GRILLED BUTTERNUT SQUASH WITH HONEY MAPLE GLAZE
Steps:
- Start by peeling the squash and cutting it in half lengthwise. Scoop out the seeds and cut the squash in 1/2 inch thick rounds
- Combine the melted butter, honey, maple syrup, chili powder, salt, and pepper with 1 tbsp of water.
- On a medium grill, that has been preheated, spread the squash out on the grill. Paint each slice with the glaze. After coating one side, turn the squash over, coat the other side, and continue grilling for 8 to 10 minutes.
- Flip the slices over, coat the other side with the glaze, and continue the process for another 8 to 10 minutes.
- The squash is done when the slices are soft all the way through, but not floppy. The best tasting ones are the ones with a little char on the outside but aren't burnt.

MAPLE-ROASTED SQUASH WITH SAGE AND LIME FOR TWO
Slathered with a mildly spicy maple glaze, chunks of winter squash are roasted until velvety soft and browned at the edges, then brightened with lime and fresh sage just before serving. Unless you're using a squash variety with a particularly thick rind, you don't need to peel the squash before roasting. The skins of butternut or delicata roast up wonderfully crisp, adding texture to each bite.

MAPLE-GLAZED BUTTERNUT SQUASH
I love anything squash and anything maple! Put them together and you have a winning combination. In this recipe, from the Maple Syrup Cookbook by Ken Haedrich, the squash is glazed with maple syrup and subtly seasoned with the nutmeg flavor of mace. The rum adds another interesting flavor to the mix.

MAPLE-GLAZED BUTTERNUT SQUASH

Steps:
- Preheat it to 375°F. Cut the squashes in half lengthwise. Scoop out the seeds and pulp and discard.
- Place the cut squash halves cut side up in a baking dish with about ½ inch of water, and cover each half tightly with foil. Bake until easily pierced with a knife but still firm, about 30 to 40 minutes, depending on the type and size of squash used. Tip: If you don't have a knife sharp enough to cut the squashes in half, simply wrap in foil, place them in a casserole dish, and bake until they can be just pierced through, but are still firm. You can then cut them and remove the seeds.
- Allow the squash to cool until it is safe to handle. Peel the squashes (the skins should remove easily after baking) and cut into 1-inch chunks. Once you're ready to roast the squash, heat the oven to 425°F.
- Combine the squash chunks in a mixing bowl with all the remaining ingredients, except the fresh herbs, and stir together well. Transfer to a parchment-lined roasting pan.
- Roast for 15 to 20 minutes, or until nicely glazed, stirring once or twice. Serve from the pan or transfer to a covered serving container.

- Place your sliced butternut squash into a large microwave safe bowl. Place 2 tablespoons of water in the bottom. Cover with plastic wrap and vent. Cook in the microwave for 2 minutes, and check for fork tenderness. Add an additional minute. Check again. Do this until your butternut squash is for tender. Remove from the microwave and season with cinnamon (to taste), I used more than one teaspoon. Add the butter, and mash to a consistency that you like.
- Meanwhile, season the chicken breasts on both sides with the steak seasoning. Heat a large pan over medium to high heat, and cook chicken on both sides 6 to 8 minutes each side, until they are cooked through and no longer pink. Remove from the skillet, and set aside.
- In the skillet whisk in the maple syrup, being sure to scrape up any bits from the bottom. Cook for two minutes. Stir in the green onions. Remove from the pan. Divide the chicken and butternut squash among four plates and top with the maple glaze.
