MAPLE WHITE BREAD



Maple White Bread image

Slices of this white bread form the basis for tartine au sucre, an exquisitely simple rustic Québécois dessert.

Yield 1 large loaf

Number Of Ingredients 9

1 cup milk
1/4 cup maple syrup
4 tablespoons sweet butter
1 teaspoon salt
1 package active dry yeast
1/4 cup warm water (about 110 degrees)
1 teaspoon sugar
1 egg beaten
4 cups (approximately) unbleached all-purpose flour

Steps:

  • Place milk, maple syrup, butter and salt in a saucepan and scald. Allow to cool to lukewarm.
  • Dissolve yeast in warm water along with the sugar. Set aside for five minutes until the mixture becomes frothy. Transfer the milk mixture to a large bowl, stir in the yeast mixture and then stir in the egg.
  • Stir in two cups of the flour. Then add more flour about one-half cup at a time until a ball of dough forms. Turn the dough out onto a floured board and knead for about eight minutes until the dough is smooth and elastic, adding more flour as necessary to keep the dough from sticking. Place dough in an oiled bowl, turn the dough to oil on all sides, cover lightly and set aside to rise until doubled, about an hour.
  • Punch down dough, turn onto a lightly floured board and knead for another minute or so. Roll dough into a rectangle about nine by 12 inches, then roll tightly, jellyroll fashion, starting from the narrow side. Pinch the seam and ends closed. Fit the dough seam side down into a greased 9-by-5-by-3-inch baking pan.
  • Cover and set in a warm place to rise until doubled, about 45 minutes.
  • Heat oven to 350 degrees. Place bread in the oven and bake about 45 minutes, until well browned. Remove from pan and allow to cool freely on a rack before slicing.

3 1/3 ounces whole wheat flour (about 3/4 cup)

2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup low-fat buttermilk
1/3 cup maple syrup
1/4 cup walnut oil
1 large egg
1/2 teaspoon vanilla extract
cooking spray
1/3 cup finely chopped walnuts, toasted

Steps:

  • Preheat oven to 350°.
  • Weigh or lightly spoon flours into dry measuring cups; level with a knife. Combine flours, sugar, baking powder, baking soda, and salt in a large bowl; make a well in center of mixture.
  • Combine buttermilk, syrup, oil, and egg in a bowl; add to flour mixture, stirring just until moist. Stir in vanilla.
  • Spoon batter into an 8 x 4-inch loaf pan coated with cooking spray. Sprinkle with walnuts.
  • Bake at 350° for 50 minutes or until a wooden pick inserted in center comes out clean.
  • Cool in pan 10 minutes on a wire rack; remove from pan. Cool completely on wire rack.

8 mini (.9 ounces each) Brie wheels
1/4 cup chopped toasted walnuts
1 tablespoon pure maple syrup
1 teaspoon apple-cider vinegar
5 slices cooked bacon, chopped
Sliced scallions, for garnish

Steps:

  • Preheat the oven to 250 degrees F.
  • On a baking sheet or ovensafe serving platter, bake the Brie wheels until warm to the touch and slightly oozy, 3 to 5 minutes.
  • In a small bowl, combine the walnuts, maple syrup, vinegar and bacon. Top each warmed Brie bite with a spoonful of the maple syrup mixture. Garnish with scallions. Serve immediately.

2 sticks (16 tablespoons) unsalted butter, cut into chunks, at room temperature, plus more for pan
1/2 cup sugar
1 large egg yolk
2 tablespoons real maple syrup
1 teaspoon vanilla extract
1 vanilla bean, split and scraped, optional
1 3/4 cups all-purpose flour, plus more for working with dough
1/4 cup rice flour
1/4 teaspoon fine sea salt
1 1/2 cups coarsely chopped toasted walnuts

Steps:

  • Preheat the oven to 325 degrees F. Cut a piece of foil 8 by 16-inches. Butter the corners and sides of an 8-by-8-inch baking pan. Line the pan with the foil, leaving an overhang on two sides.
  • Beat the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment on medium-high speed until light and fluffy, about 5 minutes. Reduce the speed to medium and add the egg yolk, syrup, vanilla extract and vanilla bean seeds if using. Reduce the speed to low, add the flours and salt, all at once, and beat until just combined. Add the walnuts and continue to mix until fully combined.
  • Using your hands, drop the dough in pieces evenly into the prepared pan. Flour your hands lightly and press the dough together and into the corners of the pan. Put a piece of waxed paper on top of the dough and use something square and heavy-another pan, a pound of cold butter-to press the dough into the pan and make a smooth, even top. Chill until firm, about 30 minutes.
  • When it is firm, use a fork to score the dough all over. Bake until deep golden brown and starting to pull away from the sides of the pan, about 45 minutes. Cool completely on a rack, about 2 hours, then wrap with plastic wrap, and let sit at room temperature overnight.
  • Place a lightweight cutting board or a baking rack over the top of the pan. Flip and set on the counter. Gently pull the pan from the foil and the foil from the pan to lift off the pan. Gently peel the foil off the bar. Place another lightweight cutting board on top, and flip the bar right-side-up.
  • Using a sharp, serrated knife, slice the square in half. Then slice each half into 8 bars.

