You can use this recipe as a base for making all types of middle eastern stews. The basic technique is to fry the meat in spices (this is an important step that many people skip as it seals the flavor of the spices), fry vegetables and onions in a seperate pan. Number Of Ingredients 10

1 large onion, finely chopped
1/2-1 teaspoon minced garlic (optional)
juice of one lemons or 2 dried limes
1 -2 tablespoon tomato paste
3 large tomatoes (or 6 small tomatoes, diced, original poster prefers Italian plum tomatoes)
1 lb okra (Original poster uses 16 oz frozen packages you find in grocery stores. The best okra to use is the s)
1 lb of stewing goat meat or 1 lb lamb
2 teaspoons khaliji mixed spice (Gulf Spices (Ibzar))
salt and pepper, to taste
oil (for frying)

Steps:

  • Rub meat with ibzaar mixture.
  • Heat oil in a medium sized saucepan or pot. Add meat with spices. Add some salt to meat. Fry until brown.
  • Heat oil in seperate sautee/frying pan. Add tomatoes, onions, okra and garlic. Fry until onions are soft and slightly golden and until okra starts to slightly change color. It is best to add the garlic at the end of the frying process as garlic burns easily.
  • Add above mixture to meat.
  • Add water (make sure that meat is completely covered by at least 1 inch).
  • Add tomato paste, lemon (or dried limes) and salt to taste.
  • Bring to boil. Cover pot and reduce heat to medium for around 45 min and then low for maybe 10 to 15 minute
  • Serve with Basmati rice.

This is a family favorite. It could be made with either meat, chicken fillet or whole disjointed chicken pieces. It's best to use baby okra, they don't go slimy in a hurry.

1/2 kg okra
1/2 kg of cubed lamb, cubed chicken fillets or 1/2 kg chicken piece
1/4 cup oil
2 big onions
2 cups of fresh blended tomatoes
1 teaspoon tomato paste
1 teaspoon salt
1/4 teaspoon cracked black pepper
1 teaspoon cumin
1 teaspoon ground coriander powder
1 teaspoon crushed garlic
2 cups hot water
1/4 cup coriander leaves, chopped (cilantro)
1 lemon, juice of

Steps:

  • Wash okra and chop off stems.
  • Cut onions into fine pieces.
  • Sauté onions in oil till golden on medium.
  • Add garlic and stir for a few seconds.
  • Add spices stir for a few seconds add meat cook till water from meat drys on medium heat.
  • Stir at intervals.
  • Add tomato paste stir for a few seconds add blended tomatoes and water to meat, cook until meat is done.
  • Add okra to meat and simmer on medium low for 13 minutes.
  • Add the chopped coriander and lemon juice, simmer another 3 minutes.
  • Serve hot with basmati white rice.

MIDDLE EASTERN LAMB AND OKRA STEW (BAMIA STEW)

'Bamia' in Arabic means 'Okra'. This is an old Middle-Eastern recipe very popular throughout, served with rice.

600 g baby okra
400 g boneless lamb, cut into small chunks
4 -5 tablespoons oil or 4 -5 tablespoons butter
2 onions, chopped
700 g tomatoes, seeded and chopped
2 -3 garlic cloves, crushed
1 teaspoon cumin powder
1 teaspoon coriander powder
125 ml lemon juice
salt
1 bunch fresh coriander, roughly chopped

Steps:

  • Trim the baby okras and wash in cold water and then place in a colander to drain.
  • In a large saucepan, heat the oil or butter and add in the meat and brown on all side.
  • Add the crushed garlic and chopped onions to the meat and saute till brown.
  • Add in the chopped tomatoes, stirring in till the tomatoes are all broken down and soft, for about 10-15 minutes.
  • Add in all the spices and salt and give it a good mix.
  • Add enough water to cover the meat (about 7-8 cups) and stir to combine well.
  • Add in the trimmed okras and bring to boil.
  • Cover the pan with a lid and reduce the heat to low and simmer for 2 hours, until the meat is tender (the sauce will thicken as it cooks).
  • Lastly, pour in the lemon juice and add in the chopped coriander and carefully stir once or twice (careful not to mash the okras) and gently simmer for another 5 minutes.
  • Remove from heat and serve with rice.

2 lbs beef or 2 lbs lamb, cut into 1-inch cubes
2 onions, finely chopped
2 garlic cloves, finely minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1 cup tomatoes, peeled seeded and chopped
3 tablespoons tomato paste
1 cup beef stock (or more) or 1 cup water, as needed (or more)
2 tablespoons of fresh mint, chopped
salt & freshly ground black pepper
1 1/2 lbs okra
1 lemon, juice of

Steps:

  • Okra must be cooked so that its slimy texture is eliminated. The Greeks have the best technique for achieving this. Trim the conical tops with a sharp knife then soak the okra in red wine vinegar (Khall) for 30 minutes allowing 1/2 cup of vinegar per pound. Drain, rinse and dry the okra and proceed with the recipe. This dish is popular throughout the Middle East and can be prepared with lamb or beef. Serve with rice.
  • Preheat an oven to 325F/165°C In a large frying pan over medium-high heat, warm 1 Tbsp butter or oil per serving. Working in batches, add the meat and fry, turning, until browned on all sides - about 10 minutes. Using a slotted spoon transfer to a baking dish or stew pot. Add the onions to the fat remaining in the frying pan and saute over medium heat until tender and translucent - 8-10 minutes. Add the garlic, cumin, coriander, tomatoes, tomato paste, stock and mint. Stir well. Pour over the meat and season to taste with salt and pepper. Cover and bake until all the liquid is absorbed - about 1.5 hours. Taste and adjust the seasoning.
  • Meanwhile prepare the okra as directed in the note above. In a saute pan over medium heat warm 1/2 Tbsp butter or oil. Add the okra and saute for 3 minutes, stirring gently. Remove the stew from the oven and arrange the okra on top in a spoked pattern. Sprinkle the lemon juice evenly over the surface. Recover the dish and return it to the oven. Bake for 35 minutes longer. Add stock or water if the mixture seems too dry. Serve the Bamia stew piping hot.
