Mandarin Orange Spinach Salad image

With mandarin oranges and a slightly sweet dressing, this spinach salad is a refreshing change of pace. I frequently take it along to summer picnics.

1/2 cup vegetable oil
1/3 cup sugar
1/3 cup white vinegar
2 tablespoons minced fresh parsley
3/4 teaspoon salt
SALAD:
3/4 cup slivered almonds
4-1/2 teaspoons sugar
7 cups torn romaine
7 cups chopped fresh spinach
1-1/2 cups sliced celery
1-1/2 cups sliced green onion
3 cans (11 ounces each) mandarin oranges, drained

Steps:

  • In a jar with a tight-fitting lid, combine the first five ingredients; shake well. Set aside. In a skillet, cook and stir the almonds and sugar over medium heat until sugar is melted and almonds are coated, 5-7 minutes. Spread on foil to cool completely., In a large salad bowl, combine the romaine, spinach, celery and onions. Add oranges and sugared almonds; toss gently. Shake dressing; drizzle over salad and toss to coat.

1 small red onion, thinly sliced
2 tablespoons toasted sliced almonds

4 bunches fresh spinach
2 tablespoons sesame seeds
1 1/2 cups chicken breasts, shredded, cooked and chilled
2 cups cherry tomatoes
1 cup radish, thinly sliced
1/2 lb fresh mushrooms, sliced
1/2 lb bacon, fried and crumbled
1 cup crouton, toasted
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
1 tablespoon sesame oil
3 tablespoons salad oil
1 teaspoon sugar
1/8 teaspoon black pepper
1 teaspoon sesame seeds

Steps:

  • Wash spinach leaves very well. Drain Stem. Chill until ready to use.
  • Toast sesame seeds in small skillet over meidum heat for 3 -4 minute or until golden brown. Set aside.
  • Place spinach inlarge wooden bowl. Top with all remaining ingredients, except for toasted sesame seeds.
  • Combine well soy sauce, rice wine vinegar, sesame oil, slad oil, sugar, black pepper and sesame seeds (better if done and put aside for 30 minute to blend flavors).
  • Pour on dressing.
  • Toss salad gently when serving.
  • Garnish with toasted sesame seeds. Serve on chilled plates.
  • Good served with, hot rolls or french bread.

Open refrigerator, voila! We don't really measure this but thought the following would be perfect for a supper for 4.

4 bunches fresh spinach, washed well, drained, stemmed and chilled
2 tablespoons sesame seeds, toasted
1 1/2 cups cooked chicken, shredded, chilled

1/2 lb bacon, fried and crumbled
1 cup toasted crouton
2 tablespoons low sodium soy sauce

  • Mandarin Dressing:.
  • Set aside to blend flavors.
  • I don't live where bagged spinach is available, so am forced to use fresh. If you can buy bagged, Buy Bagged!
  • Place the spinach in a large wooden bowl.
  • Top with remaining ingredients, except for the sesame seeds.
  • Pour on the dressing.
  • Toss salad gently when serving.
  • Garnish with sesame seeds.
  • Serve on chilled plates with hot rolls or French bread.

8 ounces bowtie pasta noodles
4 cups spinach leaves
½ cup craisins
⅓ cup pine nuts (or cashews)
1 4-ounce can mandarin oranges (drained)
¼ cup cilantro leaves (roughly chopped)
⅓ cup teriyaki sauce ((the thicker, the better!))
⅓ cup rice wine vinegar ((may sub apple cider vinegar))
½ teaspoon garlic powder
½ teaspoon onion powder ((if you have it))
¼ teaspoon salt
¼ teaspoon black pepper
1 tablespoon sugar
½ cup oil ((such as vegetable oil, canola oil, olive oil))

Steps:

  • Cook pasta according to package instructions, drain and rinse with cold water. Set aside.
  • While pasta is boiling, prepare the dressing. In a jar combine all dressing ingredients. Cover and shake to combine. Chill until ready to use.
  • In a large bowl toss together pasta, spinach, raisins, nuts, mandarin oranges, and cilantro. Just before serving pour dressing over salad, toss, and serve.

½ cup red wine vinegar
½ cup white sugar
1 ½ tablespoons water
1 ½ tablespoons butter
½ teaspoon salt
1 egg, beaten
1 (10 ounce) package baby spinach
1 (6 ounce) package sliced fresh mushrooms
1 (15 ounce) can mandarin oranges, drained
⅓ cup toasted slivered almonds
4 slices cooked bacon, crumbled
¼ red onion, sliced and separated into rings
¼ cup croutons, or as desired

Steps:

  • Mix vinegar, sugar, water, butter, and salt together in a saucepan; bring to a boil. Cook and stir until sugar dissolves and mixture is bubbling, about 1 minute. Remove from heat and cool to room temperature, about 1 hour.
  • Whisk egg into dressing; return saucepan to low heat and simmer until dressing thickens, 5 to 10 minutes.
  • Combine spinach, mushrooms, mandarin oranges, almonds, bacon, red onion rings, and croutons in a large bowl; pour dressing over salad. Toss to coat.

1 tablespoon poppy seed (optional)

1 (10 ounce) can mandarin orange segments, drained
1 granny smith apple
1/4 cup lemon juice
1 (10 ounce) package fresh spinach, trimmed washed and torn into bite-sized pieces
1/3 cup pine nuts
1/4 cup orange juice concentrate
2 tablespoons balsamic vinegar
2 tablespoons olive oil
2 teaspoons liquid honey
1 teaspoon poppy seed
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place pine nuts in a small frying pan and toast on medium heat until golden, stirring constantly to prevent burning.
  • Cool and set aside.
  • Core apple and cut into 1/2 inch chunks.
  • Coat in lemon juice as you cut it up to prevent browning.
  • Set aside.
  • To prepare dressing: In large bowl, whisk together orange juice, balsamic vinegar, oil, honey, poppy seeds, mustard, salt and pepper.

This is a beautiful tossed salad with spinach, romaine, and mandarin oranges with a sweet, sour, slightly spicy dressing. To top it all off, glazed sliced almonds. I first made this in culinary school, and I have made it many times. It is great for entertaining. The mandarin oranges' color just "pops" against the greens. Time includes chill time for the dressing.

1/3 cup oil
1/4 cup sugar
1/4 cup white vinegar
1 tablespoon chopped fresh parsley
1/2 teaspoon salt
1/2 teaspoon hot pepper sauce (more or less Tabasco is best for this as it just brings some heat to the party)
1 dash black pepper
1/2 cup sliced almonds
3 tablespoons sugar
4 cups torn romaine lettuce
4 cups torn spinach leaves (or any combination of lettuces)
1 cup sliced celery
1 cup sliced green onion
1 (11 ounce) can mandarin oranges, drained

Steps:

  • In jar with tight-fitting lid, combine all dressing ingredients; shake well. Refrigerate 1 hour.
  • In skillet, cook almonds and sugar over medium low heat until sugar melts and coats almonds, stirring frequently. Cool; break apart.
  • Combine the rest of the salad ingredients.
  • Toss with dressing and top with almonds--I prefer to top the salad, and at the last minute, as opposed to tossing the almonds in the salad to keep the sugar from being "washed off" by the dressing.
