1 cup sugar
8 to 10 fresh mint leaves, plus more for garnish
3 lime wedges
2 slices jalapeno, with seeds, plus more for garnish
2 cups ice
1 1/2 ounces dark rum
1 ounce mango nectar (about 2 tablespoons)
About 2 ounces sparkling water

Steps:

  • For the simple syrup: Combine the sugar and 1 cup water in a small sauce pot over medium heat. Bring to a simmer and cook, whisking occasionally, until the sugar dissolves, about 5 minutes. Remove from the heat and cool to room temperature. Refrigerate in an airtight container for up to 2 weeks.
  • For the mojito: Combine the mint, lime wedges, jalapeno and 3/4 ounce of the simple syrup (1 1/2 tablespoons) in a cocktail shaker and muddle. Fill the shaker with the ice, pour in the rum and mango nectar and shake briefly. Pour directly into a highball glass. Top off with the sparkling water and stir briefly. Garnish with a mint sprig and jalapeno slice.

1 cup white sugar
12 fresh mint leaves, or more to taste
⅛ lime
12 fresh mint leaves, or more to taste
⅛ fresh mango, peeled and cubed, or more to taste
1 ½ fluid ounces coconut-flavored rum, or more to taste
ice
club soda, or as needed

Steps:

  • Combine water and sugar in a small pot over medium heat. Whisk until sugar dissolves in the water. Add 12 mint leaves. Bring to a boil and whisk for 1 minute. Remove from heat and let cool, about 30 minutes.
  • Place lime and 12 mint leaves in a glass; mash together with a muddler to extract flavors. Add fresh mango; muddle until combined. Stir in 2 tablespoons of the mint simple syrup. Stir in coconut rum. Fill glass with ice and top with club soda. Stir 1 more time to distribute flavors.

1 bunch fresh spearmint, stems removed
2 limes, sliced, plus 1 1/2 cups fresh lime juice
1 1/2 cups mango-infused rum
4 cups club soda
Frozen mango slices, for garnish

Steps:

  • For the simple syrup: Place the sugar and 1 cup water in a small saucepan over medium heat. Stir the mixture constantly and cook until mixture is fully dissolved, about 5 minutes. (This recipe will make more than you need for the mojitos but the extra can be stored in the refrigerator and used for other beverages or to cook with.)
  • For the mojitos: Add mint leaves, sliced limes and 1 cup simple syrup to a large (48-ounce) pitcher. Muddle these ingredients together with a muddler or the back of a wooden spoon.
  • Add the rum, club soda and lime juice. Add ice and stir. Divide mixture among 8 glasses and garnish with slices of frozen mango.
