Soft, tender, oh-so-flaky biscuits the whole family will love! Wtih crisp bacon and maple syrup, what could be better, right?

8 slices bacon, diced
4 cups all-purpose flour
1 cup shredded extra-sharp cheddar cheese
4 teaspoons baking powder
1 1/2 teaspoons kosher salt
1 teaspoon baking soda
3/4 cup unsalted butter, frozen
1 1/2 cups buttermilk
6 tablespoons maple syrup, divided
2 tablespoons melted unsalted butter

Steps:

  • Preheat oven to 450 degrees F. Line a baking sheet with parchment paper or a silicone baking mat. Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Drain excess fat; transfer bacon to a paper towel-lined plate. In a large bowl, combine bacon, flour, cheese, baking powder, salt and baking soda. Grate butter using the large holes of a box grater. Stir into the flour mixture. In a medium bowl, whisk together buttermilk and 4 tablespoons maple syrup. Add to the flour mixture and stir using a rubber spatula until a soft dough forms. Working on a lightly floured surface, knead the dough 3-4 times until it comes together. Using a rolling pin, roll the dough into a 1 1/4-inch thick rectangle. Cut out 12 rounds using a 2 to 2 1/2-inch biscuit or cookie cutter. Place biscuits onto the prepared baking sheet; place in the freezer for 15 minutes. Remove biscuits from freezer. Place into oven and bake for 15-18 minutes, or until golden brown. In a small bowl, whisk together remaining 2 tablespoons maple syrup and butter. Serve biscuits warm, brushed with the maple-butter mixture.

SYRUP
1/2 lb bacon, cooked and chopped
1/3 c brown sugar, firmly packed
1/4 c all purpose flour
1/4 c maple syrup
2 Tbsp butter, unsalted, melted
BISCUITS
2 c all purpose baking mix
2 tsp baking powder
1/2 tsp kosher salt
1/4 c cold butter, unsalted
1 c buttermilk

Steps:

  • 1. Preheat oven to 475-degrees. Lightly grease a 9 inch round cake pan.
  • 2. SYRUP: Chop bacon and combine with the remaining syrup ingredients, stirring until well combined. Spread in the bottom of the prepared pan.
  • 3. BISCUITS: Whisk dry ingredients together in a a bowl. Work the butter in until the mixture is crumbly; some larger, pea-sized pieces of butter may remain intact. Add buttermilk, stirring to make a sticky dough.
  • 4. Drop the dough in heaping tablespoonfuls atop the syrup in the pan.
  • 5. Bake the biscuits for 10 minutes. Then turn of oven, and leave them in the oven for an additional 10 minutes, until they are golden.
  • 6. Remove the biscuits from the oven and immediately turn the panover onto a serving plate. Lift off the pan, and scrape any syrup left in the pan onto the biscuits. Pull biscuits apart to serve.

TOPPING:
6 thick-cut slices bacon
1/3 cup dark brown sugar, packed
1/4 cup all-purpose flour
1/4 cup real maple syrup
2 tablespoons reserved bacon fat
BISCUITS:
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar, optional
1/2 stick (1/4 cup) cold unsalted butter
1 cup cold whole milk or buttermilk

Steps:

  • Cook the bacon until barely done, light to medium brown but not crispy; then chop into 1/2" pieces. Add bacon to a small mixing bowl along with the remaining Topping ingredients. Set aside. Line an 8-9" square baking dish with parchment paper, then spray with cooking spray. Spread the topping evenly in the prepared pan. (I used 2 forks.) Preheat the oven to 400°F. In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar (if using). Cut the butter in until coarse pea size crumbs. Slowly add the milk, stirring just until a sticky dough forms. Drop the dough by rounded tablespoons onto the top of the syrup mixture in the pan. (I made 9 even portions.) Bake for 15-18 minutes, or until biscuits are golden brown. Remove from oven and immediately invert onto a serving plate. Spoon any syrup left in the pan over the biscuits. Serve warm. (Leftovers can be microwaved for 10-12 seconds to reheat.)

