MAPLE GLAZED WALNUTS

- Preheat a dry skillet over a medium-high heat. Add the walnuts, maple syrup and salt. Cook, stirring frequently, until syrup is caramelized and nuts are toasted, about 3 minutes. Let cool.

- Preheat oven to 375 degrees. Melt butter in large skillet over medium heat. Stir in maple syrup, vanilla, cinnamon, and 3/4 teaspoon salt. Bring to a simmer (mixture should be frothy), about 3 minutes. Add walnuts, and toss to coat using a rubber spatula. Cook, stirring, until sauce is syrupy and bubbly, about 3 minutes.
- Transfer walnut mixture to a parchment-lined baking sheet, and spread into a single layer. Bake until walnuts are caramelized, about 10 minutes. Transfer sheet to a wire rack. Stir, and let stand until cool and hardened, about 30 minutes.
MAPLE-NUT COFFEE TWIST
This recipe is from Pillsbury Family Kitchens Cookbook. This is really delicous and makes a nice presentation. The dough is really easy to work with. I did need to add a couple more Tbsps of flour to the dough. This calls for a 12-inch pizza pan, but I'm sure a large cookie sheet would work just fine. :)

Steps:
- In a small saucepan, heat milk and margarine until very warm (120*-130*F).
- In large bowl, blend warm liquid, 1 cup flour, sugar, salt, yeast, extract and egg at low speed until moistened.
- Beat 2 minutes at medium speed.
- By hand, stir in remaining flour to form a soft dough.
- Knead on floured surface until smooth and elastic, about 2 minutes.
- Place dough in greased bowl; turn greased-side-up.
- Cover; let rise in warm place until light and doubled in size, 45 to 60 minutes.
- In small bowl, combine filling ingredients, set aside.
- Grease (not oil) 12-inch pizza pan.
- Punch down dough; divide and shape into 3 balls.
- On floured surface, roll or press 1 ball of dough to cover bottom of prepared pizza pan.
- Place in prepared pizza pan.
- Brush dough with about 1/3 of melted margarine; sprinkle with 1/3 Filling.
- Repeat layer of dough, melted margarine and Filling.
- To shape place a glass about 2 inches in diameter in center of dough, (a shot glass works perfectly)
- With pizza cutter, cut from outside edge to the glass, forming 16 pie-shaped wedges.
- Twist each wedge 5 times. Remove glass.
- Cover; let rise until light and doubled in size, 30 to 45 minutes.
- Heat oven to 375*F.
- Bake 18 to 22 minutes or until golden brown.
- Cool 5 minutes; remove from pan.
- In small bowl, blend Glaze ingredients until smooth. Drizzle over warm coffee cake.

- In a large bowl, dissolve yeast in warm milk. Add the butter, sugar, egg, maple flavoring, salt and 1-1/2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Meanwhile, in a small bowl, combine the sugar, walnuts, cinnamon and maple flavoring; set aside. , Punch dough down. Turn onto a lightly floured surface; divide into thirds. Roll each portion into a 12-in. circle; place 1 circle on a greased baking sheet or 12-in. baking pan. Spread with a third of the butter; sprinkle with a third of the filling. Repeat layers twice. Pinch edges of dough to seal., Carefully place a glass in center of circle. With scissors, cut from outside edge just to the glass, forming 16 wedges. Remove glass; twist each wedge 5 or 6 times. Pinch ends to seal and tuck under. Cover and let rise until doubled, about 30 minutes., Bake at 375° until golden brown, 18-20 minutes. In a small bowl, combine glaze ingredients; set aside. Carefully remove coffee cake from pan by running a metal spatula under it to loosen; transfer to a wire rack. Drizzle with glaze.

- In the bowl of a stand mixer, dissolve the yeast in warm water. Allow the yeast to actiivate by letting it sit for 3-5 minutes. The yeast should get frothy. Add the warm milk and butter. Add in the egg, maple flavoring, salt and sugar. Mix well. Mix in the flour. Using the dough hook attachment, beat the dough on medium speed for 3-5 minutes. The dough will be sticky. Cover the dough with plastic wrap and let it rise in a warm place for 35 minutes or until almost double.
- Divide the dough into two equal parts. On a lightly floured surface, roll out one part of the dough into a circle that is about 14-16 inches in diameter. Put the circle in a round pizza pan that has been sprayed with cooking spray.
- In a small bowl, mix together the ingredients for the filling. Spread the filling onto the rolled out dough.
- Roll out the second dough piece into a circle the same size as the first. Place this circle on top of the filling. Use a pizza cutter to make slices towards the center, leaving about 3 inches in the center of the circle unsliced. Continue to cut slices all the way around the circle, making about 18 slices. Twist each slice two times, being careful not to let the dough break apart in the center.

- In a small saucepan, heat milk until it reaches 180F, or when it starts to steam and small bubbles form around the outside of the pan. Remove from heat and allow to cool to 110F or lukewarm.
- Add yeast mixture to large bowl or bowl of a stand mixer fitted with a kneading hook. Add cooled milk, sugar, butter, salt and egg, along with 2 cups of the flour. Mix until well combined. Begin adding more flour 1/4 cup at a time, at first, then in smaller increments, until you have a soft, smooth and moist, but not sticky dough.
- Remove dough to a greased bowl. Cover with plastic wrap and allow to rise until doubled, about 60-90 minutes.

- Make the dough: In a small saucepan, heat the milk and butter on low until very warm (but not too hot or boiling!).
- In the bowl of a stand mixer using a dough hook, place the warm milk/butter mixture. Add 1 cup of flour, granulated sugar, salt, yeast, egg, and the maple extract. Beat on low for a couple of minutes, then add the rest of the flour, in 1/2 cup increments, until dough is completely mixed together. Knead this in mixer for 5 minutes. Remove mixer bowl; cover with plastic wrap, and let dough rise in a warm place for 45 minutes (until it doubles in size).
- Once dough rises, remove it to a lightly floured surface. Divide dough into 3 equal-sized pieces. Roll into a ball. Roll each dough ball into a 12 inch wide circle. Put each dough circle onto prepared baking pan (sprayed with non-stick spray or covered with parchment paper that has been lightly sprayed). Evenly distribute streusel topping over each circle, spreading it as thin as you can to the edges.
