A beef stir-fry that has wonderful flavors without using a ton of spices. Fresh ginger mixes will with the soy sauce and makes a quick and easy sauce. Lots of veggies add color and crunch.

2 cups brown rice
4 cups water
2 tablespoons cornstarch
2 teaspoons white sugar
6 tablespoons soy sauce
¼ cup white wine
1 tablespoon minced fresh ginger
1 pound boneless beef round steak, cut into thin strips
1 tablespoon vegetable oil
3 cups broccoli florets
2 carrots, thinly sliced
1 (6 ounce) package frozen pea pods, thawed
2 tablespoons chopped onion
1 (8 ounce) can sliced water chestnuts, undrained
1 cup Chinese cabbage
2 large heads bok choy, chopped
1 tablespoon vegetable oil

Steps:

  • Bring brown rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until rice is tender, and liquid has been absorbed, 45 to 50 minutes.
  • Combine cornstarch, sugar, soy sauce, and wine in a small bowl until smooth. Stir in ginger; toss beef in sauce to coat.
  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Cook and stir broccoli, carrots, pea pods, and onion for 1 minute. Stir in water chestnuts, Chinese cabbage, and bok choy; cover and simmer until vegetables are tender, about 4 minutes. Remove from skillet and keep warm.
  • In same skillet, heat 1 tablespoon oil over medium-high heat. Cook and stir beef until desired degree of doneness, about 2 minutes per side for medium. Return vegetables to skillet; cook and stir until heated through, about 3 minutes. Serve over rice.

Our quick and easy beef stir-fry can be whipped up in one pan using just a handful of ingredients. This takeaway classic is perfect for a family midweek meal.

500g stir fry beef strips
2 tbsp balsamic vinegar
2 tbsp dark soy sauce
2 tbsp Worcestershire sauce
small bunch spring onions, sliced on the diagonal
200g roasted antipasto peppers in oil or vinegar, drained and sliced
boiled rice, to serve

Steps:

  • Put the beef in a medium non-metallic bowl and cover with the vinegar, soy and Worcestershire sauce. Leave to marinate for 20 mins, or if you have the time, overnight.
  • Heat a small dry wok until it's very hot. Tip in the beef, marinade and spring onions, stir fry for 2 mins. Add the roasted peppers, then stir fry for a further 2 mins. Divide the stir fry between shallow bowls and serve with some boiled rice.

Easy Classic Chinese Beef Stir Fry image

Steps:

  • Combine the cornstarch and 2 tbsp of water in a small bowl, mix until smooth.
  • Mix in remaining Sauce ingredients EXCEPT the 1/3 cup water.
  • Place the beef and 2 tbsp of Sauce in a bowl and mix gently. Set aside for 15 minutes.
  • Add 1/3 cup water into the remaining Sauce. Set aside.
  • Heat oil in wok over high heat. Add garlic and cook for 15 seconds.
  • Add onion and cook for 1 minute.
  • Add the beef and cook until it changes colour from red to light brown but not cooked through.
  • Add bell pepper and carrots and stir fry for 30 seconds.
  • Add Sauce and cook for 30 seconds.
  • Add pak choy and scallions/shallots and cook for a further 1 minute until the Sauce is thickened.
  • Remove from heat immediately.
  • Serve immediately with rice - or for a low carb, low cal option, try Cauliflower Rice! Garnish with sesame seeds and cilantro, if using.

I made this up using the marinade recipe from my Marinated and Crumbed Pork Schnitzel dish. I believe it is quite tasty :) You can make it with the vegetables I used, leave them out, or, use what you have on hand.

4 large beef schnitzel
1/4 cup soy sauce
1 lemon, juice of
2 garlic cloves (peeled & crushed)
1 small broccoli (sliced)
1/2 small cauliflower (sliced)
2 carrots (sliced)
1 onion (sliced)
2 tablespoons oil
2 spring onions (green onions I think in the USA, sliced)
2 teaspoons cornflour (cornstarch)

Steps:

  • Slice meat across the grain into strips and place in a glass dish.
  • Mix together the soy sauce, lemon juice and garlic and pour over the meat mixing well.
  • Leave to marinate for approx 2hours to get the best flavour or longer if you wish.
  • Meanwhile steam the brocolli, cauliflower & carrots or cook til just crisp tender in a microwave.
  • When ready to cook, drain meat reserving the marinade.
  • Heat oil in a large pan or wok until very hot.
  • Add beef strips and cook quickly to seal. You may need to do this in 2 batches.
  • Add the onion & cook, stirring til lightly browned.
  • Add in the drained vegetables and toss to mix.
  • Mix the cornflour with a little cold water and then add in the reserved marinade and more water to make 1 cup liquid.
  • Add the liquid to the pan and stir til thickened and heated through.
  • Serve over steamed rice and top with sliced spring onions.

