Steps:
- Heat oven to 425°F.
- Line a rimmed baking sheet with aluminum foil and spray with cooking spray.
- Spread sweet potatoes and broccoli onto prepared pan and drizzle with 2 tablespoons of olive oil, or more as needed to fully coat the vegetables. Toss the vegetables in the oil and season with salt and pepper, to taste.
- Roast for 10-15 minutes, or until potatoes are almost fork-tender.
- While potatoes and broccoli are roasting, prepare the glaze for the salmon. In a small bowl, whisk together maple syrup, mustard, ¼ teaspoon salt, and ¼ teaspoon pepper.
- Remove vegetables from oven and turn oven setting to BROIL on "high." Spread broccoli and potatoes to outer edges of sheet pan to make room in the center for the fish.
- Place salmon in center of tray, leaving at least ½-inch of space in between each fillet so that they cook evenly. Brush glaze on top of each piece of salmon.
- Broil for 7-10 minutes, or until salmon flakes easily with a fork and top is browned and crispy. Potatoes and broccoli should be roasted and tender as well. The total broiling time will depend on the size and thickness of your fish.

Steps:
- Preheat oven to 400 degrees F.
- In a large bowl, toss the potatoes with olive oil, garlic and fresh thyme and season with salt and pepper. Spread them out in an even layer on a large sheet pan sprayed with nonstick spray. Roast in the oven for 20 to 25 minutes, until starting to brown.
- While the potatoes cook in the oven, toss asparagus with olive oil, garlic, lemon zest and salt/pepper; set aside. To make the maple dijon glaze, whisk together whole grain dijon mustard, maple syrup, garlic, lemon juice, fresh thyme and paprika in a small bowl.
- Once the potatoes have cooked, push those to one side of the pan, add the asparagus to the other side of the pan and place your salmon fillets in the center. Brush the tops of the salmon with the maple dijon glaze so that each piece is evenly coated, and season with salt and pepper. Place the sheet pan back in the oven and cook for 15 more minutes, until asparagus is fork tender and salmon is cooked through. You could even pop the broiler on for the last few minutes to crisp everything up!
- To serve, sprinkle with fresh parsley and season with additional salt and pepper, as-needed. Enjoy!

Steps:
- Preheat the oven to 450° and line a sheet pan with foil. In a small bowl, whisk together the maple syrup, tarragon, balsamic vinegar, lemon juice, Dijon, lemon zest, thyme leaves, pepper flakes and salt. While whisking, slowly stream in the olive oil until an emulsified vinaigrette forms. Makes ¾ cup.
- Lay the salmon across the center of the pan. In a large bowl, toss the Romanesco, Brussels sprouts and squash with ⅓ cup of the vinaigrette. Spread the vegetables in an even layer around the salmon. Drizzle ¼ cup of the vinaigrette over the salmon and season with more salt.
- Place in the oven and cook for 20 minutes. Meanwhile, toss the radicchio in a small bowl with the remaining vinaigrette. After 20 minutes, spread the radicchio over the vegetables and cook until wilted, 3 to 4 minutes. Heat the oven to broil and cook until golden, 2 to 3 minutes more. Garnish with microgreens and the tarragon and thyme leaves, then serve.

MAPLE-GLAZED SALMON
Delicious maple-glazed salmon is a little on the sweet side, but not too much. The whole house smells wonderful when this is cooking; it's a great warm winter meal! I have a hard time finding good recipes my family likes with fish, since my husband is not fond of lemon. This is a perfect compromise!

MAPLE-BAKED SALMON
Salmon baked at a low temperature until medium-rare delivers a silky texture that tastes special enough to make it a festive centerpiece. This easy dish works any night of the week, since it comes together in less than half an hour. Maple syrup sweetens the glaze, which gets a savory pop from whole mustard seeds in Dijon. Even though salmon is naturally fatty, a dollop of mayonnaise adds extra richness while thickening the glaze to help it seal onto the fish. The herbaceous aroma of cilantro stems baked into the sauce brightens the dish, as do tender leaves scattered on top. Fill out your feast with any combination of steamed rice, roasted potatoes, green beans or salad.

Steps:
- Remove salmon from the refrigerator. Heat oven to 325 degrees.
- Bundle the cilantro sprigs by their stems and hold them tightly, then slice the stems crosswise until you get to the leaves. Reserve leaves for garnish. Transfer sliced stems to a small bowl and stir in the maple syrup, mustard and mayonnaise until well mixed.
- Season the salmon all over with salt and pepper and place in a baking dish, skin-side down if there is skin. Slather the maple sauce all over the top.
- Bake until a paring knife slides into the center with only a little resistance, 15 to 20 minutes. When you remove the knife and touch the blade to your upper lip, it should feel very warm but not hot. The salmon will continue to heat through out of the oven while in the baking dish. Top with the reserved cilantro leaves, and squeeze lemon wedges all over just before serving.
