This is a very tasty mango salsa that is great served over fish. My favorite is any fish blackened with Cajun seasoning and then topped with this salsa. Also great for dipping chips.

1 mango - peeled, seeded, and chopped
¼ cup finely chopped red bell pepper
1 green onion, chopped
2 tablespoons chopped cilantro
1 fresh jalapeno chile pepper, finely chopped
2 tablespoons lime juice
1 tablespoon lemon juice

Steps:

  • In a medium bowl, mix mango, red bell pepper, green onion, cilantro, jalapeno, lime juice, and lemon juice. Cover, and allow to sit at least 30 minutes before serving.

  • Combine 1 diced mango, 1 diced red bell pepper, 1/3 cup chopped red onion, 2 tablespoons each fresh lime juice and finely chopped fresh cilantro, 1/2 teaspoon ground ancho chile and a pinch of cayenne pepper in a medium bowl; season to taste with salt. (The salsa can be covered and refrigerated for up to 4 hours.)

3 medium ripe mangoes, peeled, pitted and diced
1-1/2 cups diced seeded plum tomatoes
1 jar (6 ounces) mango or peach baby food
1 can (4 ounces) chopped green chilies
1/4 cup each diced green, sweet red and yellow peppers
2 tablespoons lime juice
3 garlic cloves, minced
4-1/2 teaspoons olive oil
4-1/2 teaspoons chopped fresh cilantro
1 tablespoon sugar
1-1/2 teaspoons grated lime zest
1/2 teaspoon salt
1/4 teaspoon pepper
Tortilla chips

Steps:

  • In a large bowl, combine the mangoes, tomatoes, baby food, chilies, peppers, lime juice, garlic, oil, cilantro, sugar, lime zest, salt and pepper. Cover and refrigerate for 4 hours or overnight. Serve with tortilla chips.

I absolutely adore fresh mango, and this salsa is the perfect way to make them shine! The result is very fresh, sweet and spicy, and chunky...similar to pico de gallo in texture. Make sure you use mangoes at their peak...if they are too ripe, your salsa will be mushy. I make this often for guests by serving with blue corn tortilla chips (the color is so much prettier than plain ol' tortilla chips!) or serve alongside mahi mahi or other grilled fish. I hope you enjoy it as much as I do!

2 cups chopped mangoes (about 2 medium mangoes)
1 cup chopped red bell pepper
2/3 cup chopped green onion
1/4 cup chopped fresh cilantro
2 tablespoons fresh lime juice
4 teaspoons olive oil
1 medium fresh jalapeno, minced

Steps:

  • Mix first six ingredients together in large bowl.
  • Add jalapeno to taste (I usually use about 3/4 of a medium-sized jalapeno, which gives it quite a quick!).
  • Refrigerate for at least 30 minutes to an hour to allow flavors to mellow.
  • Immediately before serving, give salsa a quick stir. May be stored in a sealed container for several days.

1 large mango, peeled, pitted, and cut into 1/8 inch dice
1/3 cup finely diced red onion
1 teaspoon kosher salt
2 teaspoons sugar
1 teaspoon white vinegar
1 tablespoon freshly squeezed lime juice
1/2 teaspoon minced fresh habanero peppers or 2 tablespoons minced fresh serrano chilies
1 1/2 tablespoons finely chopped cilantro
1 teaspoon finely chopped mint
2 tablespoons finely diced red bell peppers (optional)

Steps:

  • Combine all ingredients in the order given. Let stand at room temperature for at least 30 minutes before serving. It should be used the same day it is made.

JERK PRAWNS WITH COCONUT RICE & ZINGY MANGO SALSA



Jerk prawns with coconut rice & zingy mango salsa image

Try the unique blend of jerk spices with prawns in this dish. The jerk seasoning creates a fragrant warmth, which pairs beautifully with a tangy mango salsa

800g (about 24) large prawns
1 tbsp jerk spice blend
2 garlic cloves, crushed, or 1 tsp garlic paste
2 limes, juiced
2 tbsp honey
2 tbsp dark rum (optional)
50g butter
1 tbsp olive oil
lime wedges, to serve
250g basmati rice
400ml can coconut milk
2 bay leaves
1 large mango, peeled, stoned and finely chopped
1 large avocado, peeled, stoned and finely chopped
2 tomatoes, finely chopped
½ red onion, finely chopped
small bunch of coriander, chopped, plus extra to serve
1 lime, juiced

Steps:

  • Heat the oven to 200C/180C fan/ gas 6. To make the coconut rice, tip the rice into a sieve and rinse under cold running water for a few minutes until the water runs clear. Transfer to a large, lidded ovenproof pan, then add the coconut milk, about 200ml water, the bay leaves and 1/2 tsp salt. Cook over a medium- high heat until the liquid starts to boil, then cover with the lid and transfer to the oven for 20 mins.
  • Meanwhile, peel the prawns, leaving the tails intact - twist off the heads, then remove the legs and pull away the shell (the shells make great stock, so don't throw them away). Cut a line down the back of each prawn and remove the grit using the tip of the knife. Combine the jerk spice blend, garlic, lime juice, honey and rum, if using, in a bowl. Tip in the prawns, season with salt and pepper, toss to combine and set aside for 10 mins.
  • Combine all the ingredients for the salsa in a bowl, then season with a pinch of salt and set aside.
  • After 20 mins, remove the rice from the oven and fluff the grains with a fork. Cover and leave to steam while you cook the prawns (the rice will keep well this way for up to 1 hr). Melt the butter and olive oil in a large frying pan over a medium heat and, once sizzling, cook the prawns for 2-3 mins on each side until pink and a little charred in places. Pour over the leftover marinade and cook for another minute until the marinade reduces to a sticky glaze.
  • Tip the coconut rice onto a serving tray or platter, pile the prawns on top and spoon the salsa over one side of the platter. Serve with lime wedges on the side and scatter over a little extra coriander.

  • Mix all ingredients well.
  • Let sit at room temp 1 hour for flavors to meld.
  • Serve with any meat dish, or as a beautiful side dish.
