4 apples (peeled & sliced)
1/4 cup apple juice
2 TBSP brown sugar
1 TBSP cornstarch
1 tsp cinnamon
2 tsp maple extract
1/2 cup flour (all purpose or whole wheat)
2 TBSP brown sugar
1/2 cup cold butter (cubed)
1/4 tsp salt
3/4 cup old fashioned oats
1/2 cup chopped pecans
1/2 cup real maple syrup
vanilla ice cream

Steps:

  • Preheat oven to 375 degrees F. Spray a baking dish with non-stick spray.
  • Wash, peel and slice apples into wedges. I used my apple slicer to cut them into 10 wedges, then I cut each of those in half. Add apples to baking dish.
  • Combine 2 TBSP brown sugar, cornstarch and cinnamon. Pour in apple juice and maple extract. Stir, then pour over apples and toss gently to coat.
  • To make the topping, combine flour, 2 TBSP brown sugar, butter and salt. Mix until butter resembles the size of peas. Stir in oats and pecans. Sprinkle mixture over apples.
  • Bake for 40 minutes. Remove from oven and cover with foil, then bake an additional 10 minutes.
  • Remove foil. Drizzle apple crisp with 2-3 TBSP maple syrup. Serve topped with vanilla ice cream and additional maple syrup.

This serious pie calls for a homemade chocolate crust and artfully arranged pecans--plus a finishing touch of cocoa whipped cream.

1 cup all-purpose flour, plus more for dusting
1/4 cup granulated sugar
2 tablespoons unsweetened Dutch-process cocoa powder
1/4 teaspoon kosher salt
1 stick cold unsalted butter, cut into 1/2-inch cubes
2 tablespoons vodka
2 tablespoons ice water, if needed
4 tablespoons unsalted butter, melted
1 large egg, at room temperature
1/4 cup all-purpose flour
1/2 teaspoon kosher salt
1 1/2 cups pure maple syrup
3/4 cup heavy cream
1 1/2 cups pecans
1 cup cold heavy cream
2 tablespoons unsweetened Dutch-process cocoa powder
1 tablespoon sugar

Steps:

  • Make the crust: Pulse the flour, granulated sugar, cocoa powder and salt in a food processor. Pulse in 3 tablespoons butter until the mixture looks like cornmeal. Add the remaining 5 tablespoons butter and pulse into pea-size pieces. Pulse in the vodka until the dough clumps together but is still crumbly. If the dough is too dry, mix in the ice water, 1 tablespoon at a time. Turn out the dough onto a piece of plastic wrap; shape into a disk and wrap. Refrigerate until very firm, at least 2 hours or overnight.
  • Roll out the dough on a lightly floured surface into a 12-inch round. Transfer to a 9-inch pie plate. Fold the overhanging dough under itself and crimp the edges. Refrigerate until firm, at least 1 hour.
  • Preheat the oven to 350 degrees F. Line the crust with foil and fill with pie weights or dried beans. Bake until the crust looks dry around the edges, about 20 minutes. Remove the foil and weights and bake until dry all over, 10 to 15 more minutes. Transfer to a rack to cool.
  • Make the filling: Whisk the melted butter, egg, flour and salt in a large bowl until smooth, then whisk in the maple syrup and heavy cream. Pour into the cooled crust and top with the pecans in a decorative pattern.
  • Carefully cover the edges of the crust with foil. Bake until the filling is set, 55 to 65 minutes. Transfer to a rack to cool completely, about 3 hours.

4 large granny smith apples, cored, peeled and sliced thin
1/2 cup dark plump raisins
1/4 cup firmly packed dark brown sugar, plus
3 tablespoons firmly packed dark brown sugar
1 teaspoon ground cinnamon, divided
1 teaspoon ground nutmeg, divided
salt, pinch
1/4 cup all-purpose flour
2 tablespoons butter, cold
2 1/2 cups Post Selects maple pecan crunch cereal

Steps:

  • Preheat oven to 375 degrees F.
  • In a large mixing bowl, toss the apples and raisins with 3 tablesppons of brown sugar, 1/2 teaspoon cinnamon, 1/2 teaspoon nutmeg and salt. Spoon into a buttered 9-inch pie plate.
  • In another mixing bowl, combine the remaining brown sugar and spices, and the flour; give a couple good stirs with a wooden spoon.
  • Cut in the butter with two knives until mixture resembles coarse crumbs; stir in cereal. Sprinkle over the apple mixture.
  • Bake for 30 minutes or until topping starts to brown and apples are tender.
  • Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream.
  • Cook's Tip: For a special treat, sprinkle some shredded cheddar cheese on top of the crumble topping the last 10 minutes of baking. Yummm!

