1/4 teaspoon salt
1/8 teaspoon pepper
1 cup maple syrup
1 medium tart apple, peeled and chopped
2 tablespoons raisins, optional
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350°. Cut squash lengthwise in half; remove and discard seeds. Cut halves crosswise into 1-in. slices; discard ends. Place squash in a greased 13x9-in. baking dish; sprinkle with salt and pepper. , In a small bowl, mix remaining ingredients; pour over squash. Bake, covered, 50-60 minutes or until squash is tender.

1 butternut squash
2 tbsp maple syrup
1 tbsp honey
3 tbsp melted butter
1/2 tsp chili powder
1 tsp salt
1/4 tsp pepper

Steps:

  • Start by peeling the squash and cutting it in half lengthwise. Scoop out the seeds and cut the squash in 1/2 inch thick rounds
  • Combine the melted butter, honey, maple syrup, chili powder, salt, and pepper with 1 tbsp of water.
  • On a medium grill, that has been preheated, spread the squash out on the grill. Paint each slice with the glaze. After coating one side, turn the squash over, coat the other side, and continue grilling for 8 to 10 minutes.
  • Flip the slices over, coat the other side with the glaze, and continue the process for another 8 to 10 minutes.
  • The squash is done when the slices are soft all the way through, but not floppy. The best tasting ones are the ones with a little char on the outside but aren't burnt.

3 acorn squashes (about 1 1/2 pounds each), halved, seeded, and sliced into 1-inch-thick crescents
Coarse salt and ground pepper
1/2 cup packed dark-brown sugar

Steps:

  • Preheat oven to 400 degrees. Line two rimmed baking sheets with aluminum foil, and brush with oil.
  • Lay squash pieces on baking sheets. Season with salt and pepper; sprinkle squashes evenly with half the sugar. Roast until sugar has melted, about 5 minutes.
  • Remove baking sheets from oven. Using tongs, turn over pieces. Season with salt and pepper; sprinkle evenly with remaining sugar. Roast until tender, about 20 minutes.

1 tablespoon olive oil
1 tablespoon maple syrup, (plus more for garnish (optional))

1/4 teaspoon ground black pepper

Steps:

  • Preheat oven to 400 degrees. Prepare a baking sheet by lining it with parchment paper.
  • In a large bowl, add all of the ingredients and toss well to combine and coat.
  • Pour ingredients onto prepared baking sheet. Spread squash out so that the pieces are not touching.
  • Place in the oven and bake for 25 minutes.
  • Remove from oven, use tongs to carefully turn over each piece of squash. Return to oven and bake for another 15 minutes.
  • Transfer roasted squash to a serving dish and drizzle with more maple syrup. (Optional) Serve immediately.

Large pinch of ground cayenne or chile powder
2 tablespoons unsalted butter, cut into 1/2-inch cubes
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Large pinch of coriander seeds
1 pound winter squash, such as dumpling, delicata or butternut, halved, seeded and sliced into 1/2-inch thick (you don't have to peel it)
Fresh lime juice, for serving
1 tablespoon chopped fresh sage leaves, for serving

Steps:

  • Heat oven to 425 degrees. If you like, line a rimmed baking pan with parchment paper or foil. (It's not necessary but will prove helpful when cleaning up.)
  • In a small pot over medium-high heat, combine maple syrup and cayenne in a small pot. Bring to a simmer and let cook until it reduces by a third, 1 to 3 minutes. Add butter and let it melt. Turn off heat and mix in salt, pepper and coriander.
  • Spread the squash out on the pan and spoon maple mixture over the pieces, turning them to coat. Roast until the pieces begin to soften, 15 minutes. Turn the squash pieces over and roast until glazed and tender, 10 to 20 minutes more. Drizzle lime juice and scatter sage leaves over the top for serving.