¾ cup cold butter

2 tablespoons pure maple syrup
1 egg
½ cup finely chopped cooked bacon
2 tablespoons melted butter, or to taste
2 tablespoons pure maple syrup, or to taste

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper or use a nonstick baking sheet.
  • Combine flour, sugar, baking powder, cream of tartar, and salt in a large bowl. Use a pastry cutter to cut cold butter into flour mixture, until you see small, pea-sized pieces of butter throughout the dough. Add milk, 2 tablespoons maple syrup, and egg and mix just until the ingredients are combined; do not overmix. Dough will be sticky with visible pieces of butter.
  • Turn dough out onto generously floured surface and sprinkle bacon pieces on top. Gently knead dough 10 to 15 times to incorporate bacon, sprinkling with additional flour if the dough is super sticky.
  • Pat the dough out to a 3/4- to 1-inch thickness and cut with a biscuit cutter or glass. Transfer biscuits to the prepared baking sheet.
  • Bake in the preheated oven until golden brown on top, 10 to 15 minutes. Brush the tops with melted butter and remaining maple syrup for extra depth.

Breakfast in a biscuit! My husband and I had these during a trip to LA and they were fabulous. I am not a fan of maple, but these biscuits are very good. I just happened across the original recipe while reading food related articles. This recipe makes 2 dozen, however, I freeze 1 1/2 dozen and take them out as needed. 1 lb bacon, cut into 1/2 -inch pieces
3 1/2 cups flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1/2 lb butter (2 sticks)
3/4 cup maple syrup, plus
2 tablespoons maple syrup
3/4 cup buttermilk, plus
2 tablespoons buttermilk
1 egg yolk
1 egg
1 tablespoon heavy cream
1/8 teaspoon fleur de sel (can substitute with Kosher Salt)

Steps:

  • In a medium frying pan, cook the bacon over medium heat until cooked but not crispy, 10 to 12 minutes, stirring frequently. Remove the bacon to a paper towel-lined plate or pan, to remove excess fat.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
  • Using a pastry cutter or fork, cut in the diced butter, until it resembles small peas. Stir in the bacon, then one-fourth cup plus 2 tablespoons of maple syrup and the buttermilk until the dough just comes together (it will still be clumpy). Be careful not to overwork the dough.
  • On a lightly floured surface, gently press or roll the dough to 1-inch thickness. Cut the biscuits using a 2-inch round cutter; you should have 24 biscuits. Place 12 biscuits on each of two parchment-lined baking sheets, spaced 2 inches apart. Freeze the trays just until the biscuits are chilled, about 10 minutes. (Here is where I removed 6 biscuits to bake from the freezer and allow the rest to hard freeze. Later, I pack them away for freezing to pull out later.).
  • Heat the oven to 350 degrees. While the biscuits are chilling, prepare the egg wash: In a small bowl, whisk together the egg yolk, egg and cream. Brush the chilled biscuits with egg wash and top each with a pinch of fleur de sel.
  • Bake the biscuits until they just begin to brown, about 25 minutes (you should easily be able to pick the biscuits up off the tray). Remove the tray from the oven. Quickly drizzle 1 teaspoon of the remaining maple syrup over each biscuit, then place the tray back in the oven for 3 minutes more.
  • BAKE FROM FROZEN: Heat oven to 400 degrees. Place desired number of frozen biscuits on a lightly oiled baking sheet. Bake for 20-26 minutes to desired browning is achieved.

From King Arthur Flour. You could also use Lyle's Golden Syrup instead of Maple syrup. Please unmold the biscuits onto a serving plate immediately, as soon as you remove them from the oven. If you do not unmold them immediately the bacon/maple topping can harden and it will be difficult to remove it from the pan. Also, please make sure you grease the pan well, and bake the biscuits on the middle rack of the oven, not the bottom rack - the bottom rack will be too hot.
