Steps:
- Preheat the oven to 350 degrees F.
- Put the pancetta in the bowl of a food processor and pulse until it forms a paste. Transfer to a bowl and mix in by hand the garlic, citrus zests, parsley, rosemary, red pepper flakes, capers and 2 tablespoons salt until thoroughly blended.
- Put the ham flesh-side up on a cutting board and score the meat with the tip of a sharp knife every inch or so in a cross-hatch pattern. Rub the pancetta paste into the meat, making sure to get it into the score marks. Flip the ham over and score the skin with the knife as you did the flesh. Roll the ham up skin-side out and secure with kitchen twine. Season the skin lightly with salt.
- Put the pork in a roasting pan and transfer to the oven to roast for 2 hours.
- Increase the oven temperature to 400 degrees F and roast until the pork reaches an internal temperature of 170 degrees F and the skin is nice and crisp, about 1 hour, 30 minutes.
- Remove from the oven and let rest for 30 minutes. Thinly slice the porchetta before serving.

- saute the onion and garlic in the olive oil over medium heat until translucent, but not brown.
- add the thyme and carrot and cook 5 minutes more.
- add the tomatoes.
- bring to a boil, lower the heat and simmer for 30 minutes.
- season with salt to taste.
- serve immediately.
- the sauce may br refrigerated for up to one week or frozen for up to 6 months.

Steps:
- heat oil in heavy large pot over medium heat.
- Add onions, celery and garlic an saute until vegetables are tender and beginning to brown, about 10 minutes.
- Increase heat to high; add veal, pork, pancetta or bacon and saute until meat is brown, breaking up meat with the back of a fork, about 10 minutes.
- Add tomatoes with their juices, 1 3/4 cups chicken broth, milk and thyme.
- Reduce heat to medium-low and simmer uncovered for 1 hour 15 minutes, breaking up tomatoes with the back of a spoon, adding more chicken broth if mixture is too thick and stirring occasionally.
- Season to taste with salt and pepper.
- Cook fettuccine in large pot of boiling water just until tender but still firm to the bite, stirring occasionally.
- Drain.
- Add fettuccine to pot with ragu and toss to blend.
- Transfer to large bowl.
- Sprinkle with 1/2 cup Parmesan.
- Serve, passing remaining Parmesan seperately.

- In a large skillet, heat 2 tablespoons of the oil until shimmering. Add the yellow onion and sliced fennel and cook over moderate heat, stirring occasionally, until softened, 10 minutes. Add the sausage, fennel seeds, rosemary, garlic and the 1 tablespoon of pepper and cook, breaking up the meat, until the sausage is browned, about 5 minutes. Season with salt. Transfer the mixture to a bowl and let cool. Stir in the eggs and fennel fronds.
- Preheat the oven to 350°. Place the red onions in a large roasting pan. Arrange the pork on a work surface and season with salt and pepper. Spread the sausage mixture over the pork, leaving a 1-inch border all around. Starting at a long side, roll up the pork and tie with kitchen twine at 1-inch intervals. Rub with the remaining 2 tablespoons of oil and place on top of the red onions. Roast the pork for about 2 1/2 hours, basting occasionally with any pan juices, until an instant-read thermometer inserted in the center of the meat registers 160°. Transfer to a cutting board and let rest for 15 minutes.
- To serve, discard the strings. Cut the pork into 1-inch-thick slices and serve with the red onions.
ARMANDINO'S HERB-RUBBED PORCHETTA RECIPE - FOOD & WINE

- Preheat the oven to 350°. In a blender, combine the rosemary and lavender with 6 of the garlic cloves and 1/2 cup of the olive oil; puree until smooth.
- Season the tenderloin with salt and pepper. Make 4 evenly spaced 1-inch-deep slits in the tenderloin and insert the remaining 4 garlic cloves. Rub 2 tablespoons of the herb oil over the tenderloin.
- Place the pork belly skin side down on a work surface, season with salt and pepper and rub with the remaining herb oil. Place the pork tenderloin on top of the pork belly and roll the belly tightly around the tenderloin. Tie with kitchen twine at 1-inch intervals. Rub the remaining 2 tablespoons of olive oil all over the outside of the pork belly.
- Combine the carrots, onions, fennel pieces and Marsala in a large roasting pan. Top with the pork and roast for 2 1/2 to 3 hours, basting occasionally, until the skin is deeply golden and crispy and an instant-read thermometer inserted in the thickest part of the pork registers 150°. Transfer the pork to a cutting board and let rest for 20 minutes. Stir the fennel fronds into the vegetables. Using a serrated knife, slice the porchetta crosswise about 1 inch thick and serve with the vegetables.
