MAPLE-NUT ICE CREAM SUNDAE
This Maple-Nut Ice Cream Sundae is really every bit as good as the one you can get at the famous Carl's Frozen Custard!

Steps:
- Mix all together in bowl with mixer or in blender.
- Add to ice cream maker and churn 20 to 30 minutes.
- Chill in freezer after churning if needed.
- Scoop and top with maple-nut syrup (recipe below).
- Combine agave nectar, maple syrup, and water in sauce pan.
- Bring to a boil slowly, stirring occasionally.
- Reduce heat and simmer until syrup thickens, about 15 minutes.
- Stir in walnuts; simmer about 5 minutes more. Mixture will thicken upon standing.
- Cool enough to serve warm (but not hot) over ice cream or refrigerate and serve later.

Steps:
- Combine the corn syrup, maple syrup, water, sugar, and ground and fresh ginger in a nonreactive saucepan. Bring to a simmer over medium heat, stirring once or twice. Allow to cook for 2 to 3 minutes and remove from heat. Let the mixture cool to room temperature.
- Strain the mixture through a fine-mesh strainer pressing on the ginger to extract as much liquid as possible. Discard the ginger. Add the lemon juice to the sauce. Stir in the walnuts.

- Toast walnuts in toaster oven or in dry skillet on top of stove, 2-3 minutes.

- In a heavy saucepot combine the maple syrup, brown sugar, butter and water.
- Stir over medium heat until mixture comes to a boil.
- Over low heat simmer until slightly thickened which takes about ten minutes.
- Stir in the cream, vanilla, and nuts.
- Cool to room temperature before using so it will thicken to right consistency.
- Makes 1 cup of sauce.

- Pour cream into a large bowl and set a mesh strainer over the bowl. Whisk egg yolks together in a separate bowl.
- Heat milk, sugar, and corn syrup together in a saucepan over medium-low heat until milk begins to steam, about 5 minutes. Slowly pour about 1/2 cup heated milk into the egg yolks, whisking constantly. Scrape egg yolk mixture into the saucepan with a heatproof spatula.
- Cook and stir milk mixture constantly with the spatula, scraping the bottom of the saucepan often, until mixture thickens and coats the spatula, about 10 minutes. Remove saucepan from heat; pour mixture through the mesh strainer into the cream.
- Stir 3/4 cup maple syrup, coarse salt, and vanilla into cream mixture, then place the bowl over a larger bowl of ice water; stir to cool to room temperature. Chill mixture in the refrigerator, about 2 hours.
- Preheat oven to 275 degrees F (135 degrees C). Spread walnuts onto a baking sheet.
- Toast walnuts in the preheated oven until they turn golden brown and become fragrant, about 15 minutes. Set nuts aside to cool to room temperature. Chop nuts coarsely.
- Heat the 1/2 cup plus 1 tablespoon maple syrup in a saucepan until it comes to a boil. Stir in walnuts, and return to a boil. Stir nuts for 10 seconds, remove from heat; set aside to cool completely. The nuts will be wet and sticky when cooled.
- Remove cream mixture from the refrigerator, pour into your ice cream maker, and freeze according to manufacturer's instructions. During the last few minutes of churning, stir in wet walnuts.

- In a small heavy-bottomed pot, over medium-low heat, stir together 1/2 cup of the maple syrup, the brown sugar, cream, butter, rum and salt. Cook, stirring constantly and scraping the sides and the bottom of the pan, until the sauce is thick and coats the back of the spoon, about 10 minutes. Pour into a heat-proof container and let cool a bit before making the sundaes.
- In a small bowl, combine the remaining maple syrup with the nuts. Scoop the ice cream into dishes. Top with the warm sauce and maple nuts. Grate some of the chocolate over the top and serve with a dollop of crème fraîche and more chocolate shavings if you like.

DENNY'S BACON MAPLE SUNDAE
Denny's Bacon Maple Sundae is a unique ice cream sundae available only at Denny's. Your first reaction may be, I am not eating ice cream with maple flavored syrup, and crispy bacon. Before you decide this is a sundae best left to others, I would ask for you to consider, we already put sweet syrups on ice cream, and salted peanuts goe well on a sundae. Denny's has recently had many creative dishes, their Fried Cheese Melt made the news, their Pancake Puppies provided us with a breakfast appetizer, so thanks to the folks there, we now have a unique dessert.

- Cook the bacon very crisp. I prefer to bake bacon. Baking bacon means you have no grease splatter in your kitchen, and all pieces cook uniformly. If you have an ice cream sundae glass, place one scoop of ice cream in the bottom, add 1 tablespoon of maple syrup in the glass. Then top with an additional scoop of ice cream, pour over remaining syrup, and top with crispy crumbled bacon.
- Now if you don't have a fancy sundae glass, you can just place two scoops of ice cream in a bowl, add the syrup and top with crisp crumbled bacon.
- I do have a couple of notes about this ice cream sundae, I was really prepared not to like it. I did like it though, we have been placing sweet syrups over our ice cream forever, and salt and sweet go together. I will say that in playing around with this recipe, using a butter pecan syrup instead of maple flavored syrup makes it taste so good, better in my opinion.

MAPLE WALNUT ICE CREAM (DAIRY FREE)
A delightful cool treat that is healthier than regular ice cream but still has a creamy rich flavor. I like to break my over ripe bananas into chucks before freezing them so that they are ready to go when making banana bread or ice cream. The prep time will depend on your food processer, mine only takes about 2 - 4 minutes, bananas should be frozen sold (like over night).

- Place banana, maple syrup, cinnamon and vanilla extract in a food processor and allow the motor to run until it's smooth and creamy. Stop and break up large clumps with a spatula as needed.
- Stir in walnut pieces.
- **Tips: Can easily double.
- **If you are not going to eat right away put in freezer safe container with a lid being sure to stir every hour or so to keep it from getting too icy.
