BEEF STEAK MARINADE

Recipe video above. This is a marinade to transform good value steaks by making them juicier, more tender and adding a hint of flavour while not overpowering the flavour of the beef. With this marinade, you won't need a sauce for the beef, though I can never resist some garlic butter!

2 steaks (, economical (Note 1))
1 tsp Dijon mustard
1/2 tsp minced garlic ((1 large garlic clove))
1/2 tsp onion powder ((or sub with garlic powder))
1 tbsp soy sauce ((Note 2))
1 tbsp oil ((I use olive oil, but any oil is fine))
1 tbsp Worcestershire sauce
1 tbsp balsamic vinegar
Black pepper

Steps:

  • Mix together mustard, garlic and onion powder. Then mix in remaining ingredients.
  • Place beef in a ziplock bag with Marinade and marinade overnight (12 - 24 hours).
  • Remove from the fridge 30 minutes before cooking to bring to room temperature - key for even cooking of steaks. Shake off excess marinade.
  • Brush BBQ Grills with oil, then heat on high heat until is really hot - you should see wisps of smoke. Or heat a heavy based skillet on high until very hot, then add oil - it will heat almost instantly.
  • Add steaks. For 2cm / 3/4" thick steaks, cook the first side for 2 minutes, then turn and cook the other side for 2 minutes (medium rare 52°C/125°F, chart below for other doneness temps). (Note 3)
  • Remove from skillet onto a WARM plate, cover loosely with foil and set aside for 5 minutes.
  • Serve! I couldn't resist garlic butter - see recipe in notes.

½ cup olive oil
⅓ cup fresh lemon juice
¼ cup Worcestershire sauce
1 ½ tablespoons garlic powder
3 tablespoons dried basil

¼ teaspoon hot pepper sauce
1 teaspoon dried minced garlic

Steps:

  • Place the soy sauce, olive oil, lemon juice, Worcestershire sauce, garlic powder, basil, parsley, and pepper in a blender. Add hot pepper sauce and garlic, if desired. Blend on high speed for 30 seconds until thoroughly mixed.
  • Pour marinade over desired type of meat. Cover, and refrigerate for up to 8 hours. Cook meat as desired.

1 tbsp (heaping) brown sugar
1/2 cup extra virgin olive oil
1/3 cup fresh lemon juice
1/4 cup Worcestershire sauce
1 1/2 tablespoons garlic powder
3 tablespoons dried basil
1 1/2 tablespoons dried parsley flakes
1 teaspoon ground pepper
1/4 teaspoon hot pepper sauce (optional)
1 teaspoon fresh minced garlic

Steps:

  • Place meat into a large ziptop bag. Using a bowl, pour in all of the ingredients and whisk until thoroughly mixed. If you have a blender at home, feel free to blend the marinade ingredients together. Otherwise, a whisk works fine too!
  • Pour the marinade into a ziptop bag, directly over the meat. Cover, and refrigerate for at least 1 hour and up to 4 hours. The longer you allow the meat to marinate, the better, but because of the acid (lemon juice) in the marinade, do not marinate longer than 4 hours.

  • In a small bowl, whisk together soy sauce, lemon juice, olive oil, Worcestershire sauce, minced garlic, Italian seasoning, pepper, salt, and a pinch of red pepper. Add steaks to a resealable zip lock bag or large bowl and pour the marinade on top. Marinate for 2 hours or overnight.

  • Start your marinade with oil. Your marinade should be at least 1/2 oil. The oil helps emulsify the marinade into a thick sauce that coats the meat. It's also a flavor-carrier.
  • Add acid, but not too much. Acid helps tenderize tough connective tissues—which my favorite steaks have plenty of—but too much acid will actually cook and toughen the meat, turning it weird and chalky.
  • Mix In Some Flavorings. The flavoring elements are simply that—flavor for the surface of your steak. So have fun and add whatever you think tastes good.
  • Get Sweet and Salty. To balance out the flavor, just as you would a salad dressing, you need to also add something sweet and something salty to your marinade.
  • Marinate for at least one hour, and up to 12. Pour your marinade over your steak and toss to coat. You want to have as much meat surface as possible in contact with the marinade, and the easiest way to do this is in a resealable plastic bag, where you can seal it up tight so the marinade is encircling the meat entirely.
  • Pat it down, then grill. When your grill is ready for cooking, remove the steak from the marinade and give it a good pat down with paper towels. Make sure no bulky flavorings like slices of jalapeño are stuck to the meat—they'll just burn on the grill.
  • Don't forget to rest, and slice against the grain. Give your grilled steak five minutes to rest—you don't need longer for thin cuts like these—and then slice it against the grain and serve.
