CEDAR PLANK SALMON WITH MAPLE-GINGER GLAZE



Cedar Plank Salmon With Maple-Ginger Glaze image

Number Of Ingredients 7

1 2-to-3-pound skin-on center-cut salmon fillet (about 1 1/2 inches thick)
2 teaspoons ground coriander
Kosher salt and freshly ground pepper
1/4 cup pure maple syrup
1 2-inch piece ginger, peeled and grated
Grated zest and juice of 1 lemon
2 tablespoons unsalted butter

Steps:

  • Soak 1 large cedar grilling plank (15 by 6 inches) in a baking dish of water, about 2 hours; put a plate or mug on top to keep the plank submerged.
  • Preheat the oven to 425 degrees F. Sprinkle the salmon with the coriander, 1 teaspoon salt and 1/2 teaspoon pepper. Let stand at room temperature about 15 minutes.
  • Meanwhile, heat the maple syrup, ginger, lemon zest and butter in a small saucepan over medium heat until slightly thickened, about 7 minutes. Stir in the lemon juice and set aside.
  • Remove the cedar plank from the water and pat dry. Place the plank directly on the oven rack and preheat about 15 minutes. Using tongs or oven mitts, remove the hot plank from the oven and place the fish, skin-side down, on the wood. Brush the fish with half of the ginger glaze. Transfer the fish on the plank to the oven; put a baking sheet on the rack below to catch any drips. Cook until the salmon is just firm and slightly golden on top, about 12 minutes.
  • Remove the fish from the oven and change the oven setting to broil. Brush the remaining ginger glaze over the salmon and broil until golden, 2 to 3 more minutes. Remove from the oven and let rest 5 minutes on the plank before serving. Serve warm or at room temperature.

Cilantro adds a nice note of freshness. If you don't like cilantro, you can use dill or parsley instead. This is super easy, but you can even prep the salmon ahead, coating it with the mix, and just pop it in the oven when ready to eat.

2 tablespoons Dijon mustard
2 tablespoons finely chopped fresh cilantro
1 tablespoon light mayonnaise
2 teaspoons pure maple syrup
Four 5-ounce skinless center-cut salmon fillets
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with aluminum foil.
  • Mix together the mustard, 1 tablespoon of the cilantro, the mayonnaise and maple syrup in a bowl. Put the salmon fillets on the baking sheet and sprinkle with 1/4 teaspoon each salt and pepper. Spread some of the mustard mixture evenly over each fillet.
  • Bake until just cooked through, 10 to 12 minute. Sprinkle with the remaining 1 tablespoon cilantro and serve.

30 ml (2 tablespoons) oil
4 150 g (5 oz) salmon fillets (or steaks)
80 ml (1/3 cup) apple juice or water
80 ml (1/3 cup) white wine vinegar or white balsamic vinegar
250 ml (1 cup) shallots, chopped
5 ml (1 teaspoon) fresh ginger, grated
375 ml (1 1/2 cup) chilled butter, cut into pieces
80 ml (1/3 cup) 35% cream
80 ml (1/3 cup) warm maple syrup (preferably amber for its rich taste)
Salt and freshly ground pepper, to taste

Steps:

  • Preheat oven to 190°C (375°F).
  • Oil and season salmon pieces, place on a tray and cook in centre of oven for 12 to 18, depending on size.
  • Meanwhile, in a saucepan over gentle heat, cook apple juice, vinegar, shallots and ginger until the mixture reaches a marmalade consistency.
  • Gradually add butter, stirring constantly with a spoon or whisk until smooth. Season to taste.
  • Add cream and continue cooking for 1 to 2 minutes.
  • Stir maple syrup into beurre blanc and heat for 1 minute.
  • To serve, remove skin and bones from fillets or steaks.
  • Pour a layer of maple-ginger beurre blanc on a serving plate, place salmon on top and serve with green vegetables.

3 tablespoons soy sauce
2 tablespoons toasted sesame oil
1 tablespoon minced fresh ginger
1 tablespoon pure maple syrup
1 tablespoon Chinese mustard
1 tablespoon Sriracha
2 cloves garlic, minced
4 6- to 7-ounce skin-on salmon fillets
1 bunch scallions, chopped
Sesame seeds, for topping

Steps:

  • Combine the olive oil, soy sauce, sesame oil, ginger, maple syrup, Chinese mustard, Sriracha and garlic in a large bowl. Pour one-third of the mixture into a small bowl and reserve. Add the salmon fillets to the large bowl. Cover and let marinate in the refrigerator for 30 minutes.
  • Heat a large nonstick skillet over medium-high heat. Add a drizzle of olive oil to coat the skillet. Add the salmon skin-side down and cook until crispy, 5 minutes, lowering the heat if the glaze starts to get too dark in the pan. Baste the flesh side with the reserved marinade. Flip and cook until the salmon is cooked through and the flesh side is golden brown, 3 to 4 more minutes. Transfer to a platter and top with the chopped scallions and sesame seeds.

¼ cup maple syrup
2 tablespoons soy sauce
1 clove garlic, minced

  • In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.

Salmon baked at a low temperature until medium-rare delivers a silky texture that tastes special enough to make it a festive centerpiece. This easy dish works any night of the week, since it comes together in less than half an hour. Maple syrup sweetens the glaze, which gets a savory pop from whole mustard seeds in Dijon. Even though salmon is naturally fatty, a dollop of mayonnaise adds extra richness while thickening the glaze to help it seal onto the fish. The herbaceous aroma of cilantro stems baked into the sauce brightens the dish, as do tender leaves scattered on top. Fill out your feast with any combination of steamed rice, roasted potatoes, green beans or salad.

12 fresh cilantro sprigs
2 tablespoons pure maple syrup
2 tablespoons whole-grain Dijon mustard

Steps:

  • Remove salmon from the refrigerator. Heat oven to 325 degrees.
  • Bundle the cilantro sprigs by their stems and hold them tightly, then slice the stems crosswise until you get to the leaves. Reserve leaves for garnish. Transfer sliced stems to a small bowl and stir in the maple syrup, mustard and mayonnaise until well mixed.
  • Season the salmon all over with salt and pepper and place in a baking dish, skin-side down if there is skin. Slather the maple sauce all over the top.
  • Bake until a paring knife slides into the center with only a little resistance, 15 to 20 minutes. When you remove the knife and touch the blade to your upper lip, it should feel very warm but not hot. The salmon will continue to heat through out of the oven while in the baking dish. Top with the reserved cilantro leaves, and squeeze lemon wedges all over just before serving.
