How to make the best, authentic Italian Marinara Sauce recipe from scratch, with organic San Marzano tomatoes, garlic and fresh basil.

2 X 28 oz cans San Marzano Tomatoes
1/2 yellow onion (-diced)
8 cloves garlic (-minced)
1 leaf bay
4 sprigs basil
1/3 c fresh basil leaves (- sliced or torn)
4 tbsp extra virgin olive oil
1 pinch sea salt (( or to your taste))

Steps:

  • Heat a heavy bottom large pot on medium low flame. Add a lug of olive oil and the diced onion with a pinch of sea salt. Cook for about 10 minutes until traslucent taking good care not to burn it.
  • Stir in the minced garlic and let it infuse the oil for about 30 seconds.
  • Use your hands and crush the tomatoes as you add them to the pot with the onion and garlic. Rustic chunks are what we are after.
  • Add the bay leaf and the 4 sprigs of basil then bring everything to a gentle simmer. Partially cover with a lid and cook down until reduced and thick to your liking. About an hour or so. Stir a few times making sure the sugars from the tomatoes don't stick to the bottom.
  • After the sauce has reduced season to taste with the sea salt. Discard the bay leaf and basil sprigs.
  • Finish with a drizzle of extra virgin olive oil and the reserved fresh basil. Serve with your favorite pasta to transfer to jars and refrigerate up to one week.

  • In a large casserole pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Steps:

  • Place the olive oil in a large pan over medium heat.

  • Add the tomatoes and all their juices from the can, oregano, red pepper flakes, salt, pepper, fresh basil and 1/4 cup water.

1 kilo fresh ripe tomatoes, peeled and grated or 1 can (500 grams) whole tomatoes with juice
1 pummaro condensed tomato juice (500 grams)
1 tbsp tomato paste
About 1/2 cup fresh broad leaf basil
1 sprig fresh oregano, only the leaves (optional)
1 tsp dried oregano
1 tsp dried thyme
½ tsp salt
Freshly ground black pepper
1 tsp boukovo (sweet pepper flakes) (optional)
1 inch cinnamon stick (optional)
2 grated carrots (or 1 tbsp honey or sugar (optional), depending on the tartness of the tomatoes)

Steps:

  • Wash and make an X section below each tomato and remove the green stalk, if any.
  • Heat a large pot with water and blanch the tomatoes in for 1 minute. Cool under running water and then peel each tomato and remove the green and hard core.
  • In a food processor add the tomatoes, basil leaves and carrot and puree.
  • In another saucepan heat the olive oil and sauté the onion until translucent. Add the garlic and mix for a few seconds.
  • Add the tomatoes, tomato juice and tomato paste.
  • Add salt, pepper, pepper flakes as well as fresh or dried herbs and simmer, stirring regularly until the sauce is reduced.
  • Serve with pasta, meatballs, on pizza etc.

Steps:

  • Cut onion and carrot into chunks. Trim tops from fennel, then cut fennel in half lengthwise, cut out dense core in a V, and cut bulb into chunks. Pulse vegetables and half the garlic cloves in a food processor until finely chopped, but don't pulse so much that you create a puree. Chop remaining garlic by hand and set aside.
  • Heat a large frying pan over medium-high. Add 2 tablespoons olive oil, and when it's hot, add vegetables from food processor. Season with 1 teaspoon salt. Cook, stirring frequently, until vegetables are soft and fragrant but not browned, about 10 minutes.
  • Add reserved chopped garlic to vegetables and cook until softened but not browned, another 2 minutes. To create deeper flavor, ''toast'' the tomato paste: Scoot the vegetables to one side of the pan, drop in the tomato paste, and cook it while scraping and stirring until it has browned slightly, about 5 minutes.
  • Stir in both types of tomato and the 1/4 cup olive oil. Then stir in 1 teaspoon sugar, 1/2 teaspoon red pepper flakes, and the rosemary sprigs. Stack basil leaves, roll, cut crosswise into shreds, and add them to sauce.
  • Adjust heat so sauce bubbles gently. Cover pan and cook sauce 45 minutes, stirring occasionally.
  • Remove lid and continue to simmer until sauce reduces and thickens slightly, another 30 minutes, stirring frequently and scraping around sides of the pan.
  • Taste sauce and add more salt or red pepper flakes; or if sauce still seems acidic, add a pinch of sugar. Remove rosemary sprigs and discard, but don't worry about rosemary needles that will have fallen off. They are soft and tasty now!
  • Serve marinara with any pasta shape, soft polenta, or meatballs; or use as a pizza topping. Store in refrigerator up to 5 days, or freeze up to 2 months.

1 tablespoon extra virgin olive oil, good quality and organic if possible
3 cloves fresh garlic, minced
4 -5 large tomatoes, fresh frozen, skinned and chopped up (keep the juice!)
3 tablespoons heavy cream
1/4 cup chopped fresh basil (use a variety of flavored basils, especially lemon if you have it)
1/2 cup chopped roasted red pepper (optional)
1 pinch sugar, to taste
salt & freshly ground black pepper, to taste
cooked pasta, of your choice (8 to 10 servings worth)
grated parmesan cheese, for garnish
fresh basil leaf, for garnish

Steps:

  • Fresh frozen tomatoes: pick juicy tomatoes, make sure they are clean and dry, then pop them in a Ziploc bag, single layer; label your bag with date and put flat into freezer; when ready to use, just take out as many as you need and run them under hot water (or put then in a bowl of hot water) and after a minute or two the skins will peel right off, then just chop and use; use these instead of canned tomatoes.
  • In a hot sauce pan or small wok, put in olive oil and fresh garlic; stir and sauté for 1 to 2 minutes.
  • Add the tomatoes together with their juice and let simmer for 10 minutes.
  • Stir in the cream, basil, salt and pepper, and roasted peppers (if using), and bring to a simmer them it through.
  • Serve over cooked pasta, garnish with parmesan cheese and fresh basil leaves.
  • Also good over baked halibut, grilled shrimp, chicken, or grilled vegetables.

  • Reduce the heat to low, add the tomatoes, and simmer, partially covered, for 20 minutes, stirring occasionally. Add the basil, oregano, and anchovy paste. Stir the sauce and taste for seasoning, adding salt as needed. If the sauce is too acidic, add the sugar. (It will help round out the flavor of the sauce.) Stir and simmer the sauce for 1 to 2 minutes. For a thicker sauce, cook for an additional 10 minutes.
