5 roma tomatoes (washed and sliced thin or thick to your preference)
1 -2 garlic clove, minced (use fresh!)
1/4 cup extra virgin olive oil (or a little less)
1 teaspoon salt
1 teaspoon dried basil (not both!) or 1 teaspoon oregano (not both!)
1 lemon, juice of

Steps:

  • Mix all ingredients together and set on counter stirring occasionally.
  • The salt will bring out the juice of the tomatoes.
  • Taste and add more seasonings to your personal taste.
  • You can use fresh basil or oregano if preferred, just remember to chopped finely and use a little less than dried.
  • USES: Serve with almost any meal as a side.
  • On top of a green salad (no dressing necessary!).
  • Use as a topping for bruschetta--just chop tomatoes instead of slicing.
  • Use for caprese salad--add sliced buffalo mozzarella and you're done.
  • have some leftover juice: place some sliced chicken breasts and marinate over night, then carefully remove the chicken and quickly sauté them until done. Add remaining juice and tomatoes, boil for 1-2 minutes and then add cooked penne pasta, toss, and simmer for 5-6 minutes.
  • JUICE USES: **you can reuse the "marinade" with new tomatoes. Just add some more sliced tomatoes to the juice and let sit for about 20 minutes.
  • OR use the juice and marinate boneless chicken breast overnight in refrigerator, grill and serve or slice chicken and top a Caesar salad with it.

1/2 cup olive oil
1 tablespoon sugar
2 teaspoons chopped fresh parsley
2 teaspoons slivered fresh basil (chiffonade)
2 teaspoons red wine vinegar
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground thyme
2 green onions, sliced
1 cloves garlic, minced finely
2 pounds mixed tomatoes, different shapes and colors
1 head butter lettuce, leaves separated
Lots of fresh basil leaves, for garnish

Steps:

  • For the dressing: Mix the olive oil, sugar, parsley, basil, vinegar, salt, pepper, thyme, green onions and garlic in a large bowl.
  • For the tomatoes: Cut the tomatoes into slices, chunks, quarters or halves, depending on the size. Add the tomatoes to the dressing and marinate for 3 to 4 hours.
  • To serve: Lay out the butter lettuce leaves on a platter. Remove the tomatoes with a slotted spoon and spoon generously onto the lettuce. Drizzle over some of the dressing. Sprinkle over lots of whole basil leaves and basil stems with a few leaves on then.

1 Tables. dry oregano
1/4 teas. salt (oregano)
2 medium tomatoes
2-3 garlic cloves
1 medium sweet onion

Steps:

  • In a small bowl, mix vegetable oil, red wine vinegar, oregano and salt. Core and cube tomatoes, chop garlic cloves to fine/medium. Peel and thinly slice onion. Add to liquid, stir to cover all veggies. Chill for at least 30 minutes. Serve as is or over lettuce.

1/3 cup olive oil
1/4 cup red wine vinegar

1 tablespoon minced fresh basil or 1 teaspoon dried basil

  • Arrange tomatoes in a large shallow dish. Combine remaining ingredients in a jar; cover tightly and shake well. Pour over tomato slices. Cover and refrigerate for several hours.

Spiedies, grilled skewers of meat marinated in what amounts to Italian dressing, are a culinary mainstay of bars and roadhouses in and around Binghamton, N.Y. What follows is a recipe for the marinade used to prepare them for the fire. I have used fresh herbs, though dried ones are more traditional, and have upped the flavor slightly with the use of lemon zest. Once you've got the marinade made, simply cut the meat - chicken or beef, lamb or pork - into 1- or 2-inch cubes, and submerge it in the liquid for a couple of days (10 to 12 hours for chicken), covered, in the refrigerator. All that lemon and vinegar does some work on the meat, and the result, when grilled over charcoal for four or five minutes a side, is a fantastical taste of upstate New York, and a very simple and excellent dinner besides. (Here are instructions for cooking them.) Serve with torn mint and an additional drizzle of lemon juice and olive oil, on top of Italian bread or alongside rice.
