The maple flavoring in these soft shortbread bars gives a buttery toffee taste without a lot of work. These have been a family favorite for three generations.

½ cup butter, softened
½ cup vegetable shortening
1 cup brown sugar
1 egg
1 teaspoon vanilla extract
½ teaspoon maple extract
2 cups all-purpose flour
½ teaspoon salt
1 (12 ounce) bag chocolate chips
2 tablespoons chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat butter and vegetable shortening with brown sugar, egg, vanilla extract, and maple extract until smooth; stir in flour and salt. Lightly press the dough into a 10x15-inch baking dish.
  • Bake until the crust is set and lightly browned, about 15 minutes.
  • Melt chocolate chips in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Remove crust from oven and spread melted chocolate in a layer on top. Sprinkle with walnuts. Cut bars while still warm; let chocolate set, about 1 hour, before serving.

I don't remember where I got this recipe but it is so good. I get asked to make these and they are always gone fast. You could sprinkle chopped nuts on top of the icing if you wanted. The icing would also be good on a cake.

1 1/2 cups milk
1/3 cup shortening
4 tablespoons sugar
2 teaspoons salt
2 teaspoons cinnamon
1/4 cup water
2 (1/4 ounce) packages yeast
2 large eggs, beaten
4 3/4 cups flour
1/3 cup butter
1 cup packed brown sugar
1/4 cup milk
1 1/2 cups powdered sugar
2 teaspoons mapleine

Steps:

  • For Maple Bars: In saucepan scald milk.
  • Add shortening, sugar, salt and cinnamon.
  • Dissolve and let cool to lukewarm.
  • In large bowl dissolve 2 packages of yeast in water.
  • Add beaten eggs and stir.
  • Stir saucepan mix into yeast mixture.
  • Gradually add flour.
  • Knead.
  • Let rise in bowl for an hour.
  • Punch down and roll out to 1" thickness.
  • Cut into squares and let rise again on lightly greased baking sheets.
  • Bake at 425°F for 7-8 minutes or until light golden brown. Watch carefully.
  • For Icing: In saucepan mix butter, brown sugar and milk.
  • Bring to boil and simmer 3 minutes.
  • Remove from heat and cool for 15 minutes.
  • Add mapleine and then powdered sugar and blend well.
  • Add more powdered sugar if needed.
  • Spread on maple bars and enjoy.

My mom made these bars when I was a child, and she still does, so they bring back a lot of memories for me. This recipe is my own variation that I developed in recent years; I love the colors of the cranberries and white chocolate - they're very festive. But sometimes I make them just like Mom with milk chocolate and walnuts. Most of the time I forget to add the salt, and I find it doesn't make any difference - they always taste delicious and are always a hit!

1 cup unsalted butter
1 cup light brown sugar
1 egg yolk
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
8 ounces white chocolate or milk chocolate, chopped into 1-inch squares
3/4 cup walnuts, coarsely chopped
3/4 cup dried cranberries, coarsely chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • In a mixer, beat the butter, sugar, egg yolk, and vanilla. Gradually mix in flour, then salt, and continue beating until well blended, scraping down the sides of the bowl as necessary. Transfer batter to a 9 by 13-inch pan, and flatten out with a rubber spatula.
  • Bake until slightly browned, about 20 to 25 minutes. Remove from the oven and immediately place squares of white chocolate on top, gently spreading with an off-set spatula or dull knife as they melt. Sprinkle with nuts and cranberries. Allow to set, about 15 minutes, and then cut into squares.

1 cup packed brown sugar
1 large egg yolk
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
6 milk chocolate candy bar (1.55 ounces each)
1/2 cup finely chopped pecans

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg yolk and vanilla. Gradually add flour and salt, beating until smooth. , Press into a greased 15x10x1-in. baking pan. Bake at 350° for 17-19 minutes or until light golden brown. Immediately place chocolate bars on top; return to the oven for 1 minute. Spread melted chocolate over bars; sprinkle with pecans.

1 cup light brown sugar, packed
3/4 cup melted butter
2 eggs
1 cup milk
3 teaspoons vanilla
2 cups flour
1/2 teaspoon salt
1 cup mini chocolate chip, divided
1/2 cup chopped pecans or 1/2 cup walnuts
3/4 cup skor toffee pieces

Steps:

  • Set oven to 325 degrees.
  • Line a 13 x 9-inch baking dish with foil, leaving 2 inches of overhang at each end, then lightly butter foil (or use an 11 x 7-inch baking pan and adjust the baking time slightly).
  • In a large bowl whisk together brown sugar with butter until well blended.
  • Add in eggs, milk and vanilla; whisk until combined.
  • Add in flour and salt and mix until blended.
  • Stir in 1/2 cup mini chocolate chips.
  • Spread into prepared baking pan.
  • Sprinkle with the remaining 1/2 cup chocolate chips, pecans and toffee bits.
  • Bake for about 222-25 minutes or until the center tests done with a toothpick.
  • Allow to cool completely in the pan on a rack.
  • Using the foil overhang, remove from pan and transfer to a cutting board, then cut into 24 squares.

2 cups flour
1/2 cup powdered sugar
1 cup butter or 1 cup margarine
1 (14 ounce) can sweetened condensed milk
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 egg
1 cup chopped peeled apple
1 cup chopped pecans
1 cup english English toffee bits (NOT chocolate coated)
1 cup powdered sugar
2 tablespoons cooled strong coffee (2 to 3)

Steps:

  • Heat oven to 350°F.
  • In a medium bowl mix flour and 1/2 cup powdered sugar; cut in butter with fork until you have coarse crumbs.
  • Press in bottom of an ungreased 9"x13" pan.
  • Bake for 15 minutes or until set; while crust is baking, in a large bowl, mix vanilla, cinnamon, condensed milk, and egg; blend well.
  • Stir in the chopped apples, pecans, and English toffee bits; mix well; pour over the partially baked crust.
  • Bake an additional 30 to 40 minutes; until filling is set and the edges are golden brown.
  • Cool for 10 minutes, then run knife around sides of pan to loosen; cool completely.
  • In a small bowl, combine powdered sugar and enough coffee for drizzling consistency; blend until smooth and drizzle over bars.
  • Let stand 10 minutes or until glaze is set. Cut into bars and store in a loosely covered container.
