These simple, easy, and fresh mango black bean tacos have a deliciously creamy coconut sauce drizzled over the top. So yummy!

2 diced mangoes
20 oz. black beans (about 1 1/2 cans)
3-4 tbs. diced red onion
1 tbs. diced jalapeno
1 lime
1/3 cup coconut milk
2/3 cup sour cream
1 tbs. white sugar
olive oil, salt, pepper
a handful of fresh cilantro
corn tortillas

Steps:

  • Dice the mangoes, jalapenos, and red onions. Drain and rinse the black beans.
  • Combine fresh cilantro, 1 tbs. red onion, juice of 1 lime, and mangoes in a small bowl. Set aside. In another small bowl, whisk together the sour cream, coconut milk, and sugar. Set aside.
  • Saute black beans, red onion, and jalapeno in a little bit of olive oil and season with salt and pepper. Saute gently because the beans will "mush" easily if you get too rough with the spatula. When onions and jalapenos have softened, remove mixture from heat.
  • Layer the black beans and mangoes on a warmed corn tortilla. Drizzle with cream and enjoy!

These sweet & spicy mango tacos are a great vegetarian weeknight dinner. Spice to taste here, adding more or less chili powder, chile, and/or sriracha, depending on your preference.

4 to 6 tortillas, lightly charred or warmed (I like La Tortilla Factory White Corn or homemade tortillas)
1 cup cooked black beans, drained and rinsed
2 limes, divided
¼ to ½ teaspoon chili powder*
2 cups shredded green cabbage
½ avocado, thinly sliced
½ mango, diced
2 tablespoons chopped cilantro
2 tablespoons crumbled feta or cotija cheese
sliced serrano pepper and additional sriracha, for serving, optional*
sea salt
⅓ cup mayo (highly recommend Sir Kensington's Avocado Oil Mayo)
2 teaspoons sriracha

Steps:

  • In a small bowl, combine the black beans with 1 tablespoon of lime juice, ¼ to ½ teaspoon chili powder, and ¼ teaspoon salt.
  • Make the spicy mayo: In a small bowl, stir together the mayonnaise and the sriracha.
  • Toss the cabbage with a squeeze of lime (1 teaspoon or so) and a few pinches of salt.
  • Fill each tortilla with the cabbage, avocado slices, black beans, mango, cilantro, the spicy mayo, and feta cheese. For spicier tacos, serve with sliced serrano peppers and extra sriracha. Serve with lime slices on the side.

1 (15.5 oz.) can black beans, rinsed and drained
1 (10 oz.) package frozen sweet corn, cooked according to package instructions, drained and cooled
1/2 cup chopped red pepper
1/3 cup chopped red onion
1/3 cup finely chopped cilantro
2 cups Nature's Peak™ Sunburst Mango, chopped into 1/4-inch cubes
2-3 tablespoons fresh lime juice
1/2 cup Smucker's® Sweet Orange Marmalade, or Smucker's® Guava Jelly
1-2 serrano peppers, seeded, chopped, to taste

Steps:

  • COMBINE all ingredients in medium bowl. Refrigerate until ready to use. Serve with lime-flavored tortilla chips or as an accompaniment to grilled fish, chicken, or pork.

Cilantro Lime Chicken Tacos With a Mango and Black Bean Salsa image

3 small limes, juice and zest of
3 -4 tablespoons olive oil
2 garlic cloves, minced
1/2 teaspoon cumin
1/2 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
sea salt & freshly ground black pepper, to taste
1/4 cup fresh cilantro, chopped
4 boneless skinless chicken breasts, trimmed of any fat
2 large ripe mangoes, peeled and chopped
1 (8 ounce) can black beans, drained and rinsed
2 green onions, chopped
1 jalapeno, chopped (I removed the seeds and veins)
1 handful fresh cilantro, chopped
1 teaspoon cumin
1 large lime, juice of
corn tortilla, warmed
Cotija cheese
sour cream
guacamole

Steps:

  • Place first 8 ingredients in a large zip lock back and combine thoroughly. Add the chicken breasts and mix until the breasts are evenly coated. Place in the refrigerator to marinate for 2-4 hours.
  • Peel and chop the mango. Rinse and drain the black beans. Chop the green onions, jalapeno and cilantro. In a small bowl, combine the lime juice and cumin until well mixed. Place the mango, black beans, green onions, cilantro, and jalapeno in a large bowl. Pour the lime/cumin mixture over and mix gently. Taste - add more lime juice if needed.
  • Grill chicken breasts until thoroughly cooked. Let the meat rest for at least 5 minutes before slicing into thin slices. Place the corn tortillas in a panini grill for 30 seconds (or cook them in a dry skillet on each side for 45-60 seconds). Layer the warmed tortilla with sour cream, sliced chicken, cotija cheese, mango and black bean salsa. Serve with a side of guacamole and salsa. Enjoy.

1 pasilla pepper
1 zucchini
1/2 onion
1 1/2 tablespoons oil
1 tablespoon taco seasoning
1/4 teaspoon of salt & 1/8 tsp pepper
1/2 tablespoon cumin
1 (15 1/2 ounce) can black beans, drained and rinsed
1/2 teaspoon garlic powder
1/4 teaspoon chili powder
1 tablespoon lime juice
1/4 cup water
1 (8 5/8 ounce) package of dole slawesome mango sriracha coleslaw mix
8 soft taco flour tortillas
2 tablespoons sour cream, per person (optional)
2 whole avocados (optional)

Steps:

  • Slice Peppers, zucchini and onions into medium length strips.
  • Make the coleslaw and set aside in the fridge.
  • Heat oil on med heat then saute veggies for 5 minutes Sprinkle the taco seasoning, salt & pepper to taste over veggies. Continue to cook until desired tenderness.
  • While veggies are cooking for the 1st 5 mins add the beans, water and lime juice to a food processor. Blend until smooth.
  • Transfer bean mix to small frying pan and add the chili powder, cumin, garlic powder and salt and pepper to taste. Heat thoroughly.
  • Assemble the tacos: spread a thin layer of beans on the tortilla. Then add veggies, sliced avocado and top with coleslaw and sour cream.

  • In a medium saucepan, heat the olive oil over medium heat. Add the garlic and sauté for 1 minute until fragrant but before it browns. Add the beans, 1/2 cup of the reserved can liquid, the kosher salt, and several grinds of black pepper.
  • Turn the heat to medium low and cook for 10 to 15 minutes, stirring often and smashing the beans toward the end of the cook time, until most of the liquid has cooked out and the texture is mashed and thick, but not dry. Add additional can liquid as needed. Taste and season with additional salt as desired.
  • Dice the mango. Chop the green onion into rough chunks. In a blender (high-speed if possible), add all sauce ingredients and blend on high until a creamy green sauce forms. Pour into a bowl and reserve until serving.
