CHICKEN ALFREDO STUFFED MANICOTTI
Steps:
- Preheat oven to 350 degrees and prepare a 9x13 baking pan by greasing with nonstick cooking spray.
- Prepare the pasta according to package instructions.
- In a large skillet, heat the olive oil over medium heat. Add the chicken breast and season with garlic powder, oregano, basil, and parsley. Saute until thoroughly cooked.
- Remove the chicken from heat and add the ricotta cheese, one cup of mozzarella cheese, and chopped broccoli. Stir to combine.
- Stuff the filling into the cooked manicotti noodles and place the stuffed noodles in the prepared baking dish. Top the noodles with alfredo sauce and continue adding noodles in two layers, if needed.
- Top the noodles and sauce with remaining mozzarella cheese and place in preheated oven.
- Bake for 30 minute or until the mozzarella cheese is melted.

- Heat oven to 450°F. Toss asparagus, bell pepper, onion, mushrooms, oil, lemon-pepper seasoning and salt until vegetables are coated. Spread in ungreased jelly roll pan, 15 1/2x10 1/2x1 inch. Roast about 20 minutes or until vegetables are crisp-tender. Cool slightly. Coarsely chop vegetables.
- While vegetables are roasting, cook and drain manicotti as directed on package. In 1 1/2-quart saucepan, mix sauce mix and milk. Heat to boiling, stirring constantly. Stir in marjoram; remove from heat.
- Reserve 1 cup vegetables for topping. Mix remaining vegetables, 1 cup of the cheese, the chicken and 1/2 cup of the sauce. In bottom of ungreased rectangular baking dish, 13x9x2 inches, spread about 1/4 cup sauce. Spoon chicken mixture into manicotti shells; arrange in dish. Spoon remaining sauce over manicotti. Sprinkle with remaining 1 cup vegetables and 1/2 cup cheese.
- Cover and bake 30 minutes. Uncover and bake about 10 minutes or until bubbly.

CHEESY VEGETABLE MANICOTTI

- For the filling: Heat the oil in a large skillet over medium heat. Add the garlic and onion and cook until softened, about 4 minutes. Add the zucchini and yellow squash, season with salt and pepper and cook, stirring frequently, until the squash softens but is not mushy, about 4 minutes. Pour the mixture into a medium bowl and let cool.
- Add the ricotta, Parmesan, parsley, egg, 1/2 teaspoon salt and 1/4 teaspoon pepper to the cooled vegetables. Stir to combine.
- For the tomato sauce: In a food processor, pulse the tomatoes with their juices until they are coarsely ground or chop the tomatoes by hand. Transfer them to a bowl, add the salt and pepper, then stir in the basil.
- For the manicotti: Preheat the oven to 375 degrees F. Grease a 9-by-13-inch baking dish with oil or cooking spray.
- Transfer the filling mixture to a large resealable plastic bag. Snip a large hole out of one corner of the bag with scissors and use the bag to pipe the mixture into the cooked manicotti shells.
- Spread about 1 cup of the tomato sauce on the bottom of the baking dish. Place the manicotti shells into the baking dish. Spread the remaining sauce over the manicotti. Top with the mozzarella and Parmesan. Bake until the sauce is bubbling and the cheese is melted, 35 to 40 minutes. Let stand 10 minutes before serving.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix Alfredo sauce and water in a bowl; spread about 1/3 sauce mixture into a 9x13-inch baking dish.
- Season chicken tenders with garlic powder and stuff chicken into manicotti shells; arrange manicotti in prepared baking dish. Pour remaining 2/3 sauce over manicotti and sprinkle with steak seasoning. Cover baking dish tightly with aluminum foil.
- Bake in preheated oven until pasta is tender, about 1 hour. Remove foil and sprinkle Parmesan cheese over manicotti. Continue to bake until cheese is melted, about 5 minutes more.