1 medium butternut squash (about 1 1/2 pounds)
2/3 cup water
1/4 cup pure maple syrup
1/4 cup dark rum
1/4 teaspoon ground mace

Steps:

  • Peel, seed and quarter the squash.
  • Cut, crosswise, into 1/2-inch slices to make about 5 1/2 cups.
  • Bring the squash, water, maple syrup, rum and mace to a boil in a large saucepan over medium-high heat.
  • Reduce the heat and simmer, covered, for 15 minutes, or until the squash is tender.
  • While the squash is simmering, warm a serving dish in a 200 F oven or by filling it with very hot water.
  • Reserving the cooking liquid, transfer the squash with a slotted spoon to the warmed serving dish.
  • Increase the heat and boil the cooking liquid about 3 minutes, or until it is thickened.
  • Pour the thickened liquid over the squash.

This roasted butternut squash is tossed in a flavorful soy and maple glaze. It's a little bit sweet, a little bit savory, and a whole lot of delicious.

2.5 lbs butternut squash (or other winter squash such as carnival, golden acorn, or delicata.)
3 tbsp maple syrup (or agave nectar)
1 tbsp soy sauce (or to taste)
2 tsp dark sesame oil
2 tbsp olive oil
1 ½ tsp salt
¼ cup fresh herbs (such as parsley, cilantro, and or basil (optional) )

Steps:

  • Preheat it to 375°F. Cut the squashes in half lengthwise. Scoop out the seeds and pulp and discard.
  • Place the cut squash halves cut side up in a baking dish with about ½ inch of water, and cover each half tightly with foil. Bake until easily pierced with a knife but still firm, about 30 to 40 minutes, depending on the type and size of squash used. Tip: If you don't have a knife sharp enough to cut the squashes in half, simply wrap in foil, place them in a casserole dish, and bake until they can be just pierced through, but are still firm. You can then cut them and remove the seeds.
  • Allow the squash to cool until it is safe to handle. Peel the squashes (the skins should remove easily after baking) and cut into 1-inch chunks. Once you're ready to roast the squash, heat the oven to 425°F.
  • Combine the squash chunks in a mixing bowl with all the remaining ingredients, except the fresh herbs, and stir together well. Transfer to a parchment-lined roasting pan.
  • Roast for 15 to 20 minutes, or until nicely glazed, stirring once or twice. Serve from the pan or transfer to a covered serving container.

Oil, for oiling grill grates
1 stick (8 tablespoons) unsalted butter
1/2 cup pure maple syrup
2 tablespoons cider vinegar
1/2 teaspoon dry mustard powder
1/2 teaspoon crushed red pepper
Kosher salt and freshly ground black pepper
2 acorn squashes (about 2 pounds each)
1 tablespoon chili powder
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
2 tablespoons toasted pepitas (roasted hulled pumpkin seeds)

Steps:

  • Preheat a grill for cooking over medium heat. Lightly oil the grill grates.
  • Melt the butter in a small saucepan and turn off the heat. Remove 1/4 cup of the melted butter and reserve. Whisk the maple syrup, cider vinegar, dry mustard, crushed red pepper, 3/4 teaspoon salt and a few grinds of pepper into the saucepan. Bring to a simmer and cook for about 4 minutes to reduce slightly. Remove the glaze from the heat and let cool. Set aside 1/3 cup of the glaze for drizzling at the end.
  • Carefully halve the squashes from the stem to the bottom. Scoop out the seeds with a spoon and discard. Place the squash halves flat-side down and slice crosswise into 1/2-inch scalloped half-moons. Place the slices in a very large bowl.
  • Mix together the chili powder, coriander, cinnamon, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl. Sprinkle the spice mixture over the squash slices. Drizzle the reserved 1/4 cup of melted butter over the squash. Toss with your hands to make sure the slices are evenly coated.
  • Place the squash slices on the grill and cover. Cook until dark grill marks appear, about 10 minutes. Flip the squash slices; cover and cook until the squash is just tender enough to be pierced easily with a paring knife, 7 to 8 minutes more.
  • Brush the squash slices with the glaze and flip. Cook 1 minute, brush with glaze, flip and cook on the other side for another minute. Remove from the grill and arrange on a large platter. Drizzle with the reserved glaze. Sprinkle with the pepitas. Serve warm or at room temperature.
