MAPLE PECAN SHORTBREAD SQUARES
These squares are my husband's favorite. We get some real, pure maple syrup from back home in Ontario, Canada, and they are just to die for. Hope you enjoy as much as we do.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C).
- Combine the flour and 1/3 cup brown sugar in a mixer. Mix in the softened butter until a dough has formed. Press into an ungreased 8x8-inch baking dish, and prick with a fork.
- Bake the shortbread in the preheated oven until golden brown, about 20 minutes. While the shortbread is baking, beat the egg in a mixing bowl along with 1/3 cup brown sugar, maple syrup, and pecans. Pour the pecan mixture over the hot crust, and return to the oven. Continue baking until firmed, 12 to 15 minutes. Remove from the oven, and immediately run a knife around the edges to prevent sticking. Cool completely, then cut into 1-inch squares to serve.

PECAN SQUARES
We make these all year long and when we want to go "over the top" we dip half of each square in warm chocolate.

- Preheat the oven to 350 degrees F.
- For the crust, beat the butter and granulated sugar in the bowl of an electric mixer fitted with a paddle attachment, until light, approximately 3 minutes. Add the eggs and the vanilla and mix well. Sift together the flour, baking powder, and salt. Mix the dry ingredients into the batter with the mixer on low speed until just combined. Press the dough evenly into an ungreased 18 by 12 by 1-inch baking sheet, making an edge around the outside. It will be very sticky; sprinkle the dough and your hands lightly with flour. Bake for 15 minutes, until the crust is set but not browned. Allow to cool.
- For the topping, combine the butter, honey, brown sugar, and zests in a large, heavy-bottomed saucepan. Cook over low heat until the butter is melted, using a wooden spoon to stir. Raise the heat and boil for 3 minutes. Remove from the heat. Stir in the heavy cream and pecans. Pour over the crust, trying not to get the filling between the crust and the pan. Bake for 25 to 30 minutes, until the filling is set. Remove from the oven and allow to cool. Wrap in plastic wrap and refrigerate until cold. Cut into bars and serve.

- Grease jelly roll pan.
- FOR CRUST: Beat flour, sugar, butter and salt in large bowl on medium speed until crumbly (mixture will be dry).

- Stir together flour, sugar, cocoa and salt in large bowl; cut in butter until crumbly. Stir in 1 beaten egg. Press mixture evenly onto bottom of ungreased 13x9x2-inch baking pan.

- Preheat oven to 350°F.
- Spread pecans in a single layer on a baking sheet and roast them 10 minutes, set aside.
- Combine 1st measurement of flour and sugar, stir in melted butter.
- Line a 9x13in baking pan with parchment paper, allowing about 2in to hang over each end.
- Press mixture evenly into bottom of pan.
- Bake 10 minutes.
- Whisk together brown sugar, maple syrup and eggs.
- Gently whisk in 2nd measurement of flour, salt and vanilla.

- Base: Preheat oven to 350 degrees to cook cookie base.
- Rub the flour, sugar and butter together in bowl, mix well and press firmly into 8 x 10" pan.

- Crust: Preheat oven to 350°F Grease a 9 x 12 inch baking pan.
- Sift sugar and flour together.Cut in butter, using two knives or a pastry blender, until fine crumbs form. Pat crust into the prepared baking pan. Bake for 20 minutes; remove from oven.

- Preheat an oven to 175 degrees C (350 degrees F)
- Combine the flour and 75g light brown muscovado sugar in a mixer until well combined.
- Mix in the softened butter until a dough has formed.
- Press into a lined 20x20cm baking dish, and prick with a fork. If you don't have an 20x20cm dish you can use any rectangular dish. You may just have to make more shortbread, but that's never a bad thing!
- Bake the shortbread in the preheated oven for about 20-30 minutes (depending on the amount of shortbread you make). It should look puffy and golden brown when done.
- While the shortbread is baking, beat the egg in a mixing bowl along with 75g light brown muscovado sugar, maple syrup, and pecans.
- Pour the pecan mixture over the hot shortbread and return to the oven. Continue baking until firmed, about 20-25 minutes. Remove from the oven, and immediately run a knife around the edges to prevent sticking if the mixture has got past the baking parchment. Cool completely, then cut how ever you like. ENJOY!

- Remember to remove your butter and eggs from the fridge a few hours in advance so that they can come up to room temp. Adjust your oven racks so one rack is farthest away from your heat source. Also, just before you toast the pecans, line a 8×8 baking dish with parchment paper, that has an overhang on the sides for easy removal, and then grease the parchment paper. These bars love to stick, so don’t skip the parchment paper.
- Preheat your oven to 350 degrees Fahrenheit. Spread the pecans onto a small rimmed baking sheet. Place them in a preheated oven and toast for 5 to 7 minutes, tossing them halfway. Make sure to keep an eye on them the last few minutes so they don’t burn. You will know they are done when you can smell a nice nutty aroma in the kitchen, and the pecans are golden brown. - Measure out all your ingredients for the filling and have them ready to go. Whisk your eggs and vanilla extract together in a liquid measuring cup with a pour spout, set aside. Spoon about 2 tablespoons of the butter and maple syrup into a small bowl with the corn starch, whisk so no lumps remain, whisk the corn starch slurry into the sauce pot. Whisk in the salt and cinnamon, and brown sugar. Bring to a low simmer (careful, because the mixture can boil over easily). Whisk constantly for 3 to 5 minutes, or until the mixture has thickened, and coats the back of a spoon. Remove from the heat. Transfer the maple mixture to a medium mixing bowl – a 4 cup spouted liquid measuring cup is perfect for pouring onto the crust, if you have one – allow it to cool while you make the crust.
- In a large mixing bowl add the room temp, cubed butter, along with the granulated sugar, and the egg. Use an electric hand mixer to cream the ingredients together on low, until well combined, and smooth, about 3 minutes. Mix in the vanilla. Add the salt, almond flour and 1/4 cup of the coconut flour, whisk until a dough forms. If any flour remains loose on the bowl, use spatula to stir it in. If the dough seems really sticky then stir in the 1 to 2 tablespoons extra coconut flour. Transfer the dough to the parchment lined baking dish, use your fingers, or, a rubber spatula to spread the dough evenly, and press it into the pan. The dough will be a little sticky, I find it’s helpful to wet my fingers just slightly.