Ok, this is a specific recipe ... but is also a method. The flour beer and sugar are consistent ... everything else is extra. Here are some of my favorites and you can really do what you like. Dried vs fresh herbs are best, not too many "wet" ingredients; such as olives, onions, sundried tomatoes, etc., and if you add cheese, no more than 1 cup. - Chile beer at any specialty liquor store, monterey jack cheese and cilantro - Pumpkin beer, yes in the fall, pecans, rosemary, and swiss cheese - Any good dark like Amberbock, apples, dried cranberries and gruyere - Honey wheat, caramelized onion, cheddar, and thyme - Light beer, green chilies, jalapeno jack and cilantro - Red berry or any berry beer, walnuts and provolone with cinnimon - Any dark beer, raisins, cranberries, cinnimon and brown sugar vs white - Bock beer, sundried tomatoes, olives and oregano - Maple or pumpkin beer, cinnimon, raisins, pecans and dried apples I have used bacon bits and cheddar; all herbs; or just cheese. Endless combinations. But this is a favorite for breakfast or even a late night snack with cream cheese. Many of these are available year round at most larger liquor stores any many of the beers are available during seasons, like the Pumpkin and Maple available during the Fall and Winter months. A hearth Bock for some brewers is available in winter and it is good with Mediterranean flavors. Now this is the basic recipe ... 12 oz beer (I use a standard bottle with is 12 oz) 3 cups flour self rising, sifted (sifted is important), if not using self rising, use all purpose, but add 1 tablespoon baking powder and 1 teaspoon salt 1/4 cup sugar (flavorings) However below is my updated recipe for the maple walnut.

12 ounces beer (maple flavored)
3 cups flour, sifted (self rising)
1/4 cup brown sugar
1/2 cup walnuts, toasted

Steps:

  • The batter -- Sift the flour and add to a large bowl. Add the sugar, beer and seasoning and mix. I do like the beer to set for a few minutes so it isn't ice cold. Pour all in a loaf pan and cook for 50-60 minutes at 375. Half way through brush the melted butter on the top of the loaf for a golden color. For the sweater breads I usually top it with melted butter.
  • Have fun with it and try a variety of flavors. Just stick to the basic recipe and it is virtually full proof. I have probably made 50+ varieties by now.

WALNUT HONEY OR MAPLE BREAD

1 1/2 cups walnuts (coarsely chopped)
1/2 teaspoon active dry yeast
1 cup water (105-115 degrees)
2 tablespoons water (105-115 degrees)
5 tablespoons honey
1 1/2 tablespoons walnut oil
2 3/4 cups all-purpose flour (unbleached)
1/2 cup all-purpose flour (for kneading)
1 tablespoon kosher salt
cornmeal (for sprinkling)

Steps:

  • ADDITIONAL INGREDIENT: 3/4 cup basic bread sponge (from my published basic bread sponge recipe).
  • Try using 1/2 cup maple syrup instead of honey. And subbing pecans for walnuts.
  • Can use olive oil instead of walnut.
  • Amy seems to like her bread a bit salty. I wouldn't be afraid to reduce the salt to 1/2 or 3/4 teaspoon.
  • Preheat the oven to 400 degrees. Place the walnuts on a baking sheet, roasting until fragrant and golden brown, about eight minutes. Cool.
  • In a bowl, dissolve the yeast in the water. Allow to proof for three minutes.
  • Stir the sponge, honey and oil into the water, breaking the sponge up using your hands or a spoon.
  • Add 2 3/4 cups of the flour and salt and mix, scraping and folding until the dough gathers into a single mass. Knead, in the bowl, until the dough becomes soft and only slightly sticky, using the additional flour gradually as necessary.
  • Turn the dough out onto a lightly floured surface, and knead the nuts into the dough until they are evenly distributed. Place the dough in a lightly oiled bowl, cover with plastic wrap and refrigerate overnight.
  • Halve the dough and shape each piece into a ball and place on a flour-dusted kitchen towel. Cover with plastic wrap and allow to rise in a draft-free location for two hours.
  • Sprinkle a baking sheet generously with cornmeal. Gently press one of the dough balls down on a lightly floured surface and then reshape into a ball. Do the same with the other risen ball. Place both balls, with the seams on the bottom, on the baking sheet, cover with plastic wrap and allow to rise until doubled, in a draft-free location. This should take 2-3 hours.
  • Preheat the oven for at least thirty minutes along with a baking stone or tiles on the middle rack to 425. Place a baking pan with decent sides on the bottom shelf. Boil two cups of water. Using a razor blade, make an 'X' in the top of each of the loaves. Pour the boiling water into the baking pan. With a quick jerk, slide the loaves off the sheet and onto the stone.
  • Bake for (20?) 30-35 minutes until the loaves are hollow sounding when tapped on the bottom and when an instant read thermometer inserted into the middle of the bread (from the bottom so you don't mess up its appearance) reads 190°F When done, cool on a rack.

  • In another bowl, throughly stir together the eggs, bananas, melted butter, milk and flavoring.
  • Stir wet ingredients into dry until just moistened.
  • Pour into greased loaf pan or 9x9 pan.
  • Sprinkle top with walnuts.
  • Bake at 350, if using loaf pan will take longer, around 40-55 minutes. 9x9 will take about 25-35 minutes. Keep a eye on it and check with a knife to see if done.
  • If top starts browning too early, cover with foil.
  • Sometimes we stirred extra walnuts into the batter.
