FUJI APPLE SALAD WITH BACON, PECANS AND MAPLE-YOGURT DRESSING
The combination of apple, bacon, pecan and arugula is up there in the "things that go together" culinary pantheon. The maple-yogurt dressing is creamy, slightly sweet and will become your new go-to for salads.

- Prepare the salad: Heat a medium skillet over medium high heat. Add the bacon and cook, stirring often, until just crisp, 8 to 10 minutes. Transfer the bacon with a slotted spoon to a paper towel-lined plate. Meanwhile, halve and core the apples, then thinly slice. Transfer to a large bowl.
- Make the dressing: Combine all of the ingredients in a jar or container with a lid. Cover and shake to combine.
- Finish the salad: Add the arugula, pecans and bacon to the large bowl. Add as much dressing as you like, toss to coat and serve.

- First, prepare the candied pecans. In a small skillet, toast pecans for 1 minute over medium-high eat. Add sugar and stir constantly until sugar dissolves. Sprinkle cinnamon over pecans and stir until pecans are sugar-coated. Immediately transfer to a sheet of parchment or a heat-resistant plate to cool slightly.
- Prepare salad by arranging lettuce on a platter. Top with apples, cranberries, pecans, and bacon.
- Combine all dressing ingredients in a jar, shake vigorously to combine. Pour over salad immediately if serving right away, or wait until just before serving (shake well just before pouring over salad).

- For the bacon- I baked it at 425F for 15 minutes. Then pat the grease off.
- Chop the apples however you want- dice or slice.
- Chop the bacon into small pieces
- Make the salad dressing in either a food processor or some type of mixer.
- Combine everything into a big bowl or split up into small bowls and don't add the dressing- easy meal prep!
MAPLE BACON ROASTED PECANS
Steps:
- Preheat the oven to 180°C/350°F.
- Cook the bacon until crisp and golden.
- Remove the bacon from the heat and allow to cool to room temperature. Chop into pieces approximately half the size of the nuts.
- Toss pecans, crispy bacon, maple syrup, finely chopped rosemary and chilli flakes in a mixing bowl and mix well.
- Stir in the olive oil. Transfer the nut mixture to a parchment paper lined rimmed baking sheet in a single layer.
- Place the pecans in the oven and allow to roast for 10-15 minutes until golden brown and fragrant.
- Remove from the oven then allow to cool for 10 minutes and serve.
