JO MAMA'S BEEF STEW
Hearty and delicious. My family's favorite stew for over 30 years. If you prefer, you can substitute basil for the rosemary--I fix it both ways. Update: When I originally made this recipe, I would coat the beef pieces with a flour/salt/pepper mix by shaking them in a bag and then brown them in a couple tablespoons of oil. I eliminated this step to simplify and lower the calories and fat, but if you do it that way it makes for a thicker sauce. Good either way!

Steps:
- Shake stew meat up in a bag with flour to cover.
- Brown in vegetable oil in stew pot.
- Cover with water and bring to a boil.
- Simmer for 30 minutes or more. (I like to simmer until the beef is nice and tender).
- Add remaining ingredients and add additional water to cover.
- Bring to a boil again.
- Reduce heat and simmer until vegetables are done, about 15 minutes.
MAMA'S TRIED AND TRUE BEEF STEW
I love my Mama's beef Stew! It is always a winner for picky manly eaters and easily adjusted too! (p.s. Great with dumplings as well, just make sure there is plenty of liquid so the soup doesn't dry up and burn, or for GF(gluten-free) Stew Omit all flour and it works out great too!)

- Coat meat with group 1.
- Brown in stewing pot with oil and onions, then add cooking wine and water.
- Once browned add all of group 3 and simmer for 1 1/2 - 2 hours until tender.
- Remove bay leaf and Add group 4 simmering 1 hour until tender, however, omitting the " ** " produce until 20 minute before end of cooking time.
- Thicken with 1/4 Cup flour and 1/4 Cup water (if not adding dumplings or not going GF.).

MAMA'S STEW BEEF
Steps:
- In a large bowl, combine the beef, ketchup, green seasoning, garlic powder, onion powder and some salt and pepper. Marinate for 30 minutes.
- Heat a large pot over high heat. Add the oil and sugar, and cook until the sugar is caramelized. Add the seasoned beef and cook, stirring vigorously, until browned, about 5 minutes. Lower the heat to medium-high and cook undisturbed for another 5 minutes. Slowly add just enough water to cover the beef. Cook for 30 minutes, then lower the heat to a simmer and cook until the meat is tender, about 25 minutes more.
MAMA CHAN'S OXTAIL STEW
I've eaten oxtail stew all my life, but it gave me special comfort when my mother made it for me when I was pregnant and having difficulty eating anything. I couldn't resist the delicious aroma and it became a staple during the rest of my pregnancy. Mama's version simmers for hours on the stovetop; as I developed this Instant Pot® version she was adamant about capturing all the dish's nuances to keep the flavor the same even as the cooking time is cut in half. The consistency of the gravy is a little looser, but all the elements are there: the melting sweetness of carrots, onions and shallots; the richness of the sauce; and the tender, irresistible oxtail pieces. It's a hearty, substantial meal for your tummy and your heart.

- Place the oxtail and half the ginger coins in a large wide pot and cover with water by 1 inch. Bring to a rolling boil over high heat. Reduce the heat to medium and let simmer for 10 minutes. If foam forms on the surface, use a large wide spoon to spoon it off and discard.
- Carefully transfer the pieces with a slotted spoon or tongs to a colander and rinse under cold water. Place colander over a large bowl and set aside. Discard the water.
- In a medium bowl, whisk the oyster sauce, soy sauce and sugar together until combined. Set aside.
- Heat 2 tablespoons of the oil in a large wide nonstick skillet or Dutch oven over high heat. Once shimmering, add the remaining ginger coins, the carrots and onions. Toss until the vegetables are well coated in the oil and slightly golden brown, 2 to 4 minutes. This will prevent the carrots from breaking apart during braising. Transfer the vegetables to a 6-quart Instant Pot®.
- Return the skillet to high heat. Add the remaining tablespoon of canola oil and heat until shimmering. Add the shallots and cook, stirring, until golden brown, 1 to 2 minutes. Add the ketchup and bring to a full boil, about 30 seconds. Add the blanched oxtail pieces. Toss until the oxtail is fully coated. Add the oyster sauce mixture to the skillet and toss until everything is coated and the sauce is syrupy. Let simmer until the sauce has slightly thickened, about 5 minutes. Taste the sauce and season with more soy sauce if needed. Transfer to the pot with the carrots. Add 4 cups of water.
- Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 1 hour 30 minutes (see Cook's Note). After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete (this should take about 2 minutes).
- Being careful of any remaining steam, unlock and remove the lid. Skim up to 1/2 cup of fat from the top of the stew. Set to high sear/sauté and add the tomatoes. Let cook, uncovered, until the tomato quarters have softened and are falling apart, about 15 minutes. Serve with rice.
MAMA'S HOMEMADE BEEF & VEGETABLE SOUP
One of the first times I made this it was for my in-laws. My MIL raved over it and asks for me to cook it almost every time she visits. It is an old, old recipe. My DH and I have been married 25 years this month and I have made it every winter. Even when we lived in Orlando and didn't really have winters I still made it in January or February. Everyone really likes it, except my son David. He is a real meat an potatoes kind of guy. I hope you'll enjoy it as much as we do. This is super easy, but a bit time consuming. I find it is worth the time because it makes a huge pot of soup and is so delicious that everyone (almost) likes it. Note that the prep time includes searing the stew meat, which I actually skip. My mother will not eat it unless it has been seared. The rest of the recipe is just adding ingredients. Simple and delicious.

