CREAM OF ANYTHING SOUP MIX

Cream of Anything Soup Mix image

Use this healthier Cream of Anything Soup Mix recipe in place of the canned variety for all of the flavor without the extra sodium, calories, and fat. This is a base dry mix recipe that you can then cook to make a can of soup to eat plain or use in a recipe. You can use this cream of anything soup mix recipe 'as is' or add one of several options listed below to make a specific cream of something soup.

Provided by Cari Dunn

Categories     Seasoning Mix     Soup

Time 10m

Number Of Ingredients 7

4 cups non-fat powdered milk
1.5 cups arrowroot powder (or cornstarch)
.5 cups instant chicken bouillon
4 tsp dried onion flakes
2 tsp dried basil
2 tsp dried thyme
1 tsp pepper

Steps:

  • Measure all ingredients and place in a bowl. Stir well. You can use a bullet style blender or a food processor to grind into a fine powder if you want. Store in a container with a lid until ready to use.
  • When you need a can of soup, heat one cup of water on the stove. Add ⅓ cup dry mix. Cook over low heat until thick, stirring occasionally. I find that a whisk helps it mix better than using a spoon.
  • If you want a specific kind of cream of something soup, add one of the following:--½ cup diced mushrooms--½ cup chopped broccoli--½ cup diced celery--½ cup shredded cheddar cheese--½ cup cooked, shredded or cubed chicken--½ cup diced tomatoes

11 Best (and Creamiest) Dairy-Free Soup Recipes: Creamy Roasted Cauliflower Soup (AIP, Paleo, Whole 30) image

A warming, creamy, nutty-flavored soup filled with gut healing bone broth and collagen. This Dairy-free Roasted Cauliflower soup is next level with some tasty toppings. (AIP, Paleo, Whole 30). Plus, enjoy 10 more creamy dairy-free soup recipes in the post above.

Provided by Alison Marras

Categories     Main Course     Soup

Number Of Ingredients 9

1 medium head of cauliflower
1 tsp coconut oil, melted
4 slices bacon (nitrate-free, sugar-free)
1 small yellow onion (diced)
4 cups bone broth (homemade or broth)
3 tbsp coconut cream (canned)
6 scoops collagen peptides powder
a pinch of sea salt
2 tbsp dairy-free pesto

Steps:

  • Pre-heat oven to 400f degrees. Cut the head of cauliflower into small florets, toss in coconut oil, and spread evenly on a parchment paper-lined baking sheet. Roast for 30 minutes, tossing half-way in between. Remove and set aside and turn the oven off.
  • On the stovetop, in a bottom-heavy pan or dutch oven, add the bacon slices. Cook over medium heat until fat is rendered and bacon is crispy. Set bacon aside on a paper towel-lined plate.
  • In the bacon grease, add chopped onion and sprinkle with sea salt. Stir with a wooden spoon for 3-5 minutes until translucent.
  • Next, add the roasted cauliflower florets and stir around to get coated in the grease and onions. Add bone broth over top and turn the heat high to bring to a boil.
  • Once boiling, reduce the heat to low and cover the pot. Let soup simmer for 15 minutes or so. The cauliflower should be very soft.
  • Once done, turn the heat off. Transfer to a high-speed blender and add coconut cream, collagen, and another pinch of sea salt to taste. Blend on high for 30 seconds or so until everything is creamy and well combined.
  • Serve into bowls, top each bowl with a drizzle of pesto (approx. 1/2 Tbsp or more per bowl). Each of the 4 bowls gets crushed bacon over top! For non-AIP version, add pepitas or any other seeds you like. Serve hot, store leftovers in a mason jar in the fridge.

  • Ingredients & Kitchen Tools. Ingredients in order of importance. Purist - First base: Extra virgin olive oil. Salt. Onions. Celery. Second base: Garlic. Pepper.
  • Purist - First Base. In your large pot add a swig of extra virgin olive oil (about 2 tablespoons) and put on the stove to preheat, set just below your maximum heat setting.
  • Second Base. This is the most common base we would use, the additions here allow alot of flexibility and a headier flavor. While the celery onion mixture is cooking away grab about 5-6 cloves of garlic, cut the ends off and peel them.
  • Third Base. This last stage really sets the stage for specific soups. At this point some decisions will need to be made, what flavors are you wanting your soup to focus on.
  • An Example of a Simple Soup Made From a Third Base Variation. Cumin Scented Tomatoe Yellow Split Pea - Vegetarian. To my Second base I added a large pinch of whole cumin seed that I had roasted in a dry pan over high heat until fragrant.
  • Cous-cous Mixed Meatballs. Adding Meatballs to a soup is nothing new, mixing in cooked cous-cous though adds a whole different perspective. The cous-cous helps bind the meat together similar to bread crumbs but being all ready cooked refuses to pull out moisture from the meat, keeping them incredibly light and moist.
