MAMA'S METHODIST FRUIT SALAD
This dish got its name because every time we had a church picnic, lunch or supper (eatin' meetin' as we so fondly call them) my mother was asked to bring this fruit salad. It is so easy, but the blend of ingredients is SO good!

Steps:
- Dump everything in a serving bowl.
- Stir well to blend.
- Refrigerate at least 3 hours before serving to allow flavors to blend.

MAMA'S MACARONI SALAD
Easy and yummy cold pasta salad with a sweet dressing that reminds me of a poppy seed dressing. This has been handed down in my family for generations. Best made the day before to allow the pasta to absorb the dressing and the flavors blend. Hope you like it! PS This is also a great dressin for a sweet mayo slaw dressing.

Steps:
- Cook macaroni according to package directions using salted water.
- Drain and rinse with cold water to remove the starchy water and cool the pasta quickly.
- Shake the strained to remove as much water as possible from the pasta. You want it as dry as possible but not sticking together.
- Place in large bowl and add the veggies. (This really is best and prettiest when the veggies are diced small.).
- Mix all the dressing ingredients together- I usually put it in an empty jar with a tight fitting lid- like an old mayo jar- and shake-the kids like to do this part! (The dressing can be made ahead of time and stored in refrigerator).
- Pour dressing over pasta and veggies and stir to thoroughly combine.
- Refrigerate.
- NOTE: Holidays: The red and green veggies look great at Christmastime!
- BBQ's/Picnics: Place the bowl on top of a bowl filled with ice to keep it really cold.
- You can use other veggies too- Great way to use up the garden goodies!
STUFFED ZUCCHINI WITH WALNUTS AND FETA
I made these for lunch today and thought they were quite good. They could either be served as a vegetable side, or as a light lunch or supper dish. I used 2 fairly large zucchini, but kept the filling ingredients in the amounts listed. The recipe is from a book about Greek food.

Steps:
- Put the zucchini in a large pan of boiling water, return to a boil, and then boil for 3 minutes. Drain, rinse under cold water, drain again and let cool.
- When the zucchini are cool enough to handle, cut a thin strip off the top side of each one with a sharp knife and gently score around the inside edges to help scoop out the flesh. Using a teaspoon, scoop out the flesh, leaving a shell to hold the stuffing. Chop the zucchini flesh.
- Heat 2 tablespoons of the oil in a saucepan. Add the onion and garlic and fry for 5 minutes, until softened. Add the chopped zucchini flesh and fry 5 minutes, until the onion is golden brown. Remove from heat and let cool slightly. Stir in the cheese then the walnuts, bread crumbs, egg, dill, salt, and pepper. Use the stuffing to fill the zucchini shells, and place side by side in an ovenproof dish. Drizzle over the remaining oil.
- Cover the dish with foil and bake in a preheated oven at 375F for 30 minutes. Remove foil and bake for another 10-15 minutes or until golden brown (mine weren't as brown as I wanted so I broiled them a couple of minutes). Serve hot.

MAMA'S POTATO SALAD
This is the potato salad that my Mama always fixed for picnics or when we were having BBQ. The whole neighborhood loved it and always asked her to bring it for gatherings. I particularly like it warm right after it is made but it is wonderful cold. Hope you enjoy it as much as we always have...

- Peel and slice potatoes in rounds. Boil until done.
- Add onion, celery, salt & pepper, caraway seed, mustard, Miracle.
- Whip, add pickle relish.
- Blend well.
- Peel and slice eggs and fold into potato salad.
- Sprinkle with paprika.
- Chill several hours.
- Serve.
MAMA'S PINEAPPLE SALAD
This has become a staple in my family over the years. It is always present at family gatherings. This is great for potlucks and other gatherings, easily doubled and great tasting.

Steps:
- In med sauce pan mix pineapple, sugar, and gelatin. Bring to boil. Continue boiling for 5 minutes.
- Remove from heat and let cool for 10 minutes.
- Stir in softened cream cheese until cheese is melted and well mixed.
- Add pecans (optional)and allow to cool to room temperature.
- Fold in Cool Whip and refrigerate for several hours.
- **Best if refrigerated overnight**.
