using a wooden spoon (or electric hand mixer), stir fudge briskly until it thickens and begins to lose its sheen, 2 to 3 minutes (it may take a little longer to set up. Depending on the humidity in the air, it could take as much as 10 minutes).
  • Stir in walnuts, if desired.
  • Spread fudge into prepared pan with wooden spoon. Cover with plastic wrap; chill 30-60 minutes. Cut into 1-inch squares.

This is from the cake doctor. There was another one posted that had changed it, but the first time I made this I couldn't think of any changes I would make. I got this recipe from Shelly who I taught kindergarten with and all of the chocolate lovers in our group were smiling when she brought this to our gatherings. I have baked this in the bundt pan and some of the icing goes into the hole giving each piece a little bit of fudge. I used my Lady Ann pan and put all of the icing in the indention making it decadent and impressive.

18 1/4 ounces devil's food cake mix or 18 1/4 ounces fudge cake mix
4 ounces instant chocolate pudding mix
1 cup sour cream
1/2 cup vegetable oil
1/2 cup water
4 large eggs

1 cup sugar
5 tablespoons butter
1/3 cup whole milk
1 cup semi-sweet chocolate chips

Steps:

  • Pre-heat oven to 350 degrees.
  • Lightly mist a 12 Bundt pan with PAM and dust with flour.
  • Place cake mix, pudding, sour cream, water, oil and eggs in a large mixing bowl.
  • Blend with electric beaters on low speed for 1 minute.
  • Stop and scrape down bowl.
  • Increase speed to medium and beat 2-3 minutes more.
  • Fold in chips.
  • Turn batter into prepared pan and bake 58-62 minutes or until cake springs back when lightly pressed. It will also begin to pull away from the pan.
  • Place on wire rack and cool for 20 minutes.
  • I always kind of shake the pan to make sure that it is loosened before inverting onto a rack to cool for 20 more minutes.
  • Meanwhile make icing.
  • Place sugar, butter and milk in medium saucepan over medium-high heat.
  • Stir until it comes to a boil- about 3-4 minutes.
  • Still stirring let mixture boil for 1 minute.
  • Remove from heat.
  • Stir in chips and stir until smooth.
  • Pour and drizzle over bundt cake.

This came from a Martha Stewart cookbook. Wonderful flavor. Almost the same taste as Malley's hot fudge sauce in Cleveland. I have been asked for this recipe a lot. I am REQUIRED to double it every time I make it! It is good even just taking it by the spoonful after it is in the refrigerator. Do not cook it too long though or it will become fudge.

1/4 cup unsweetened cocoa powder (I usually add a little more)
1/2 cup sugar
1/2 cup light corn syrup
1/4 cup light cream or 1/4 cup evaporated milk
1/8 teaspoon salt (calls for kosher, I use regular)
1 1/2 tablespoons unsalted butter (I leave out the above salt if I only have regular butter)
1/2 teaspoon vanilla

Steps:

  • Combine all ingredients in saucepan except for vanilla.
  • Cook over med. heat.
  • Stir until mixture boils.
  • Set timer and boil for 3 minutes, stir occasionally
  • (Don't boil for more than 3 minutes or it will become like fudge).
  • Turn off heat and stir in vanilla.
  • Store in refrigerator up to a week.
  • Can reheat in microwave for a few seconds at a time or place in pan of hot water until sauce warms and thins.

COUNTRY HOUSE FUDGE- MARTHA DIXON

My Mom makes this amazing fudge every year at Christmas. It's very smooth, creamy, gooey and rich- not all dry and hard like alot of recipes I've tried. It's unlike any recipe I've found. You'll love it. You'll blow everyone away when you serve this! It calls for 4 cups nut meats but you can substitute those for whatever goodies you like (my all-time favorite is cherries). You can also add different flavorings to make your favorite! My Mom has made this with crushed cookie crumbs, nuts, coconut, peanut butter, caramel, cherries, raspberry flavor, mint flavor, rum flavor marshmallows... there are so many I can't remember them all. The recipe comes from a cookbook called "Martha Dixon's Copper Kettle Cook Book" from 1963. Martha Dixon was quite well-known at that time and had a cooking TV show that was really popular back then. There was no Food Network back then. It was Julia Child and later the Galloping Gourmet... remember them? Anyway, her show was on TV for several years. Some of you may remember her.

Steps:

  • This makes several pounds of fudge (I think it's around 4) so it's the perfect recipe for the holidays. You can pour it into several smaller pans and make all of your different flavors with one batch. For example, you could divide it into 4 portions and add cookie crumbs to one, peanut butter to one, cherries to one and marshmallows to the last one. It's a great way to knock out alot of fudge at one time.
  • Boil together the sugar, salt, butter and milk. Gently boil for 8 to 10 minutes. Start timing it AFTER it comes to a full gentle boil. (stir it pretty frequently while this is going on).
  • Remove from heat and add the chocolate and all the rest of the ingredients. Stir rapidly with a large spoon until thoroughly blended.
  • Pour into 2 buttered pans (13x9). Cool several hours before cutting into 1 inch squares. Store covered tightly with plastic wrap. I keep mine in the fridge cause I like it cold.

2-1/4 cups sugar

3 milk chocolate candy bars with almonds (1.45 ounces each), chopped

  • Line a 13x9-in. pan with foil and grease the foil with 1-1/2 teaspoons butter; set aside. In a heavy saucepan, combine the sugar, milk, salt and remaining butter. Cook and stir over medium heat until sugar is dissolved. Bring to a rapid boil, stirring constantly for 5 minutes. There are few recipes I just have to pull out every holiday season, but this fudge is one. It couldn't be easier ... or better!

Number Of Ingredients 6

1-1/2 teaspoons butter, softened
3 cups semisweet chocolate chips
1 can (14 ounces) sweetened condensed milk
Pinch salt
1 cup chopped macadamia nuts
1-1/2 teaspoons vanilla extract

Steps:

  • Line an 8-in. square pan with foil and grease the foil with butter; set aside. , In a heavy saucepan, combine the chocolate chips, milk and salt. Cook and stir over low heat until chips are melted. Remove from the heat; stir in nuts and vanilla. Pour into prepared pan. Chill for 2 hours or until firm. , Using foil, lift fudge out of pan. Gently peel off foil; cut fudge into 1-in. squares.

1 pound good-quality bittersweet chocolate, finely chopped
1/4 cup corn syrup
2 1/3 cups heavy cream

Steps:

  • Combine chocolate and corn syrup in a large heatproof bowl. Bring cream just to a simmer over medium-high heat; pour over chocolate mixture. Let stand, without stirring, until chocolate begins to melt.
  • Beginning near the center and working outward, whisk melted chocolate into cream until mixture is combined and smooth. Continue to whisk until frosting just barely begins to hold its shape and is slightly lighter in color. Use immediately (frosting will continue to thicken after whisking).