How to tenderise beef (velveting beef) image

Chinese restaurants tenderise economical cuts of beef so they are tender and juicy in stir fries. It's also done for chicken. There's a few methods - this baking soda way is the easiest, fastest and highly effective. Though I'm sharing this with beef stir fries in mind, don't just limit yourself to Asian food. This beef can be used for any recipe calling for strips of beef to be cooked quickly, like Beef Stroganoff. Do not use this method for whole steaks (read Note 4).

3/4 tsp baking soda / bi-carbonate soda ((Note 2))

Steps:

  • Slice beef thinly against the grain. (Note 3)
  • Place in a bowl. Sprinkle over baking soda, toss with fingers to coat evenly.
  • Refrigerate for 30 to 40 minutes. (See Note 1 for different cuts)
  • Rinse beef well with tap water. Shake off excess water, then use paper towels to blot away excess water (doesn't need to be 100% dry).

A really easy stir fry, satisfies that taste for Asian cooking at home. For a really fast meal you can make this with frozen vegetables. It's just a good with pork or chicken. The method can be used for any combination that you desire. Add nuts, seafood, lamb, mushrooms, water chestnuts, whatever you like! -- You can use portabella mushrooms or tofu in place of the meat for a vegetarian treat. A great opportunity to clean out the veggie drawer :-).

1/2 cup soy sauce
2 tablespoons honey
6 garlic cloves (minced or crushed ) or 1 tablespoon garlic powder
2 tablespoons sesame oil
2 tablespoons peanut oil or 2 tablespoons safflower oil
1/2-1 lb top round steak, cut about 3/16-inch thick across the bias (or similar lean cut, sirloin, flank, chicken breast, thighs, boneless pork chops, tofu, shrimp, port)
1 1/2 cups snow peas
1 cup carrot, cut up about the size of the snow peas
1/2 cup onion, cut up about the size of the snow peas
1 teaspoon sesame oil
1/4 cup water, for veggies
2 teaspoons cornstarch, mixed in water
1/4 cup cold water

Steps:

  • Combine liquid marinade ingredients in a 2 cup heat proof measure, heat in the microwave (or in a pan of hot water) just enough to thin the honey, stir to combine, add spices, stir.
  • Allow to cool.
  • Meanwhile trim all fat from beef, slice up meat, place meat and marinade in a 1 gallon ziploc bag, remove all air from bag and refrigerate for 4 to 48 hours.
  • Remove meat from marinade, drain in colander, reserve strained marinade!
  • In a wok or large skillet over medium/high with teaspoon of sesame oil (just enough to coat pan when wiped with a paper towel) cook meat until lightly browned, stirring constantly.
  • Pull meat from center of pan and add chopped vegetables and 1/4 cup of water.
  • Cover and bring to a simmer.
  • Cook until veggies are tender, about 5 minutes or until desired tenderness is reached, be sure to stir every few minutes after the first 5.
  • Remove meat/veggie mixture, pour reserved marinade into pan, bring to a boil.
  • Allow to boil for a minute or two to kill any bacteria that was present from the marination process.
  • While stirring constantly, slowly pour cornstarch mixture into heated marinade until desired thickness is reached it may not take all the cornstarch.
  • Just GO SLOW as once the thickening process starts it happens almost instantly.
  • Add meat/veggies back into the sauce, toss to mix and coat, pour onto a serving platter.
  • Serve with white rice.

TERIYAKI BEEF STIR-FRY OR MARINADE

Yet another recipe from Chatelaine, but this was originally in the magazine as a salad. The salad didn't appeal to me, but I used it as a base for a great stirfry and used the dressing as a marinade. I then added some things here and there to give it a unique flavor. Cooking time does not include marinating in fridge.