- In a large dutch oven, sear beef stew meat till almost burned so that the meat has a better flavor. You may need to do this in batches.
- When meat is seared, cover it in the same pot with water.
- Add chopped onion and seasonings including boullion cubes.
- Bring this to a boil. Lower heat to simmer for one and one half to two hours. This makes the meat fall apart tender.
- Add frozen, mixed vegetables and bring back to a boil.
- Note: I (Mama,too) add ketchup at this point to add flavor and thicken the broth just a bit. Add however much you feel like, however, She made a note on my recipe stating "ketchup very important for flavor".
- Cook approximately 1 hour or until vegetables are done to your desire.

BIG MAMA'S BEEF STEW
Steps:
- Marinate beef in Italian dressing in fridge for 30 minutes.
- Cook bacon in pot then remove and drain. Add onion and mushrooms. Cook on medium heat for 10 minutes.
- Add beef, carrots, potatoes, tomatoes with liquid, broth and bacon. Bring to boil, stirring occasionally. Reduce heat to low and simmer 1 hour 15 minutes. Uncover; continue to simmer 15 minutes or until meat is tender and sauce is thickened, stirring occasionally.

- 1. Brown meat on stove in a skillet on medium heat.
- 2. Add remaining ingredients (except the brown gravy mix), in a Dutch Oven or a very large pot. Stir to combine all ingredients.
- 3. Stir every 30 minutes, so it will not stick to the pot.
- 4. Cook uncovered on medium high for 1 hour to let the veggies cook and then turn the stove on low and then add the cooked meat.
- 5. Mix in the 2 packages of brown gravy mix.
- 6. Cook for another hour.
- 7. If you want to add noodles or rice you can. But it tastes good without.

My mother received this recipe while briefly living in Germany many years ago. A hearty stew that can easily be modified by adding veggies of your choice! I can eat this stew all year long!

- Heat olive oil in a large pot over medium heat; cook and stir beef and onion in hot oil until meat is browned, about 10 minutes. Add water, tomato sauce, paprika, vinegar, Worcestershire sauce, garlic, beef bouillon, mustard, lemon juice, and bay leaf. MOM'S OLD FASHIONED BEEF STEW
This stew is just like one my mom used to make when my sister and I were little girls and she was the busy mom on the run!

- In a heavy plastic bag, combine flour, salt and pepper.
- In batches, add beef to flour mixture and toss to coat.
- Transfer to a plate.
- In a large nonstick skillet, heat half the oil over medium high heat.
- Cook beef in batches, adding more oil as needed, until browned all over.
- With a slotted spoon, transfer beef to a slow cooker.
- Add 1 cup stock to pan and stir to scrape up any brown bits.
- Transfer stock mixtures to slow cooker.
- Add carrots, potatoes, celery, onion, tomatoes (with juice) remaining stock, bay leaf, Worcestershire sauce and parsely; mix well to combine.
- Cover and cook on low for 8 to 10 hours or on high for 4 to 6 hours until vegetables are tender and stew is bubbling.
- Remove bay leaf and discard.
- Add peas.
- Cover and cook on high 15 to 20 minutes longer or until slightly thickened and peas are heated through.
- Season to taste with salt and pepper.
ECONOMICAL BEEF STEW...
...but with no comprimise on the taste! This is a lovely stew that I make all the time, as it happens I'm posting this as I cook it - a great winter warmer. Originally it was just my basic recipe, how mama used to make it, but after seeing various combinations over the years, I've changed it slightly and now I don't think it get's any better. I use "casserole steak" for this and it's beautiful, and reasonably priced. You can use more expensive steak or cheaper cuts of beef, but this is already a lovely dish that is made at a very low cost. I add homemade cheese & chive dumplings (I'll post my recipe after I have posted this one) and put them into the stew 30 minutes before the meal is ready. Serves 4 - half the recipe for 2, half again for 1.

- Fairly straightforward recipe, pre-heat oven to gas mark 5, or 190 C - I think around 350!
- Chop Beef into cubes if necessary; add to the pot & cover with Stock.
- Chop Onions, Celery, Carrots & Potato; add to the pot.
- Crush Garlic, Chop Thyme & Oregano; add to the pot.
- Stir in half a teaspoon of all spice and give the whole contents of the pot a good stir.
- Cook in the middle of the oven for 30 minutes.
- Prepare your dumplings while this is doing - see my other recipe.
- After 30 minutes, remove from the oven and put the dumplings on the top of the stew, puch them in gently so half of each is 'hidden' - they will sink into the stew.
- Cook again for another 20 minutes. After the 20 minutes, check the stew is not too dry (dumplings suck a lot of moisture up and so you may want to add another cup of boiling water). Once you have done that, or dodn't need to, cook for a final ten minutes.
- Serve. Either alone or with some fresh bread -- mmm.
