1/2 teaspoon salt
1 1/2 sticks (12 tablespoons) unsalted butter, room temperature, plus more for pan

MAPLE ANGEL FOOD CAKE

Categories     dessert

Time 1h25m

Yield 1 large or 6 miniature bundt cakes

Number Of Ingredients 11

1 1/2 cups egg whites (from about 12 eggs), at room temperature
1 1/4 teaspoons cream of tartar
1/2 teaspoon salt
1 1/4 cups sugar
1 1/8 cups cake flour, sifted
1 teaspoon pure vanilla extract
3 tablespoons pure maple syrup
Glaze, recipe follows
1/4 cup pure maple syrup
1 tablespoon egg whites
1 1/2 cups confectioners' sugar

Steps:

  • Preheat the oven to 375 degrees F. In a mixer fitted with the whisk attachment (or using a hand mixer), whip the egg whites until foamy. Add the cream of tartar and salt and continue whipping until soft peaks form. With the mixer running, gradually add 1 cup of the granulated sugar and continue whipping until stiff and the sugar has dissolved, about 30 seconds more.
  • Sift the remaining 1/4-cup of granulated sugar with the sifted cake flour 3 times, to aerate the mixture. Fold into the egg whites, then fold in the vanilla and maple syrup.
  • Spoon the batter into an ungreased proper angel food pan or 6 miniature ones. Smooth the top with the back of the spoon. Bake until light golden brown, 30 to 35 minutes. Cool by hanging the cake (in the pan) upside down around the neck of a bottle until it cools to room temperature. Run a long, sharp knife blade around the cake to loosen, then knock the cake out onto a plate.
  • Glaze: Stir the ingredients together until smooth. Pour over the top of the cake and spread with a spatula, letting the glaze trickle down the sides. Let set for at least 30 minutes before serving, or until the icing is hard. Cut with a serrated knife, using a sawing motion.

Time 55m

Number Of Ingredients 12

1 cup unsalted butter (, at room temperature (226 grams))
½ cup light or dark brown sugar ((105 grams))
2 cups all-purpose flour ((240 grams))
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup pure maple syrup ((156 grams))
1 cup sour cream ((227 grams))
2 large eggs
2 teaspoons vanilla extract
½ cup cold heavy whipping cream ((125 ml))
2-3 tablespoons pure maple syrup (, plus more for drizzling)

Steps:

  • Preheat oven to 350°F. Grease a 9-inch bundt pan with butter and dust with flour, or coat well with nonstick cooking spray.
  • In the bowl of a stand mixer fitted with a paddle attachment, or in a large bowl with a hand-held mixer, beat the butter and brown sugar on high speed until light and creamy, about 3-4 minutes, scraping the bowl down as needed.
  • In a bowl combine the flour, baking powder, baking soda, and salt. In another bowl whisk together the maple syrup, sour cream, eggs and vanilla. Add the flour mixture to the stand mixer bowl in 3 additions, alternating with the maple syrup mixture and ending with the flour mixture. Mix only until just combined.
  • Scoop the batter into the prepared bundt pan and spread it out evenly. Bake until golden brown and a toothpick inserted into the center comes out with a few moist crumbs, 35-40 minutes. Let cool 15 minutes in the pan before turning it out onto a wire rack to cool completely.
  • In the bowl of a stand mixer fitted with a whisk attachment, or in a bowl with a hand-held mixer, beat the whipping cream to soft peaks. Add 2 tablespoons of the maple syrup and again whip to soft peaks. Taste and add remaining tablespoon of syrup if desired.
  • Top cooled bundt cake with whipped cream and drizzle with additional maple syrup right before serving.

MAPLE BUNDT

Maple Bundt image

Provided by Food Network

Categories     dessert

Time 2h10m

Yield about 12 servings

Number Of Ingredients 13

Nonstick baking spray, for the pan
2 sticks (1 cup) unsalted butter, slightly cooler than room temperature
1 cup granulated sugar
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon sea salt
1/2 cup maple syrup
4 large eggs, at room temperature
1/2 cup milk
1 teaspoon vanilla extract
2 cups confectioners' sugar
3 tablespoons maple syrup
1/4 to 1/3 cup heavy cream

Steps:

  • For the bundt: Preheat the oven to 350 degrees F. Spray a 10-inch bundt pan with nonstick baking spray. Set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream the butter until smooth. Add the granulated sugar and continue creaming, scraping down the sides of the bowl every now and again, until the mixture is light and fluffy. This can take 5 to 10 minutes.
  • In a large bowl, whisk together the flour, baking powder and salt to combine. Transfer the flour mixture to a piece of parchment.
  • Add the maple syrup to the butter and sugar mixture and mix to combine. Add the eggs one at time, mixing until each egg is completely incorporated and scraping down the bowl after each addition. Add half the flour mixture and mix, then the milk and vanilla and mix until incorporated. Add the remaining flour and mix until combined. Transfer the batter to the prepared bundt pan and smooth the top with the back of a spoon.
  • Place the bundt on a baking sheet and bake until the cake springs back when gently poked, about 1 hour. Allow the cake to rest in the pan for 10 minutes, then turn out onto a cooling rack to cool completely.
  • For the maple glaze: In a small bowl, mix together the confectioners' sugar, maple syrup and 2 tablespoons of heavy cream until smooth. Add more heavy cream, 1 tablespoon at a time, to thin out the glaze to the desired consistency. Once the bundt is completely cooled, place onto a serving platter and pour the glaze over top.

Number Of Ingredients 13

2 1/8 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2/3 cup butter, soft
3/4 cup sugar
2 eggs, room temperature
1 cup sour cream
icing sugar, for dusting
1/2 cup all-purpose flour
1/8 cup butter, soft
1 teaspoon ground cinnamon
1 cup pecans or 1 cup walnuts, roughly chopped
1/2 cup pure maple syrup

Steps:

  • Preheat the oven to 350°F Grease your 10" bundt or fluted pan and set aside.

Beat in one tablespoon of the flour mixture then one egg, then another tablespoon of flour mixture, then the final egg. Add the remaining flour and and beat until well combined, then mix in the sour cream. The batter should be thick.
  • Spoon just more than half the cake batter into the bundt pan. Spread the mixture up the sides a bit and around the funnel of the pan to create a rim to keep the filling inches.
  • Carefully drop in the maple nut filling into the dent in the cake batter, then cover the filling with the remaing cake batter. Smooth the top of the cake and place in the middle of a preheated oven.
  • Bake the cake for 30 - 35 minutes or until a cake tester inserted in the cake comes out without batter (note: the filling may stick to the tester).
  • Let the cake cool on the rack for 15 minutes, then loosen the edges and turn the cake onto the rack to cool completely.
  • Dust the cooled cake with icing sugar just before serving.
