SALMON TARTARE
A beautifully simple preparation of raw fish that is a celebration of freshness. The thing I love about this dish is the magic worked by the lemon juice. As well as imparting sharp fresh flavor, the acid in the lemon juice affects the protein in the fish, causing a cooked texture on the surface of the meat whilst leaving the centre rare and soft. Serve with buttered crusty brown toast.

Steps:
- Remove salmon skin and cut out the grey colored blood line so you have only the shiny pink flesh. Cut salmon into small cubes and place in a bowl. Mix in shallot, parsley, chives, pickle, lemon juice, sea salt, and pepper. Let marinate for 5 minutes before serving.

MAPLE SALMON
This is the best and most delicious salmon recipe, and very easy to prepare. I love maple in everything and put this together one night. My husband totally loved it; he did not like salmon that much until he had this.

Steps:
- In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.
- Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once.
- Preheat oven to 400 degrees F (200 degrees C).
- Place the baking dish in the preheated oven, and bake salmon uncovered 20 minutes, or until easily flaked with a fork.

MAPLE SALMON TARTARE
Maple sugar brings natural sweetness to fresh salmon, along with the zesty flavours of Dijon, Tabasco, and lemon juice.

Steps:
- Use a sharp knife to cut the salmon into small cubes. Place them in a bowl and cover with plastic wrap. Set aside in the fridge.
- In a small bowl, combine the shallots, maple sugar, and olive oil. Let stand 5 minutes at room temperature.
- Take the salmon out of the fridge. Add the shallot mixture to it, then the rest of the ingredients. Season with salt and pepper, and mix well. Serve immediately with a green salad and croutons.
FRESH SALMON TARTARE
Steps:
- Cut the fresh salmon and the smoked salmon in 1/4-inch dice. Place the salmon in a mixing bowl and add the lime juice, shallots, olive oil, dill, capers, two mustards, salt, and pepper. Mix well, cover with plastic wrap, and refrigerate for a few hours for the salmon to marinate.
- When ready to serve, toast the bread and taste the salmon for seasonings. Serve the tartare with triangles of the toast.

- Cut salmon in small pieces, about 1/4-inch thick. Set aside or cover and refrigerate until ready to serve. Slice cucumber into very thin (almost transparent) rounds and set aside. In a medium bowl, mix together the shallots, dill, chives, capers, lemon juice and finally add the salmon. Cover and refrigerate if not using immediately. Just before serving, chop the tomatoes, season with salt and pepper and a sprinkling of olive oil, and stir to combine. On a serving plate, spread the cucumber slices to cover 2/3 of the plate, leaving a space in the center of the plate. Then arrange the salmon over the cucumber, then top with the seasoned tomatoes. Garnish with sliced avocado and chopped chives. Serve with endive, toast points or crackers.

Serve wilted spinach, roasted new potatoes and a glass of stout or full bodied Chardonnay, like Cave Spring or Penfold's Koonunga Hill.

Steps:
- Marinate the 2 salmon fillets in mixture of 1/3 cup maple syrup and 1/4 cup of soy sauce for at least 2 hours in the refrigerator.
- Remove from refrigerator, spoon out marinade into a saucepan and reduce over medium-low heat until you're left with about half the original volume (about 10 minutes).
- Broil the fillets in a lightly oiled pan for about four minutes, skin side up.
- Flip the fillets over and brush the flesh side liberally with the reduced marinade.
- Sprinkle sesame seeds over top and broil for another 4 minutes or until the surface is caramelized and the salmon is no longer translucent in the centre.

MAPLE-GLAZED SALMON
Salmon is my number one favorite "meat" so I'm always looking for a variety of ways to cook it. Here is another of several ways I like to prepare it. (I only make this with REAL maple syrup, so can't vouch for the results if you substitute.)

- In a small bowl whisk together the syrup through cornstarch solution until smooth.
- Place the fillets skin-side-down in a shallow baking pan.
- Pour the syrup mixture over the salmon.
- Bake about 15-18 minutes at 450°F until the fish flakes easily; baste with glaze halfway through cooking.
- Sprinkle with scallion and almonds before serving.