1/2 cup orange juice
4 -6 tablespoons teriyaki sauce (I use 4 TB as I find teriyaki sauce a bit salty for our taste)
1 tablespoon vegetable oil or 1 tablespoon olive oil
2 teaspoons dark sesame oil
2 teaspoons granulated sugar
1 teaspoon Tabasco sauce (I use more) or 1 teaspoon bottled hot sauce, to taste (I use more)
2 teaspoons bottled chopped ginger (I use more) or 1 teaspoon freshly grated ginger, to taste (I use more)
2 teaspoons bottled chopped garlic or 2 garlic cloves, minced, to taste
1/4 teaspoon salt, to taste
1 lb top sirloin steak, cut into one inch strips
1 teaspoon sesame oil
2 tablespoons sesame seeds
1 tablespoon minced garlic
1 tablespoon minced ginger
1 medium Spanish onions or 1 medium purple onion, sliced
1 large green pepper, cut into strips

Steps:

  • Mix all ingredients together for the marinade.
  • Cut the beef into one inch strips and add to the marinade.
  • Put in a plastic container or Ziploc bag in refrigerator for 3 to 4 hours, stirring/shaking often.
  • To make stirfry, heat sesame oil in a non-stick skillet or wok skillet.
  • Add the sesame seeds, garlic and ginger and mix together until seeds are slightly toasted and flavors blended.
  • Add sliced Spanish onion, green peppers, 1/4 cup of marinade, mix well and stirfry until onions are slightly translucent.
  • Add the beef, mixing well to blend all the flavors and ingredients.
  • If you want, you can add some more of the marinade with the beef.
  • Stir fry about 5- 7 minutes on medium heat for medium rare or longer for your tastes.
  • It went great with a bottle of Cabernet Shiraz Merlot red wine.
  • Note: I reduced the measurement for the teriyaki sauce because it was a tad salty when I originally made it.
  • If you don't mind the salty flavor, you can add more for your taste.

1 tablespoon low-sodium soy sauce
½ teaspoon ground black pepper

3 cups chopped mixed vegetables of choice (such as broccoli, snap peas, or carrots)
1 8-ounce can sliced water chestnuts (drained)
3 medium green onions (finely chopped; divided)
1 tablespoon sesame seeds (optional)
Prepared brown rice (quinoa, noodles, or cauliflower rice - for serving)
1/3 cup low-sodium soy sauce
¼ cup water
3 tablespoons pure maple syrup
1 tablespoon rice vinegar
1 tablespoon minced garlic

1/4 teaspoon red pepper flakes (plus additional to taste)
1 tablespoon cornstarch

Steps:

  • Place the beef in a bowl and top with 1 tablespoon soy sauce and black pepper. Stir to coat then set aside to marinade while you prepare the rest of the ingredients.
  • Prepare the sauce: In a medium mixing bowl or large measuring cup, stir together the soy sauce, water, maple syrup, rice vinegar, garlic, ginger, red pepper flakes, and cornstarch. Set aside.
  • Continue with the stir fry: In a large, deep sauté pan or wok, heat 1/2 tablespoon oil over medium-high heat. Once the oil is hot but not smoking, add the beef. Cook until the beef is browned on all sides and fully cooked through, about 4 minutes. Remove the beef and any juices that have collected in the skillet to a plate and set aside.
  • Heat the remaining 1/2 tablespoon oil. Add the bell pepper and other vegetables. Cook for 4 minutes, or until slightly softened and lightly browned.
  • When the vegetables are ready, add the water chestnuts and return the beef and juices to the pan. Pour in the sauce and toss to coat. Let simmer 3 to 4 minutes to thicken and warm the beef through. Stir in about half of the green onions. Sprinkle the sesame seeds and remaining green onions over the top. Found in quite possibly every Chinese restaurant, this savory dish is at its best when the beef is sliced against the grain and allowed to sit in the marinate. And the icing on the cake? It uses the simplest of ingredients found in any kitchen, such as ginger, soy sauce, and oyster sauce.

250 g beef tenderloin
180 g broccoli florets
water for boiling+ a few drops of oil
2½ tbsp oil
5 cm ginger (peeled & sliced)
6-8 pcs sliced carrot
beef marinade: ½ tbsp soy sauce
1 tsp rice wine
½ tsp sesame oil
¼ tsp pepper
1 tbsp cornstarch
sauce: 1 tbsp soy sauce
1 tbsp oyster sauce
¼ tsp sesame oil
½ tsp sugar
1 tsp cornstarch
4 tbsp water

Steps:

  • Cut and marinade the beef. Cut the beef into slices. Marinate the beef with all the ingredients from the beef marinade for about 15 mins.
  • Blanch the broccoli and carrot. Bring a pot of water to boil and add a few drops of oil. Blanch the broccoliflorets and carrot in the hot water about 10 seconds. Remove the broccoli and carrot immediately with a slotted spoon or strainer, draining the excess water. Set aside.
  • Stir fry the beef. Heat 1 tbsp oil in a skillet over high heat. Stir fry the beef until 70% cooked Dish out and set aside
  • Stir fry broccoli and beef. Heat the remaining oil in a skillet over high heat Add the ginger and stir fry until aromatic Transfer the beef into the pan and stir-fry for 1 minute Add the broccoli and carrot and then the sauce Stir to combine the ingredients well

My mom is Chinese, and often catered for special events. Everyone always asked for the recipe for the sauce that she marinated her meats in. It is savory and delicious, and I've never tasted anything like it anywhere else! Whether you're baking, grilling, or pan-frying your meats, this can't be beat! I make several jars of this stuff at Christmas to give away as gifts. Everyone loves it! You can use this sauce either as a marinade or in stir-fry.

