MAMA PAT'S CHOCOLATE BROWNIE PIE
Steps:
- Preheat the oven to 375 degrees F. Line the piecrust shell with parchment paper, and fill it with pie weights, dried beans, or uncooked rice. Bake for 15 minutes. Remove the pie weights and parchment paper. Return the pie crust to the oven, and bake until lightly browned, about 5 minutes more. Remove to a wire rack, and cool for 30 minutes.
- Meanwhile, let the prepared ganache stand at room temperature 30 minutes.
- Sprinkle the brownie cubes on the bottom of the pie crust; top with the caramel sauce, drizzling it evenly. Beat the ganache, heavy cream, and espresso with an electric mixer on medium-high speed until fluffy. Using a spatula, spread the ganache mixture evenly over the top of the pie.
- Chill the pie, uncovered, for 2 hours. Dust with the confectioners' sugar just before serving.
- Put the chocolate chips in a heatproof mixing bowl. Stir together the cream, corn syrup, vanilla, and salt in a small saucepan; bring to a boil over medium-high. Pour the hot cream mixture over the chocolate chips, making sure all the chips are submerged. (Do not stir or touch the chocolate mixture.) Cover the bowl with plastic wrap, and let it stand for 5 minutes.
- Using a spatula and starting from the bottom of the bowl, gently move the mixture from side to side to begin combining the chocolate with the cream mixture. Gradually and slowly stir from the middle until smooth and blended, 2 to 3 minutes.
CHOCOLATE PIE
Steps:
- Combine the sugar, cornstarch, and salt in a medium saucepan. Stir or whisk together.
- Pour in milk and egg yolks, and whisk together.
- Stir over medium heat until the mixture just barely comes to a boil and becomes thick, about 6-8 minutes (maybe less, maybe more; just watch it!) The second it starts to bubble and thicken (note: It should be thick like pudding!) remove it from the heat. Add the chocolate, vanilla, and butter, and stir until everything is beautifully combined.
- Pour the pudding into the pie crust (if there is extra, spoon it into small dishes) and place in the fridge to chill for 4 hours uncovered.
- Cut into slices and serve with whipped cream!
MAMA BROWN'S CHOCOLATE PIE
This is a recipe my MIL always made especially for my DS. She mostly made blackberry pies because she knew how we loved them. After she made this, my 3 yr. old always ask for brownberry pie. I thought this would be good for anyone who couldn't have milk.

- Mix sugar, cocoa & flour in saucepan.
- Beat egg yolks & add water.
- Add to saucepan. Cook over med. heat til boiling, reduce heat, continue to cook, stirring constantly til thickened.
- Remove from heat & pour into baked pie crust. Use egg whites for meringue.
- Meringue.
- 4 egg whites.
- 5-6 tab sugar.
- ½ tsp cream of tartar.
- Beat egg whites, as they start to thicken, gradually add sugar & cream of tartar. Beat til peaks form.
- Pour on pie & bake 10-12 min or until turning brown at 350º.

MOO-LESS CHOCOLATE PIE
Steps:
- Place enough water in the bottom of a 4-quart saucepan to come 1 inch up the sides. Bring to a simmer over medium heat.
- Melt the chocolate chips with the liqueur and vanilla in a medium metal bowl set over the simmering water, stirring often with a rubber or silicone spatula. Combine the tofu, chocolate mixture and honey in a blender or food processor and spin until smooth, about 1 minute. Pour the filling into the crust and refrigerate for 2 hours, or until the filling sets firm.
- Preheat the oven to 350 degrees F.
- Spin the cookies and sugar in a food processor until fine crumbs. Then drizzle in the butter, pulsing to combine. Press this mixture firmly and evenly into the bottom, up the sides and just over the lip of a 9-inch metal pie pan.
- Bake on the middle rack of the oven until crust is set and appears dry, 18 to 20 minutes. Remove from the oven and cool completely, about 1 hour.
GRANDMA'S CHOCOLATE MERINGUE PIE

- On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°., Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edges are light golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. Reduce oven setting to 350°., In a saucepan, mix sugar, cocoa, cornstarch and salt; gradually add milk. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes more. Remove from heat. Stir about 1 cup of the hot filling into the egg yolks. Return to saucepan and bring to a gentle boil. Cook and stir 2 minutes. Remove from the heat and stir in vanilla. Pour hot filling into pie crust. , For meringue, immediately beat egg whites with cream of tartar until soft peaks form. Gradually add sugar and continue to beat until stiff and glossy. Spread evenly over hot filling, sealing meringue to pie crust. Bake until meringue is golden brown, 12-15 minutes. Cool 1 hour on a wire rack. Refrigerate at least 4 hours before serving.

MOM'S MOST REQUESTED CHOCOLATE PIE
This chocolate pie is not only a Southern traditional dish, but my mom has to make 2 to take to church lunches. Most people go back for dessert only to find all the pie gone - the smart ones get their piece on the first trip through. This is pie is also served as "birthday cake" on most everyone's special day. And the only way to top it off is with a piled-high meringue!

Steps:
- Combine all ingredients except butter in a saucepan.
- Cook over medium heat until thick like pudding, stirring constantly to prevent scorching and lumping.
- When mixture becomes thick, remove from heat and add butter; stir to combine.
- If lumping does occur, beat filling with a whip.
- Pour into pie shell.
- Make meringue according to your favorite recipe and top pie, sealing the edges with the meringue.
- Bake to brown meringue.
- Best if allowed to cool to lukewarm or room temperature.
GRANDMA BROWN'S CHOCOLATE PIE
Steps:
- Sift sugar, cornstarch, flour and salt. Set aside. Melt chocolate and butter in double boiler. Add flour mixture to chocolate mixture. Gradually add one cup of milk to form a paste. In a separate bowl, beat egg yolks and five cups of milk thoroughly. Add to paste-mix in pan. Cook over medium heat or double boiler. Keep stirred to keep from scorching. When mixture is the consistency of pudding, remove from from heat and add vanilla. Pour into pie shells.
- To Make Meringue: Beat 6 egg whites until stiff. Gradually add granulated sugar. Beat until meringue forms stiff peaks. Spread on cooled pies.
- Brown meringue in 300 degrees F oven about 10 minutes. Keep refrigerated or freeze this pie and it has a wonderful custard taste.

Steps:
- Put pie shell in the oven to pre-cook for a couple of minutes, until lightly browned.
- Mix and cook filling ingredients in the top half of a double boiler.
- Stir constantly until mixture begins to thicken. This will take about 20 minutes. The texture should resemble a pudding.
- Put on lid and let cook for 10 minutes.
- Remove from heat and stir in butter and vanilla.
- Pour into baked pie shell.
- Beat egg whites and salt until almost stiff.
- Add a large dash of cream of tartar.
- Add sugar one tablespoon at a time.
- Beat until stiff peaks form.
- Top chocolate with stiff egg whites.
- Bake at 375 degrees until meringue is lightly golden.
