A family recipe that spans three generations, these glazed sweet potatoes are rich and delectable and are the perfect accompaniment to the traditional flavors of Thanksgiving.

6 large sweet potatoes
4 cups packed brown sugar
2 cups butter
1 cup pure maple syrup
¼ cup pure vanilla extract
1 teaspoon salt

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Place sweet potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain. Peel sweet potatoes once they are cool enough to handle. Slice sweet potatoes into 1-inch thick rounds; arrange in a 9x13-inch casserole dish.
  • Mix brown sugar, butter, maple syrup, vanilla extract, and salt together in a saucepan; bring to a boil, stirring often, until sugar has dissolved and butter has melted, 5 to 10 minutes. Pour sauce over sliced sweet potatoes.
  • Bake in the preheated oven until heated through and sauce has slightly reduced, about 1 hour. Serve hot.

one 29 oz. can sweet potato
1/4 packed dark brown sugar
1 cup milk
6 tablespoons melted butter
2 cups flour
1 tablespoon baking powder
1 teaspoon salt
6 egg whites
1/2 teaspoon vanilla extract
3 cups maple syrup
1 teaspoon cinnamon

Steps:

  • Open and drain sweet potatoes, add to food processor with milk, brown sugar, butter and vanilla. Pulse until well combined and smooth.
  • In a large bowl, mix together flour, baking powder and salt. When well combined, stir in sweet potato mixture.
  • Add egg whites to stand up mixer and whisk on high until stiff peaks form. Fold egg whites into the batter, 2 cups at a time. Once it's well incorporated, scoop about 1 cup of batter onto a hot greased waffle iron and cook for about 5 minutes or until slightly golden and crispy.
  • Warm up maple syrup in a pot on low heat. Once warmed, stir in cinnamon.

2 lbs sweet potatoes
3/4 cup 1% low-fat milk
1/4 cup packed brown sugar
2 tablespoons vanilla extract
2 tablespoons butter or 2 tablespoons margarine, softened

Steps:

  • Pierce potatoes with a fork, and arrange in a circle on paper towels in microwave oven.
  • Microwave at high 10 minutes or until tender, rearranging potatoes after 5 minutes.
  • Wrap in a towel; let stand 5 minutes.
  • Peel and mash potatoes.
  • Combine with milk and remaining ingredients.
  • Place in a 1-quart casserole; cover and microwave on medium for 7 minutes, or until thoroughly heated.

1 1/2 lbs sweet potatoes, cleaned and left damp
1/2 cup plus 3 tablespoons half-and-half
1/2 tablespoon pure vanilla extract
1 teaspoon grated orange zest
2 tablespoons butter, at room temperature
1 pinch kosher salt
1 pinch white pepper

Steps:

  • Preheat oven to 350°F Put potatoes on baking sheet and bake until fork tender, approximately 1 hour.
  • Remove from oven and let cool until just cool enough to handle. Peel and discard skins. Set aside in a covered bowl.
  • Pour half and half into a 2 quart pot. Add vanilla and orange zest. Bring to a simmer and cook for 5 minutes.
  • Mash sweet potatoes and butter with a potato masher or mixer on low. Slowly add vanilla milk mixture until potatoes reach desired consistency.
  • Season with kosher salt and white pepper to taste.
  • Serve warm.

1/4 cup maple syrup
2 tablespoons brown sugar
2 tablespoons coconut, flaked (optional)
1/3 cup pecan halves, chopped
1 1/2 cups miniature marshmallows

Steps:

  • Spray an 8x8" baking dish with nonstick cooking spray.
  • In a 3 quart saucepan, place sweet potatoes and water to cover; heat to boiling.
  • Reduce heat; cover and simmer 25-30 minutes until tender.
  • Drain potatoes and cool slightly.
  • Peel and cut into large chunks; place in prepared dish.
  • Preheat oven to 350 degrees.
  • In a small saucepan, melt butter; stir in syrup, sugar and coconut (if using). Over low heat, cook, stirring, 3 to 5 minutes until blended.
  • Sprinkle nuts over sweet potatoes then top with syrup mixture. Bake 25 minutes.
  • Top with marshmallows; bake 5 to 7 minutes until marshmallows are lightly browned.
