BAKED CARROT CASSEROLE

Baked Carrot Casserole image

Provided by A Family Feast

Categories     side dish

Time 2h

Number Of Ingredients 11

2 pounds carrots, peeled and sliced
½ cup butter
1 cup red bell pepper diced
1 cup sweet onion, diced
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 tablespoons granulated sugar
2 tablespoons all-purpose flour
1 cup whole milk
1 egg beaten
2 tablespoons flat leaf parsley, chopped

Steps:

  • Preheat oven to 350 degrees F.
  • Place the sliced carrots in a 3-4-quart pan and cover with water and bring to a boil and cook until soft, about 15-20 minutes. Drain and cool.
  • Butter a 9X9 baking dish and set aside.
  • While the carrots are cooking, in a large saute pan or skillet over medium heat, melt butter and cook peppers and onions for three minutes.
  • Add the salt, pepper and sugar and stir, then add the flour and cook for two minutes, stirring occasionally.
  • Heat the milk in the microwave or in a small sauce pan to hot but not boiling and add to the onion and pepper mixture half at a time, stirring during each addition.
  • Cook this mixture one minute then remove from heat.
  • Once the carrots are cooked, drain and cool to room temperature. I laid them out on a plate to cool quicker.
  • After the carrots are cooled, place back in the pan they were cooked in and ladle one ladle full of the mixture from the other pan. This will help to mash the carrots.
  • Use a potato masher and mash like lumpy mashed potatoes. You want some bits and pieces and not mashed to a puree.
  • Whisk the egg and add it along with the parsley to the carrots and mix.
  • Add the carrot and egg mixture to the pan with the onion and peppers and mix to combine all the ingredients.
  • Scrape the carrot mixture into the prepared pan and bake uncovered for one hour. Remove and serve.
  • The dish can be prepared a day ahead and baked one hour before serving. Let the mixture sit at room temperature for about 15 minutes before baking if preparing the day before and refrigerating.

MAKE-AHEAD GRAVY

Make-Ahead Gravy image

Cooking Thanksgiving dinner doesn't have to be hectic and stressful. One way I like to make my day easier is to make my gravy ahead. Make our simple homemade turkey stock, then pan roast turkey bones and vegetables to develop a concentrated turkey flavor base. Do not be intimidated by making your own stock. It's a simple step that can make all the difference to elevate and enrich the flavors of your gravy and Thanksgiving dinner. Chopped turkey bones are very gently simmered with aromatic vegetables on the stovetop for hours, resulting in a delicious, rich turkey stock. Turkey bones are cheap and easy to come by around the holidays, but chicken bones or wings are an acceptable substitute. Add your stock and herbs, simmer, thicken, strain and you have gravy! A great make ahead step, and one less thing to worry about when it's time to get dinner on the table.

Provided by Food Network Kitchen

Categories     condiment

Time 5h30m

Yield 3 1/2 to 4 cups of gravy and about 8 cups of homemade turkey stock

Number Of Ingredients 17

3 tablespoons vegetable oil
1 pound turkey or chicken wings, plus the neck from your turkey if available, roughly chopped
2 stalks celery, chopped
1 onion, chopped
1 carrot, chopped
6 sprigs thyme
4 fresh bay leaves
8 cups homemade turkey stock (recipe follows) or good-quality store-bought turkey or chicken stock
1/2 ounce dried mushrooms, such as shiitakes, porcini or a mix (optional)
4 tablespoons unsalted butter, softened
1/4 cup all-purpose flour
Kosher salt and freshly ground pepper
2 1/2 pounds turkey wings, roughly chopped (or use chicken wings)
2 carrots, chopped
2 stalks celery, chopped
1 onion, chopped
1 head garlic, halved crosswise

Steps:

  • Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the turkey wings and cook, undisturbed, until browned, about 5 minutes. Stir, then continue cooking, stirring occasionally, until browned all over, about 5 more minutes. Add the celery, onion and carrot and cook, stirring occasionally, until lightly browned and tender, about 5 minutes. Add 1 cup water, the thyme and bay leaves; bring to a simmer and cook, stirring and scraping up any browned bits, until reduced by half, about 3 minutes.
  • Add the turkey stock and bring to a boil, then reduce the heat to maintain a simmer. Add the dried mushrooms, if using, and simmer until reduced by one-third, about 30 minutes.
  • Mix the butter and flour in a small bowl to make a paste. Stir into the simmering gravy and cook, stirring occasionally, until thickened slightly, 15 to 20 minutes. Season with salt and pepper. Strain through a fine-mesh sieve into a large container. Let cool, then cover and refrigerate up to 5 days. Reheat over low heat.
  • Combine the turkey wings, carrots, celery, onion and garlic in a large pot. Add 2 gallons cold water. Bring to a boil, then reduce the heat to low or medium low to maintain a gentle simmer.
  • Simmer the stock about 4 hours, occasionally skimming any scum that rises to the surface with a spoon. Strain into another pot, discarding the bones and vegetables. Let the stock cool completely. (For faster cooling, set the pot of stock in a large bowl; add enough ice water to the bowl to come about halfway up the sides of the pot and let cool, stirring the stock occasionally.) Transfer the stock to an airtight container and refrigerate up to 5 days.

  • Carrot & Sweet Potato Soup. Advertisement. Made with carrots, sweet potatoes, apples and honey, this savory soup with a hint of sweetness and spice is perfect for the holidays.
  • Onion-Braised Beef Brisket. This is my favorite brisket recipe, and it's surprisingly simple to make. There's no wine, stock or bottled sauces added; instead, the brisket is cooked on top of a massive heap of onions, which slowly caramelize and release their juices, making a flavorful French onion soup-like braising liquid all their own.
  • Cauliflower Purée. This cauliflower purée is creamy and comforting, and just happens to taste remarkably like mashed potatoes -- really! It also has the benefit of being easier to make, healthier and lower in carbs.
  • French String Beans with Shallots. This simple yet delicious side dish involves slowly cooking shallots in olive oil to coax out their natural sweetness and simmering beans until perfectly tender.
  • Chicken Marbella. Chicken Marbella is probably the most famous dish to come out of the beloved Silver Palate Cookbook by Julie Rosso and the late Sheila Lukins.
  • Roasted Carrots with Thyme. Advertisement. Always a favorite, these carrots are roasted in a high temperature oven until caramelized and tender-crisp -- a cooking method that intensifies their flavor and brings out their natural sweetness.
  • Savory Sausage & Cheddar Bread Pudding. Bread pudding is usually sweet, but it can be made savory too. This version, brimming with sweet pork sausage and sharp cheddar, is deeply flavored with a crisp, golden crust and tender, creamy interior.
  • Beef Stew with Carrots & Potatoes. This is a classic French beef stew, otherwise known as Beef Bourguignon. The meat is seared in olive oil first, then slowly braised with garlic and onions in a wine-based broth.
  • Drunken Caramel French Toast. Advertisement. Part booze, part French toast, part bread pudding -- how could you go wrong? In fact, I wouldn't be surprised if you already had the recipe because such things (i.e., amazingly good, crowd pleasing, make-ahead, easy recipes) tend to get around.
