MARINATED FETA THREE WAYS
With just a few ingredients and some hands-off time, feta cheese can be transformed into a delicious appetizer to serve with crostini or as an accompaniment to grilled vegetables and meat. We came up with a trio of super versatile flavor combinations that are all made following the same method. By marinating the feta in glass jars, you'll be able to see the colors of the aromatics, for a beautiful and delicious gift too.

Steps:
- For each of the above combinations, place all ingredients except for the feta in a small saucepan and gently heat over medium low just until tiny bubbles begin to form, 4 to 6 minutes. Remove from the heat and allow to cool completely, about 1 hour.
- Once the infused olive oil is cool, transfer half of the aromatics from the saucepan to a 16-ounce Mason jar followed by half of the feta. Repeat layering and then carefully pour the infused olive oil into the jar. Gently press the feta down if needed to ensure it is fully submerged and seal the jar with its lid (see Cook's Note). Place the jar in the refrigerator and allow the feta to marinate for at least 12 hours and up to 5 days.
- Remove the jar from refrigerator at least 30 minutes before serving to allow the solidified olive oil to liquify.
MARINATED TOFU - (IN THE STYLE OF FETA CHEESE)
Perfect for topping a Greek-style salad, or a spinach and olive pizza! Leftover marinade makes a great base for a Greek-style salad dressing

Steps:
- Press the tofu between two plates, weighted down with some heavy cans or a cast iron pan, to drain the excess liquid out.
- Slice into 1/2 inch slices.
- Wisk together the ingredients for the marinade in a large container with a lid.
- Add the tofu to the marinade and refrigerate for at least 24 hours, preferably 2-3 days.
- Flip the container every few hours to ensure even coverage.
- Tofu pieces can be patted dry, and crumbled over your favorite Greek-style salad or pizza.

HERB-MARINATED TOFU FETA
This has the creaminess, tang and saltiness of good feta, making it just the right finishing touch for so many bean dishes, including - of course - tacos.

Steps:
- 1 Wrap the tofu in a tea towels and microwave on HIGH for 1 minute
- 2 Unwrap, rewrap with a fresh towel, and repeat
- 3 Unwrap, let cool, and cut into 1/2-inch cubes
- 4 (This gets rid of excess liquid, and is faster than pressing the tofu
- 5 )
- 6 While the tofu is cooling, in a medium bowl whisk together the lemon juice, vinegar, oil, miso, nutritional yeast, salt and pepper
- 7 Transfer the tofu to a tall jar and pour the marinade over it
- 8 Stuff in the lemon peel, rosemary, thyme and oregano, cover and refrigerate for at least 2 hours before using, turning the jar upside down and back a couple of times (to make sure the tofu gets coated)

Steps:
- Place the tofu cubes into a container that has an airtight lid.
- Add the remaining ingredients into a small mixing bowl and whisk until the miso is completely dissolved.
- Pour over the tofu.
- Seal the lid onto the container and shake to cover all of the tofu.
- Let marinate in the refrigerator overnight.
- Good for up to a week in the refrigerator.

- Press water out of tofu. Place tofu between two paper towels and put something heavy on top. Let it sit for at least 1 hour.
- Prepare marinade. Whisk together every ingredient in a bowl until nice and even.
- Cut tofu into small cubes and add to a jar or an air-tight container. Add marinade and mix well together. Place jar in fridge and let tofu marinade for at least 8 hours.
- After marinading keep the tofu covered with olive oil in the fridge in an air-tight jar to preserve it for 2-3 weeks.
