MANDARIN ORANGES WITH SHRIMP
From an old, falling apart cookbook I got at a garage sale after we were first married. This is a recipe I saved.

Steps:
- Mix sherry and cornstarch together.
- Marinate shrimp in mixture 5 minutes.
- Heat oil in wok or skillet, enough to cover bottom.
- Stir-fry shrimp just until color changes.
- Add mandarin orange segments, sugar, and salt.
- Stir-fry until just until heated through, no more than 1 minute.
- Serve with rice.

SHRIMP AND VEGETABLE STIR FRY

Steps:
- In a bowl, mix 1 teaspoon cornstarch, ginger; add garlic and shrimp and toss to coat. Cover and refrigerate.
- Remove tough ends from broccoli; cut stalks into 3/4" pieces and head into flowerettes.
- Add broccoli to 1 quart boiling water. Cook 1 minute, uncovered; 1 minute covered. Drain and rinse immediately; set aside.
- Heat 3 tablespoons oil in large skillet or wok over medium heat.
- Add shrimp mixture. Cook and stir until shrimp are opaque and white; remove from pan and set aside.
- Combine cold water, soy sauce, remaining 2 teaspoons cornstarch and bouillon in small bowl.
- Heat remaining 1 tablespoon oil in same skillet or wok. Add broccoli; cook until tender.
- Add pea pods; cook 1 minute.
- Add cornstarch mixture; cook until bubbly.
- Add shrimp and cook until sauce thickens.
- Serve over steamed rice.

MANDARIN SHRIMP AND VEGETABLE STIR FRY
As it is with most stir-fry recipes, once you get all the vegetables prepped, this dish goes together very quickly. Very colorful and yummy!

Steps:
- Combine marmalade, soy sauce, vinegar, hot pepper sauce and cornstarch; stir to dissolve cornstarch. Set aside.
- Place large skillet or wok over high heat for 1 minute, then add oil. Heat oil for 30 seconds then add ginger, garlic and shrimp. Stir fry for 2-3 minutes. Remove from wok and set aside. Add bell peppers and broccoli, cook for 1 minute. Add water; cover and reduce heat for medium. Cook 4-5 minutes.
- Uncover and heat to high, add shrimp, marmalade mixture and water chestnuts. Cook for 2 minutes.
- Season to taste. Add green onions. Serve over hot cooked rice.
