½ cup thickly sliced zucchini
½ cup sliced red bell pepper
½ cup sliced yellow bell pepper
½ cup sliced yellow squash
½ cup sliced red onion
16 large fresh button mushrooms
16 cherry tomatoes
½ cup olive oil
½ cup soy sauce
½ cup lemon juice
½ clove garlic, crushed

Steps:

  • Place the zucchini, red bell pepper, yellow bell pepper, squash, red onion, mushrooms, and tomatoes in a large bowl.
  • In a small bowl, mix together olive oil, soy sauce, lemon juice, and garlic. Pour over the vegetables. Cover bowl, and marinate in the refrigerator for 30 minutes.
  • Preheat grill for medium heat.
  • Lightly oil grate. Remove vegetables from marinade, and place on preheated grill. Cook for 12 to 15 minutes, or until tender.

Steps:

  • Mix olive oil, balsamic vinegar, Worcestershire sauce, soy sauce, Dijon mustard, and garlic in a small bowl. Season with salt and pepper.

Marinated Steak & Vegetables image

This is one of those do ahead (if you want) recipes that's easy, yet very tasty. I like making it on the bar-b-que in my Mesh Chef's Pan and serving over steamed rice. The filet is just a preference of mine, but I'm sure you can use just about any beef cut you prefer.

3 tablespoons balsamic vinegar
1 tablespoon soy sauce
2 tablespoons brown sugar, firmly packed
2 garlic cloves, minced
2 teaspoons fresh rosemary, chopped
1/4 cup extra virgin olive oil
2 red bell peppers, seeded and cut into 1/2-inch strips
1 large zucchini, cut on the diagional in 1/4-inch slices
2 lbs boneless filet mignon, cut into 1-inch strips
4 green onions, cut into 1-inch pieces
1 tablespoon sesame seeds
salt and pepper, to taste

Steps:

  • In large bowl, whisk together the vinegar, soy sauce, brown sugar, garlic, rosemary and olive oil until the brown sugar is disolved.
  • Add the beef, bell pepper and zuchinni and stir to coat evenly. (it is best to add the green peppers just before grilling) Cover the bowl and refrigerate for at least 1 hour or up to overnight.
  • Prepare a medium hot fire in a grill.
  • Set the Mesh Chef's Pan (which is what I use) on a cookie sheet or large bowl to catch any excess marinade.
  • Remove the beef and vegetables from the marinade and place in Mesh Chef's Pan.
  • Season with salt and pepper, and add the 1 T of sesame seeds and the green onions.
  • Close the pan lid and set the pan on the grill directly over the heat.
  • Cook, shaking the pan occasionally, until the peppers and zuchinni are tender and the beef is done to your liking, about 18 minutes for medium-well.
  • Transfer the beef and vegetables to a warmed platter or individual plates and serve immediately.
  • May be served over steamed rice, if desired.

1 pound broccoli rabe, trimmed
1 cup small cauliflower florets
8 ounces button mushrooms (cut in half if too large)
1 cup half-moon-sliced zucchini
1 cup half-moon-sliced yellow squash
1/2 cup roasted red pepper strips
1/2 cup marinated, quartered artichoke hearts
1/2 cup oil-cured black olives, pitted
1/4 cup red wine vinegar
2 tablespoons freshly squeezed lemon juice
1 tablespoon Dijon mustard
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 clove garlic, chopped
1/3 cup extra-virgin olive oil
1/2 cup canola oil
1 tablespoon thinly-sliced fresh basil leaves, plus whole leaves for garnish
1 lemon, cut into wedges, for garnish

Steps:

  • Make the Vegetables: Fill the stock pot with water and bring to a boil. Stir in the lemon juice and salt. Fill the pasta basket with the broccoli rabe, cauliflower, mushrooms, zucchini, and squash. Submerge in the boiling water and cook, covered for 2 minutes. Remove the basket and refresh the vegetables under cold running water.
  • Transfer the vegetables to a bowl and mix with the pepper strips, artichokes, and olives.
  • In a blender, combine the vinegar, lemon juice, mustard, salt, and pepper. Mix on medium until completely blended. While the motor is running, slowly pour in the oils in a steady stream to make a smooth dressing.
  • Pour the dressing over vegetables. Add the basil and toss well. Chill for at least 2 hours before serving. Arrange on a decorative platter garnished with fresh basil and lemon wedges.

1 teaspoon dried thyme, divided
2 large red bell peppers, cut into 1/2-inch strips
2 medium zucchini, thinly sliced
1 medium yellow onion, thinly sliced

1 skirt steak (about 1 1/4 pounds)
3/4 cup olive oil, plus more for grill

Steps:

  • Heat a grill or grill pan to high. In a large bowl or zip-top bag, combine lemon juice, 1/2 teaspoon thyme, bell peppers, zucchini, and onion; season with salt and pepper and marinate 15 minutes.
  • Season steak with salt, pepper, and remaining 1/2 teaspoon thyme. Clean and lightly oil hot grill. Cook steak, flipping once, about 12 minutes for medium. Transfer to a cutting board and tent with foil. Let rest 10 minutes before thinly slicing against the grain.
  • Lightly oil hot grill. Arrange vegetables on grill in an even layer, reserving marinade, and cook until browned and tender, 8 to 10 minutes. Whisk oil and mustard into marinade. Cover and refrigerate half the vegetables and half the dressing for Zesty Pork Sandwiches. Serve remaining vegetables and steak with remaining dressing.

1/3 cup sherry or additional broth
1 tablespoon water
1-1/2 teaspoons soy sauce

  • In a large skillet or wok, stir-fry steak in 2 teaspoons oil until no longer pink. Remove and keep warm. In the same pan, heat the remaining oil. ⅓ cup fresh lemon juice
¼ cup Worcestershire sauce
1 ½ tablespoons garlic powder
3 tablespoons dried basil
1 ½ tablespoons dried parsley flakes
1 teaspoon ground white pepper
¼ teaspoon hot pepper sauce
1 teaspoon dried minced garlic

Steps:

  • Place the soy sauce, olive oil, lemon juice, Worcestershire sauce, garlic powder, basil, parsley, and pepper in a blender. Add hot pepper sauce and garlic, if desired. Blend on high speed for 30 seconds until thoroughly mixed.

1-1/2 pounds beef top sirloin steak
2/3 cup white wine or beef broth
1/3 cup soy sauce
2 tablespoons vegetable oil

1 garlic clove, minced
1/2 teaspoon dried tarragon
18 small whole onions
3 to 4 small zucchini, cut in 1-inch slices

  • Cut beef in 1-1/4-in. cubes; place in large resealable plastic bag. In a bowl, combine the wine, soy sauce, oil, ginger, garlic and tarragon; pour 2/3 cup marinade over beef. 2 Tbsp. KRAFT Sweet Honey Barbecue Sauce
1/2 tsp. Sriracha sauce (hot chili sauce)
1 beef skirt steak (1 lb.), cut into 4 pieces
1 cup small cauliflower florets
1 onion, cut into thin wedges
1 small red pepper, cut into thin strips

Steps:
