PINEAPPLE AND CHEESE SALAD
Don't be turned away by the title, this is the most delicious, decadent salad. It's almost dessert. My Grandmother created this and passed it down to me. My co-workers have come to love it and my kid's friends all beg me to make it when they come over to the house. It's also a fav for holiday dinners!

Steps:
- Drain the pineapple rings reserving all the syrup. In a small saucepan combine sugar, flour, beaten eggs and reserved syrup from the can of pineapple rings. Cook the mixture over medium high heat stirring constantly until thickened. Remove from heat and allow sauce to cool completely.
- Cut pineapple rings into bite-size pieces. Stir completely cooled sauce, pineapple pieces, cheese pieces and mini marshmallows together until everything is well coated with sauce. Refrigerate until serving.

MOM'S 5 CUP SALAD WITH PINEAPPLE DRESSING
When I lost this recipe, I searched everywhere for one just like it. None of them had the dressing, which, IMO, makes this fruit salad. The dressing is very similar to what's used in Taffy Apple Salads, so I used that for awhile. I finally found my mom's recipe in a basket full of old recipes and want to post it here. I could eat all of this in one sitting. I don't care for the coconut, so I don't add it. I also guessed on the number of servings. Prep time includes time spent whisking dressing.

Steps:
- Mix the first five ingredients together in large mixing bowl.
- Dressing:.
- Combine the rest of the ingredients for the dressing in a small saucepan and cook over medium heat til thickened, stirring constantly(I use a whisk).
- Let dressing cool slightly then pour over salad and chill. Serve cold.

- 1. Boil the 1 cup sugar and can pineapple together for 5 minutes..set aside
- 2. Dissolve the small lemon jello in 1 cup boiling water..set aside until half jelled..add pineapple ..1 cup shredded cheese and 1 cup nuts Beat 1/2 pint cream and fold into first mixture..pour into mold and chill.......
PINEAPPLE CREAM CHEESE SALAD
My first taste of this was at a covered dish. Ohhh, how I remember that surprisingly delicious taste! I am thankful that the lady shared her recipe with me. It has become a family favorite. Whenever I carry it to a covered dish everyone asks for this recipe. Sometimes I use it as a gelatin salad and other times, as a desert. It is great served with angel food cake. I hope you try this quick easy dish and enjoy it.

Steps:
- In a small saucepan, over medium heat, warm the pineapple, cream cheese, and Splenda or sugar until smooth. Stir gently. This does not take long.
- Remove from heat.
- In a small dish, add the water. Then add the unflavored gelatin to it. Allow a few seconds for it to dissolve.
- Add Knox and water mixture to the pineapple mixture. Stir well to blend.
- Pour pineapple mixture in a pretty glass bowl. Gently place a few cherries on top, if desired.
- Place in refrigerator to set. Chill at least 3 hours before serving.
- Note: The 3 hours is your cook tiime. Also note that the small package of Knox unflavored gelatin wasn't labeled with number of ounces. Since I had removed them from the box, I guess at the number of ounces.
PINEAPPLE-CHEESE SALAD
I have no idea of the origin of this recipe. I know that my sister and I are the fourth generation (at least) to make this recipe. I warn you: it is an acquired taste, but it goes great with anything. To me, when I think of northern central Louisiana cuisine/southern food, this is the "salad" I think of.

- Assemble the salad as follows:.
- Place 2-3 (or more) lettuce leaves on a small salad plate.
- Top with pineapple rings (1-2 per person).
- Fill the "hole" in the pineapple ring with a 1/2 tablespoon to 1 tablespoon mayonnaise.
- Sprinkle with cheese to "hide" mayo.
MAMA'S CRAB AND PINEAPPLE SALAD (KRABYUIE SALAT)
This humble and interesting dish graced every festive family meal, created by my host-mom in Voronezh, Russia. We've shared it back home with friends here in the states, and they get hooked! It seems like the flavors wont mix, but they do perfectly. The dish is so versatile, it can be served cold with crackers or baguette slices, between slices of bread for a sandwich, or pop it in the oven for a gooey cheesy dip. If you can afford it, try fresh crab. But honestly, the imitation crab does just fine. Try it, you'll like it! :)

- Soften gelatin in cold water.
- Dissolve sugar in pineapple syrup in small saucepan over low heat. Add gelatin and stir until dissolved.
- Chill till partially set, add pineapple and cheese.
- Fold in whipped cream. Turn into serving bowl.
- Chill until firm.