1 cup all-purpose flour
1/2 cup light brown sugar, firmly packed
1/2 cup granulated sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 stick (8 tablespoons) unsalted butter
5 to 6 whole fresh peaches (best when not overly ripe or soft), peeled, cut in half and pit removed (about 1 3/4 pounds)
1/2 a lemon
7 tablespoons real maple syrup
1 1/2 cups heavy cream
3 tablespoons light corn syrup

Steps:

  • Preheat the oven to 350 degrees F. In a medium bowl, mix the flour, brown sugar, granulated sugar, cinnamon, nutmeg and salt using a fork or pastry cutter. Cut the butter into small pieces and gradually add to flour mixture until evenly mixed. Slice the peaches 1/2-inch thick into a bowl. Add the zest from the lemon half. Squeeze juice from the lemon half and stir in with the peaches and zest. Add 2 tablespoons of the maple syrup to the peaches and stir well. Pour the peach mixture into a small pan (8 or 9-inch square) and cover evenly with the crumb topping. Cover with foil and bake for 15 minutes. Remove the foil and bake until crisp and brown on top, an additional 20 to 30 minutes. For the maple cream sauce, pour the heavy cream into a saucepan. Add the remaining 5 tablespoons maple syrup and corn syrup and stir over moderate heat until thickened and reduced by about one-third, about 15 minutes. Refrigerate the sauce until it is cold and thick. Or, if you're in a hurry, set the saucepan into a small bowl of ice (the ice will melt and turn into ice water). Stirring your mixture, it will cool and thicken in about 15 minutes. Drizzle the maple cream sauce over the peach crisp. Serve warm.

2 1/2 lbs apples, peeled, quartered, cored, and sliced to yield about 6 cups (about 6 medium, Granny Smith works well)
2 -3 tablespoons sugar
1/4 teaspoon ground cinnamon
1 tablespoon all-purpose flour
1 cup all-purpose flour
5 tablespoons brown sugar
2 tablespoons sugar
1/2 cup finely chopped nuts (I like pecans)
4 ounces unsalted butter, cut into small pieces and chilled

Steps:

  • Preheat oven to 350.
  • To make the filling--In a 9-inch pie pan that's 2 inches deep (or a similar baking pan), toss the apples with the sugar to taste, cinnamon, and flour.
  • To make the topping--In a medium bowl, mix together all the topping ingredients with your fingers or a pastry cutter until small pebbly pieces of butter are distributed throughout the mixture.
  • Sprinkle the entire mixture over the apples.
  • Bake until the topping is golden and the fruit is bubbling and tender, about 1 hour and 15 minute.
  • for a large crisp and 1 hour for individual crisps.
  • Cool slightly before serving.
  • You can make individual crisps by dividing the filling and topping among six ramekins or individual gratin dishes.
  • Serve with heavy cream or a scoop of vanilla ice cream.

3 cups flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1 cup melted butter, cooled slightly (no subs!)
2 cups firmly packed light brown sugar
3/4 cup white sugar
2 large eggs
1 egg yolk
3 teaspoons maple extract (can use a teaspoon less)
2 cups chocolate chips
3/4 cup chopped pecans

Steps:

  • Set oven to 375°.
  • Line 2 cookie sheets with parchment or wax paper.
  • In a small bowl whisk together flour, baking soda and salt.
  • In a large bowl using an electric mixer beat melted butter with both sugars on high speed until fluffy (about 5 minutes).
  • Add in eggs one at a time then egg yolk beating until creamy.
  • Beat in the maple extract.
  • Reduce the speed to low and add in the flour mixture until JUST blended.
  • Stir in chocolate chips and pecans.
  • Chill the dough for about 2 hours until semi-firm, or up to 24 hours.
  • You can scoop the dough onto baking sheets and freeze to use later if desired.
  • Scoop about 1/4-cup batter onto cookie sheet, leaving about 3-inches apart.
  • Flatten mounds into 3-inch rounds using moistened palm of your hand.
  • Repeat with remaining cookies (you will have to use two baking sheets for this and bake in two separate batches).
  • Bake 1 sheet at a time for about 13-15 minutes.
  • Transfer the cookies to a rack to cool and continue with remaining cookies.

  • For the pastry dough, put the flour, salt and sugar on one side of a mixing bowl and the yeast on the opposite side. Add the eggs, egg yolk, warm milk and 80ml/2½fl oz water and mix for one minute using a fork until combined.
  • Dust a work surface with flour and turn out the dough. Dust with a little flour and knead for 5 minutes, then shape into a ball.
  • Lightly oil a mixing bowl and a large piece of cling film. Put the dough in the bowl and cover with the cling film. Set aside in a warm place to prove for an hour, or until almost doubled in size.
  • For the filling, in a food processor, pulse 100g/3½oz of the pecans until fine. Transfer to a bowl and stir in the sugar, maple syrup and butter. Cover and leave at room temperature.
  • To make the pastry, sandwich the chilled butter between the open wrapper and a piece of cling film. Using a rolling pin, beat the butter until it is flattened to roughly 1.5cm/⅝in.
  • Arrange the dough with a short edge nearest you and put the butter in the middle. Fold the top and bottom of the pastry over the butter so it is just overlapping.
  • Roll out the pastry to a large rectangle approximately 1cm/½in thick. Turn dough so you have a long edge nearest you, then fold the right third into the middle and cover with the left third.
  • Preheat the oven to 200C/180C Fan/Gas 6. Line two large baking trays with non-stick baking paper.
  • Roll out the dough to a 30x40cm/12x16in rectangle. Using a pizza cutter or a sharp knife, cut the dough into 12 equal squares.
  • To shape the pastry, cut a line from every corner almost into the middle of the square. Brush the tip of each corner with a little of the egg and milk mixture, and fold the alternate corners into the middle pressing down firmly, creating a pinwheel.