1 cup oyster sauce (I prefer the Lee Kum Chee brand. You can buy it at oriental markets in bulk)
1 cup dark soy sauce
1/4 cup sesame oil
1/4 cup cooking sherry
1/4 cup teriyaki sauce
1/4 cup pancake syrup (though this might seem bizarre, it's the most important ingredient. It caramelizes as it cooks, seal)
3 tablespoons of minced garlic (less if you're not a huge garlic fan)

Steps:

  • Mix all ingredients and store in a large jar or Tupperware container. Store in refrigerator for up to three months. Mix well before using. Use on pork, chicken, beef, or as a stir-fry sauce.
  • When I use it on chicken, I add a little orange juice. For beef, I add a little Worcestershire sauce. For pork, I add a little brown sugar.
  • For best results, marinate your meats in the sauce overnight in a large zip-lock bag.

10.5 oz Beef steak (( ribeye, rump, sirloin or tenderloin ) ( about 300 gram ))
2 cloves Garlic (( chopped ) about 1 tablespoon)
5 slices Ginger (( cut in thin matchstick sizes ))
½ Bell pepper
½ Onion (( large sweet/white onion ))
3 Spring onion (( cut into 2" pieces ))
1 Fresh chilli (( cut thin slices ))
3 tbsp vegetable oil
1 tsp Corn starch
1 tsp Sesame oil
1 tsp Sugar
¼ tsp Baking soda
1 tsp Light soy sauce
2 tbsp Oyster sauce
1 tbsp Light soy sauce
1 tbsp Vinegar (( Rice vinegar or regular white vinegar ))
1 tsp Sugar
1 tsp Corn starch
¼ tsp White pepper

Steps:

  • Prepare all the vegetables buy cut them into thin slices and cut the beef steak into thin slices. Cut the beef against the grain to achieve the tender result. Marinade the beef slices with corn starch, sesame oil, sugar, baking soda and light soy sauce. Mix it well with hand and set aside for at least 10 to 15 minutes.
  • In a small mixing bowl add the oyster sauce, light soy, sesame oil, sugar, corn starch, white pepper and rice vinegar. Mix well until sugar and con starch dissolve in the sauce and set aside.
  • Heat the large wok/pan over medium-high heat, drizzle 2 tablespoons of vegetable oil and sear the beef for 2-3 minutes and stir through and cook for another 1-2 minutes.
  • Push the beef one side of the pan, drizzle 1 tablespoon of oil and add the onion, ginger, garlic and stir fry for few seconds.
  • Follow with the pepper slices and continue cook for another 1-2 minutes. Pour the sauce mixture in.
  • Add the spring onions and toss well to combine all ingredients and sauce evenly.
  • Remove from heat and transfer to serving plate. Garnish with fresh ginger shredded or chopped spring onions.
  • Serve over hot steamed rice, fried rice or noodles.

3 tablespoons soy sauce
1 tablespoon Sherry
1 tablespoon brown sugar
1 tablespoon oriental sesame oil
3 large garlic cloves, minced
1 2-inch piece fresh ginger, peeled, minced
2 cups broccoli florets
1 tablespoon peanut or other vegetable oil
2 cups Chinese pea pods, trimmed
6 green onions, cut into 1-inch-long pieces
1/2 red bell pepper, sliced
1 teaspoon cornstarch

Steps:

  • Combine first 7 ingredients and refrigerate 4 hours or overnight.
  • Cook broccoli in small pot of boiling salted water until almost crisp-tender, about 2 minutes; drain. Rinse under cold water to cool.
  • Heat oil in wok or heavy large skillet over high heat. Using slotted spoon, transfer beef to wok, reserving marinade. Stir-fry beef until just no longer pink, about 2 minutes. Remove beef from wok. Add broccoli, pea pods, green onions and red bell pepper. Continue stir-frying until vegetables are just crisp-tender, about 3 minutes. Stir cornstarch into reserved marinade. Pour marinade over vegetables in wok. Add beef and stir-fry until liquid boils and thickens, about 1 minute.
