MAMA'S SKILLET CORN
Mama used to make this as soon as the fresh corn came in. It is similar to creamed corn in sweetness but the kernels are left whole. A great summertime dish. When my boys whine enough in the winter I will make this with frozen corn.

Steps:
- Combine corn, salt, pepper, sugar, butter and water in a 10-inch skillet.
- Cover and simmer 15 minutes on medium heat, stirring occasionally.
- Combine flour with milk, blending until smooth.
- Stir into corn.
- Cook five more minutes, stirring constantly.

- Preheat oven to 425 degrees.
- Place a 10-inch cast iron skillet into the oven.
- In a bowl, combine the cornmeal, salt, sugar, baking powder, and baking soda. Whisk together to combine well.
- In a large bowl, combine the buttermilk, eggs, and creamed corn, whisking together to combine thoroughly. Add the dry ingredients to the buttermilk mixture and stir to combine. If the batter will not pour, add more buttermilk to the batter.
- Swirl the canola oil in the hot cast iron skillet. Pour the batter into the skillet. Bake until the cornbread is golden brown and springs back upon the touch, about 20 minutes.

- Preheat the oven to 425 degrees F.
- Whisk the cornmeal, flour, baking powder, salt and baking soda together in a bowl. In a large bowl, beat together the buttermilk and eggs, then add the cheese, creamed corn and oil and beat to combine. Add the flour mixture and stir until just incorporated. Set aside.
- Heat an 8-inch cast-iron skillet over medium-high heat until hot. Add the butter and swirl until melted and completely coating the base of the skillet.
- Pour the batter into the skillet, and quickly smooth the top slightly. Bake until golden brown and a wooden pick inserted in the center just comes out clean, about 20 minutes.
MAMA EMMA'S IRON SKILLET CREAM CORN

Steps:
- put the bacon in the iron skillet and cook remove the bacon and set aside but reserve the rendered grease
- finely chop the the onion and cook until translucent , about 3 minutes. Turn off the heat
- Thoroughly shuck and clean the corn. Using a large bowl stand the ear of corn on it's end and shave the tops from the kernels with a chef's knife. Using a large spoon firmly scrape the cob clean of corn and corn milk.
- Turn the heat to medium and put the corn in the skillet with the onion. Add the water and bring to a simmer. Reduce the heat, add the cream,flour,pepper,salt, and nutneg and stir thoroughly.
- cook the corn uncovered for 25 additional minutes and put the butter in prior to serving.
- chop the cooked bacon and sprinkle on the corn after plating.

- Melt butter in a large skillet over medium heat. Add shallots and sugar, and saute for 2 to 3 minutes. Stir in corn and water, and cook until tender, about 5 minutes. Gradually stir in cream, and cook until cream is reduced and sauce thickens, about 8 minutes. Season with nutmeg, salt, and pepper.

SO EASY OLD FASHIONED SKILLET CREAMED CORN
You will need about 6 ears of corn for this to make 2-1/2 cups, depending on the size of the corn cobs. I saute a small onion in the butter for about 3 minutes before adding in the corn kernels but that is only optional. This can also be made using frozen corn, and the recipe can be doubled.

- In a large skillet over medium heat combine corn, whipping cream, salt, pepper, sugar garlic powder (if using) and butter.
- In a small bowl whisk together the full-fat milk with flour, then stir/add to the corn mixture; cook stirring over medium heat until the mixture has thickened and the corn is cooked through.
- Remove from heat then add in the grated Parmesan cheese; stir until thoroughly combined and melted.

- Place a cast iron skillet in the oven and preheat to 450 degrees F (230 degrees C).
- Mix white cornmeal, yellow cornmeal, flour, baking powder, and salt together in a large bowl. Add buttermilk, lard, and vegetable oil; stir will to combine. Stir in egg until smooth batter forms.
- Remove hot cast iron skillet from oven, melt butter in skillet, then pour in batter. Top with paprika and kosher salt. Return skillet to oven.
- Reduce temperature to 425 degrees F (220 degrees C) and bake until cornbread is golden brown and pulling away from the sides of the pan, about 15 minutes.
- Remove from oven to cool slightly, about 5 minutes. Cut into wedges.
