MALT VINEGAR OVEN FRIES

2 1/2 pounds fingerling potatoes, quartered lengthwise
1 tablespoon vegetable oil, a drizzle
2 tablespoons melted butter
Coarse salt
Malt vinegar, for sprinkling

Steps:

  • Preheat oven to 550 degrees F, or highest setting.
  • In a large mixing bowl, toss potato wedges with oil and melted butter. Spread potatoes in a single layer on a cookie sheet. Roast potatoes 20 minutes, turning once, until deeply golden all over.
  • Season with salt and sprinkle with malt vinegar. Pile fries into a basket or shallow dish, lined with brown paper.

6 tbsp fine sea salt
3 tbsp vinegar (we used malt)
1 tbsp cornflour

Steps:

  • Put all the ingredients into a small bowl and use a wooden spoon to mix into a paste. Scrape the paste onto a baking tray and leave it uncovered at room temperature for 24 hrs until hardened. Use a fork to break up the hardened mix into a coarse powder. Will keep in an airtight container for up to two months.

HOMEMADE SALT AND VINEGAR CHIPS



Homemade Salt and Vinegar Chips image

1 pound russet potatoes, scrubbed clean
14 ounces distilled white vinegar
1 1/2 tablespoons kosher salt
1 1/2 tablespoons malt vinegar powder
Vegetable oil for frying

Steps:

  • Using a mandolin, carefully cut the potatoes into 1/16-inch-thick slices. They should be thin enough to see through. Add the potato slices to a bowl and cover them with the distilled vinegar. Cover the bowl and let sit at room temperature for 30 to 45 minutes.
  • Fill a large Dutch oven with 2-inches of vegetable oil and heat to 350 degrees F and attach a deep fat fry thermometer. Line a rimmed baking sheet with paper towels.
  • Add the kosher salt and malt vinegar powder to a small bowl and mix. Set the mixture aside.
  • Remove the potato slices from the vinegar and dry completely. This can be done by arranging the potato slices on clean kitchen towels or paper towels in an even layer, making sure not to overlap them.
  • Add the dry potato slices to the hot oil in batches, making sure not to overcrowd the fryer. Fry until golden brown, stirring occasionally, about 1 minute and 30 seconds. Remove the chips with a slotted spoon and drain on the prepared baking sheet. Season liberally with the salt/malt vinegar powder mixture and give them a gentle toss to coat all the chips in the seasoning.
  • Continue frying the rest of the potato slices, making sure that the oil returns to 350 degrees F before adding another batch. Be sure to season each additional batch. Chips can be stored in an airtight container for 3 to 5 days.

  • Toss 1 1/2 pounds trimmed and halved brussels sprouts with 1 1/2 tablespoons each olive oil and malt vinegar, 3/4 teaspoon kosher salt and a few grinds of pepper. Roast cut-side down on a preheated baking sheet at 450˚ until browned and tender, 25 to 30 minutes. Toss with 1 1/2 tablespoons more malt vinegar and sprinkle with flaky sea salt.

1 large zucchini (about 1 pound)
2 tablespoons extra-virgin olive oil
2 tablespoons malt vinegar
1/2 teaspoon kosher salt, plus more for sprinkling
1/4 teaspoon sweet paprika

Steps:

  • Preheat the oven to 225 degrees F. Line two baking sheets with parchment paper.
  • Slice the zucchini thinly (1/8-inch thick or less), either by hand or on a mandoline. Lay the slices in single layer on paper towels and pat dry.
  • Whisk together the olive oil, vinegar and salt in a medium bowl. Add the zucchini and toss to coat. Spread the slices on the prepared baking sheets in a single layer without touching. Season with salt.
  • Bake, rotating the trays from top to bottom every 20 minutes, until the zucchini slices are very crisp, about 1 hour 15 minutes. While still hot, toss the chips with the paprika.

1 large egg yolk
2 tablespoons malt vinegar, divided
1 cup vegetable oil
Kosher salt, freshly ground pepper
Fish and assembly:
Vegetable oil (for frying; about 4 cups)
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt plus more
1/2 teaspoon freshly ground black pepper plus more
12 ounces (or more) chilled light lager
1 cup chilled club soda
1 tablespoon malt vinegar
1 cup corn flour or all-purpose flour
1 1/2 pounds cod, haddock or pollack, cut into long, 1 1/2"-wide strips
French fries (for serving)
Old Bay seasoning, flaky sea salt (such as Maldon), and chopped fresh dill
Lemon wedges (for serving)

Steps:

  • For malt vinegar mayonnaise:
  • Whisk egg yolk and 1 tablespoon vinegar in a small bowl. Whisking constantly, slowly drizzle in oil, drop by drop at first, until mayonnaise is thickened and smooth. Add remaining 1 tablespoon vinegar; season with salt and pepper. Cover and chill.
  • DO AHEAD: Mayonnaise can be made 1 day ahead. Keep chilled.
  • For fish and assembly:
  • Fit a large pot with thermometer; pour in oil to measure 3". Heat over medium-high heat until thermometer registers 375°F.
  • Meanwhile, whisk all-purpose flour, baking powder, baking soda, 1 teaspoon kosher salt, and 1/2 teaspoon pepper in a large bowl. Whisking constantly, slowly add beer, club soda, and vinegar, adding more beer if batter is too thick (it should be the consistency of thin pancake batter).
  • Place corn flour in a shallow bowl. Season fish with kosher salt and pepper. Dredge fish in corn flour, shaking off excess, then dip in batter, letting excess drip back into bowl. Working in batches and returning oil to 375°F between batches, fry fish until golden brown and crisp, about 2 minutes per side. Transfer to paper towel-lined baking sheet.
  • Season fish and fries with Old Bay, sea salt, and dill; serve with malt vinegar mayonnaise and lemon wedges.
