I combined some different ideas from several recipes to come up with the ingredients for this salad. In deference to a dear friend's craving, the recipe had to include balsamic vinegar in the dressing. It was a satisfying hit.

2 cups spring mix salad greens
1/2 cup chopped peeled mango
1/2 cup sliced fresh strawberries
2 tablespoons dried cranberries
3 tablespoons olive oil
4 teaspoons sugar
1 tablespoon balsamic vinegar
Dash salt
2 tablespoons slivered almonds, toasted

Steps:

  • In a serving bowl, combine the salad greens, mango, strawberries and cranberries. In a small bowl, whisk the oil, sugar, vinegar and salt. Pour over salad; toss to coat. Sprinkle with almonds.

16 oz cottage cheese
3 oz coconut (optional)
8 oz chopped mangoes
8 oz chopped peaches
4-8 oz fresh raspberries (optional)
3 oz box raspberry jello
8 oz mini marshmallows

Steps:

  • Dice/Chop or slice the peaches and mangos into bite-size bits
  • Gently fold all the fruit with the raspberry jello packet until jello is dissolved
  • Add cottage cheese, whipped cream (or cool whip), mini marshmallows and coconut.
  • Gently Fold ingredients together until fluffed and well blended.
  • Garnish with fresh raspberries, a pinch of shredded coconut and a little piece of peaches or mangos.
  • Serve immediately.

1 package (12 ounces) frozen unsweetened raspberries, thawed
1 package (3 ounces) raspberry gelatin
1 cup applesauce
1/4 cup coarsely chopped pecans
Mayonnaise, optional

Steps:

  • Drain pineapple and raspberries, reserving juices. Place fruit in a large bowl; set aside. Add enough water to the juice to measure 1 cup. Pour into a saucepan; bring to a boil. Remove from the heat; stir in gelatin until dissolved. , Pour over fruit mixture. Add the applesauce and pecans. Pour into a 1-qt. bowl. Chill until set. 3 tbsp flaked almonds
150 g mixed salad of choice
1 large handful of fresh basil (whole leaves or roughly chopped)
300 g fresh strawberries (hulled and halved)
1 large mango (chopped )
100 g feta cheese
3 tbsp extra virgin olive oil
2 tbsp honey
1 medium lemon (juice and zest)
2 tsp fresh ginger (grated)

Steps:

  • Place the almonds in a small, heated frying pan, and roast them for about 2 minutes. Once they start getting aromatic and turn golden brown, take off the frying pan and set aside.
  • Place the salad of your choice and basil into a large bowl. Add chopped strawberries and mango and mix all to combine.
  • Top with crumbled feta cheese and toasted flaked almonds and mix again to combine the ingredients well.

1 tsp lemon thyme leaves
100g mascarpone
100ml double cream
drop vanilla extract
16 raspberries , halved
small handful pistachios , roughly chopped
1 tbsp maple syrup

  • Stone and finely slice the peaches or nectarines and arrange the slices over four plates. Sprinkle over a little of the sugar and scatter over most of the thyme leaves.
  • Whisk together the mascarpone, cream, vanilla extract and the remaining sugar in a bowl until light and fluffy. This is a fruit jello salad that I make for my hubby who is a diabetic. You can use any fruit flavored jello mix, I like to use either Strawberry or Raspberry. Use any berries that are in season that you'd like!

1 (8 ounce) container sugar-free Cool Whip
2 (1 ounce) boxes sugar-free jello, mix any Berry flavor
2 cups strawberries or 2 cups raspberries
2 large bananas, sliced
2 large apples, Sliced
1 cup shredded coconut (optional)

Steps:

  • Empty the Jello mixes into a large bowl. Add the entire tub of Cool whip and stir it well making sure to incorperate the jello mixes well.
  • Add the fruit and coconut and stir in well. I like to add the bananas just before I serve it because they do brown some, but you could add them now if you don't mind it.
  • Put saran wrap on top of the bowl and put in the fridge.
  • You may want stir the jello again before you serve and make sure it is mixed well.
  • This can be made a day ahead, but if you can't wait that long, chill for at least 3 hours!
