REFRIGERATOR BRAN MUFFINS

I could not believe the differences in all the refrigerator bran muffin recipes! This is the one my good friend Mary gave to me about 1972. It keeps well, is tasty, great for mom's with little time, and is healthy. What more can you ask?

REFRIGERATOR BUTTERMILK BRAN MUFFINS

Refrigerator Buttermilk Bran Muffins image

This recipe came from my Canadian Living Cookbook.I have made these muffins for years and my family loves them and they're good for you. You can store the batter in the fridge for up to two weeks and make fresh muffins anytime you want. Use any bran cereal that is labelled all-bran or 100% bran; do not use bran flakes.

MAMA'S MAKE-AHEAD BRAN MUFFINS

Mama's Make-Ahead Bran Muffins image

Mama made these for decades when she was a working mother (back in the day when most mamas didn't work). These are easy, so moist, and so good. And because you make up a big batch that's kept in the refrigerator and baked just a few at a time, they are a lifesaver for busy cooks. My kids can scoop 1 or 2 into a tin and pop it in the oven in the morning for their own hot and hearty breakfast. A lovely addition to a brunch because they can be prepared ahead and baked right before serving.

4 cups shredded bran cereal
2 cups raisins
5 teaspoons baking soda
1 teaspoon salt

Steps:

  • Pour boiling water over Bran Buds® cereal in a medium bowl and let stand.
  • Beat sugar, shortening, and eggs together in a very large bowl that has a lid (I use a large Tupperware® bowl) with an electric mixer until creamy. Add buttermilk, followed by bran-water mixture. MOM'S REFRIGERATOR BRAN MUFFINS

Mom's Refrigerator Bran Muffins image

This is my co-worker's recipe from her mom. The pineapple and extra raisins make them a bit different than the other recipes on this site. I think they are the best raisin bran muffins ever, and the batter keeps in the fridge for up to 3 months. I make two every morning in my toaster oven and take them with me to work. Yum!

Provided by CongoGirl

Categories     Breakfast

Time 28m

Yield 48 muffins, 24 serving(s)

Number Of Ingredients 9

1 (18 -20 ounce) box Raisin Bran cereal
3 cups sugar
5 cups flour (I use part whole wheat)
5 teaspoons baking soda
4 eggs
1 cup oil
1 quart buttermilk
1 (20 ounce) can crushed pineapple, drained
1 1/2 cups raisins

Steps:

  • Mix the dry ingredients together in a large bowl.
  • Add the eggs, oil, buttermilk, and pineapple and stir until mixed.
  • Mix in the additional raisins.
  • Pour into greased muffin tins (don't use liners.).
  • Bake at 400 for 18-20 minutes or until golden brown.
  • The batter may be stored in a sealed container in the refrigerator for up to three months. I think this recipe improves with age as the raisin bran flakes have time to soak up the liquids more.

Time 40m

Yield 72 small muffins, 72 serving(s)

Number Of Ingredients 10

2 cups bran buds
2 cups boiling water
1 1/2 cups shortening
3 cups sugar
1 quart buttermilk
5 cups flour
5 teaspoons baking soda
1 teaspoon salt
2 cups raisins (shredded apple, dates, or other diced dried fruit may be used)
4 cups shredded bran cereal

Steps:

  • In medium bowl pour boiling water over bran buds and let stand.
  • In a very large bowl (I use a large Tupperware bowl that has a lid) cream together shortening, sugar, and eggs. Add buttermilk.
  • Add water/bran mixture to the creamed items.
  • Add flour, baking soda, salt, raisins, and shredded bran.
  • Stir until just combined. DO NOT OVERMIX and DON'T STIR AGAIN.
  • Let sit in refrigerator at least 4-6 hours before cooking. This batter can be kept in the refrigerator for up to 6 weeks (although I must admit I've never had it longer than a couple of weeks).
  • Don't stir the batter again, just scoop it out to the muffin tin. If not using cupcake liners, grease and flour muffin tin for easy removal. Fill to about 2/3 full. Bake at 400 F for 15-20 minutes for regular size muffins or until a toothpick comes out clean. For large muffins (that's what we usually make) bake for 20-30 minutes or until a toothpick comes out clean.

7 WEEK REFRIGERATOR BRAN MUFFINS

7 Week Refrigerator Bran Muffins image

This is an old recipe from The Guild Cookbook that I got years ago. It makes the best bran muffins...The batter will get dark on top in the refrigerator but just stir it up and it will last 7 weeks. Use Kelloggs Bran Flakes, not bran buds....I use Crisco Shortening, either butter or regular. You will need 6 cups total of bran flakes.