- In a bowl combine parmesan and ricotta cheese, chicken and spices.
- Fill each manicotti shell with mixture.
- In the bottom of a rectangular casserole dish, spread a about 1/2 cup of spaghetti sauce around.
- Now place filled manicotti shells in dish.
- Top with 4 pieces of mozzarella cheese.
- Now pour the rest of spaghetti sauce over the top.
- Place the other 4 slices of mozzarella cheese on top.
- Cover dish tightly with tin foil and bake for about 30-35 mins in a 350 degree oven.
- Take the tin foil off and bake for another 5 or 10 minutes.
- Let cool for about 10 minutes before serving.

- Par-boil manicotti noodles, drain.
- Place in a bowl of cold water to prevent sticking.
- Preheat oven to 350°F.
- Combine eggs, 1/4 cup of the parmesan cheese, 1/2 of the mozzarella,cheddar and ricotta cheeses and the seasonings.
- Drain shells, pat dry with paper towels.
- Fill shells with cheese mixture, spread 1/2 cup of the prepared spaghetti sauce over bottom of shallow 3 quart baking dish.
- Arrange filled shells over sauce; cover with remaining sauce and spoon remaining ricotta over each shell.

Steps:
- Preheat oven to 350. Coat a 7x10" casserole with cooking spray.
- Cook manicotti as directed on package. Rinse with cold water, drain and arrange in a single layer on a plate.
- Steam asparagus lightly.
- Stack one slice of ham on top on each cheese slice. Arrange 2-3 spears of asparagus at the end of each stack. Roll up tightly. Insert into manicotti. Arrange in casserole dish.
- Heat olive oil in skillet over medium high heat. Add onion and mushrooms and cook till golden. Add flour to skillet and stir till blended. Add chicken broth and wine. Continue stirring till mixture comes to a boil. Reduce heat and simmer til thickened. Stir in parsley.
- Pour sauce over manicotti. Cover and bake for 20 minutes Remove cover and bake 10 mins more.

SEAFOOD STUFFED MANICOTTI
This has been at the top of our favorites since 1991. Slightly labor intensive to make, but well worth it. Very light - the fontina white sauce with nutmeg and dry vermouth, along with all the other ingredients, make this a delectable choice. Great for a private romantic dinner or if you're having dinner guests who like seafood. Using a food processor makes the fine chopping easy. Recipe originally came from Sunset's Casserole cookbook.

- In a wide fry pan over medium heat, melt butter. Add onion and carrot and cook until soft (don't overcook).
- Stir in parsley, diced tomatoes with liquid, chicken broth, and basil.
- Reduce heat and simmer uncovered for about 30 minutes or until sauce thickens, then set aside.
- In a large bowl combine crab, shrimp, green onions, and fontina cheese. Set filling aside.
- Cook manicotti in boiling water, according to package directions, until slightly firm - do not overcook!
- Rinse cooked manicotti with cold water and drain well. Set aside.
- Now prepare the FONTINA WHITE SAUCE recipe as follows:.
- In a wide fry pan over medium heat, melt butter or margarine. Add onion and cook until soft.
- Blend in flour and cook, stirring until bubbly.
- Gradually pour in milk and chicken broth, cooking and stirring until sauce thickens and boils.
- Remove from heat and add shredded fontina cheese, dry vermouth, nutmeg, and white pepper. Still just until cheese melts.
- CASSEROLE ASSEMBLY:.
- Stuff each manicotti with the seafood filling (roughly about 4 tablespoons).
- Spoon half of the tomato sauce on the bottom of a 9 x 13 casserole dish. Arrange filled pasta side by side in the sauce.
- Pour some of the sauce into the casserole but not directly onto the manicotti. (remainder of sauce can be offered separately).
- Pour the Fontina White Sauce down the center of the casserole (lengthwise).
- Sprinkle with 1/3 of the Parmesan cheese. (remaining Parmesan is sprinkled after baking).
- At this point you may cool, cover, and refrigerate until next day.
- Bake uncovered at 375°F for 20-25 minutes, or until lightly browned and heated through. (35 minutes if refrigerated).
- Sprinkle remaining Parmesan cheese over top and offer as a side any remaining sauce.
